Lemon blondie bars with Lemon glaze

Another lemon treat, this time, lemon blondies.   Made in an 8×8 pan, with lemon glaze.   Tangy, yet sweet.  Very soft too!

Remember to scoop your flour from your flour bag so you get the right amount.  Also, Preheat your oven before baking.

  • Ingredients list
  • 1/2 cup butter, softened
  • 3/4 cup sugar
  • 2 eggs
  • 1 tbs lemon extract
  • 1/4 cup lemon juice
  • 1 cup flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt

Directions  – preheat oven to 350 degrees.  Line an 8×8 pan with parchment paper or tin foil and spray with pam.  Set aside.  In a bowl, cream butter and sugar.  Add eggs and extract.  Mix in dry ingredients amd lemon juice.  Evenly spread into prepared pan.  Bake 18 to 20 minutes, or until a toothpick inserted in center comes out with a few moist crumbs.  Cool completely.

  • 2 tbs lemon juice
  • Enough water to get consistency you want.

Mini chip snowball cookies (Italian version)

The mini chip snowball cookies I make are a big hit with family and friends and so easy to make.  I made some for my youngest goddaughter Sara’s high school graduation Friday and for her grad party yesterday.  Rob wished he had brought home one, so i whipped up another batch today.  These are an Italian wedding cake cookies version, instead of using powdered sugar, they use regular granulated sugar.  It does make them a little more tender and fragile, but Rob deemed them still very good!

I recommend scooping your flour from your flour bag into your measuring cup so you get the right amount.  Also chill (or freeze) the individual doughs for  a few hours before baking, preheat your oven before baking.  And, sprinkle powdered sugar on before baking, right after they come out of the oven and after they cool for 3 times the sweetness!

  • Ingredients list
  • 1 cup butter, softened
  • 1/2 cup sugar
  • 1 tbs vanilla
  • 2 cups flour
  • 1 cup mini chocolate chips
  • Powdered sugar

Directions – in a bowl, cream butter, sugar and vanilla.  Blend in flour, then mini chips.   Scoop our 2 tbs of dough, roll into a ball then thick disc.   Dip each side in powdered sugar.   Chill or freeze doughs a few hours.  When ready to bake, preheat oven to 320 degrees.   Line a cookie sheet with a nonstick baking liner or parchment paper.   Place cookies on sheet (i fit 3 to a row, these did spread a little because I only chilled them an hour).   Bake  18 to 22 minutes (bottoms will be light golden).    Remove from oven and immediately sprinkle with powdered sugar. 

Cool completely.   Sprinkle with more powdered sugar and store in covered container.

Frosted Cake mix/Brownie mix cookies

I used the same recipe for 2 different kinds of cookies.  One used a brownie mix,

the other a french vanilla cake mix. 

And I frosted them. 

A two-fer tuesday treat.

I put funfetti sprinkles in the vanilla ones.

  And I forgot to add chips to the chocolate ones! Hence, the frosting.

  • 1 cake or brownie mix
  • 1/4 cup flour
  • 2 eggs
  • 1/4 cup vegetable oil
  • Chocolate chips (1/2 cup) or sprinkles

Directions  – preheat oven to 350 degrees.  Line a cookie sheet with parchment paper.   combine ingredients in a bowl.  Scoop out 1/4 cups of dough. 

stagger on prepared sheet. 

Bake 12 to 14 minutes, no longer.

Frosted Lemon cake mix bars

The sun is out, so i thought i would make some lemon cake mix bars.   Super easy, just a few ingredients, olus they are frosted!

  • Ingredients list
  • 2 lemon cake mixes
  • 4 eggs
  • 1 1/3 cups mayo or miracle whip (i used a light kind)
  • 3 tbs lemon juice

Directions – preheat oven to 350 degrees.  Line a 9×13 pan with tin foil and spray with baking spray.  Set aside.  In a bowl, combine cake mixes, mayo eggs and lemon juice.  Evenly spread into prepared pan.  Bake 25 to 30 minutes or until a toothpick inserted in center comes out with a few moist crumbs.  Cool completely.  

I couldn’t resist and put a tiny bit of frosting on the warm bars.  I find it makes treats even sweeter!

In a bowl, using a hand mixer, blend well.  Frost bars and store in covered container.

  • 2 eggs
  • 1/2 cup vegetable oil
  • 1 cup ice cream (not melted)
  • 1/4 cup hot fudge
  • 1 cup mini m&ms

Directions – preheat oven to 350 degrees.  Line a 9×13 pan with parchment paper.  Set aside.  In a bowl, combine brownie mix, eggs and oil.  Blend in ice cream and hot fudge.  Spread evenly into prepared pan.  Bake 25 to 30 minutes (toothpick inserted on center comes out with a few moist crumbs)  cool completely

  • Cookie dough topping ingredients
  • 1/2 cup butter, melted
  • 1/2 cup brown sugar
  • 1/4 cup sugar
  • 2 tbs heavy cream
  • 1 tsp vanilla
  • 3/4 cup flour (scooped from flour bag into measuring cup)
  • 1 cup mini chocolate chips

Directions – in a bowl, cream butter, brown sugar and sugar 2 to 3 minutes.  Add cream and vanilla.  Blend in flour then chips. 

Grab a spoon!

Evenly spread over cooled brownies.   

Top with melted milk chocolate. 

Cut and store in covered container.

Hot fudge brownie cookies with crushed nutter butters and peanuts butter chips

A day late Sabres victory treat!

I didn’t have time to bake victory treats after our win over the Lightning, so I stepped it up today – hot fudge brownie cookies with crushed nutter butters and peanut butter chips! 

These are simple, using just a few ingredients  – brownie mix, flour, water, oil, egg, hot fudge, nutter butters and Reese’s peanut butter chips.  And yes, you can leave the nutter butters out, use a different crushed cookie, and also use a different chips flavor!

  • Ingredients list
  • 1 brownie mix
  • 1/2 cup flour (scooped from flour bag into measuring cup)
  • 1 egg
  • 1/4 cup vegetable oil
  • 5 tbs water
  • 1/4 cup hot fudge (room temp is easiest to work with)
  • 16 nutter butters, finely crushed
  • 1 cup peanut butter chips
Using a food processor is easiest way to crush nutter butters

Directions – preheat oven to 350 degrees.  Line a cookie sheet with parchment paper and set aside.  In a bowl, blend brownie mix, flour, egg, water and vegetable oil.  Blend in hot fudge, then nutter butters.  Mix in chips.  Scoop our 1/4 cups of dough and stagger on prepared cookie sheet. 

Bake 12 minutes, no longer.  Cool completely. 

I put mine in the fridge to help firm them up a bit.  Store in covered container.

Melted butter sugar cookies

I needed to bake something for my non chocolate loving,  non peanut butter loving friends.  So a sugar cookie is perfect.  Plus everyone loves a sugar cookie.  With or without frosting.

  • Ingredients list
  • 1/2 cup butter, melted
  • 1 cup sugar
  • 1 egg
  • 2 tsp vanilla
  • 1 1/2 cups flour
  • 1 cup bread flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt

Directions – in a bowl, mix sugar and melted butter.  Add egg and vanilla.  Blend in dry ingredients.    If dough seems too dry, add a tbs or two.  Scoop out 3 tbs of dough,  roll into balls then in extra sugar. Chill a few hours.    Preheat oven to 350 degrees.  Bake 7 to 9 minutes.  Cool completely.

  • 1/4 cup butter, softened
  • 1 1/2 cups powdered sugar
  • 1 tsp vanilla milk

Frost and store in covered container.

Black cocoa sugar cookie bars

Instead of brownies, I thought I would make chocolate sugar cookie bars with black cocoa.  And topped with ganache (a fancy word for melted chocolate and heavy cream). 

Remember to scoop your flour from your flour bag into your measuring cup so you get the right amount (same for the black cocoa).  And preheat your oven to 350 degrees before baking.

  • Ingredients list
  • 1 cup butter, softened
  • 2 cups sugar
  • 2 eggs
  • 1 tsp chocolate extract (or vanilla)
  • 2 cups flour
  • 1 cup black cocoa
  • 1 tsp baking powder
  • 1/2 tsp salt

Directions- preheat oven to 350 degrees.   Line a 9×13 pan with parchment paper and set aside.  In a bowl, cream butter and sugar.  Add eggs and extract.  Blend in dry ingredients,  slowly.   Evenly spread into prepared pan.  Bake 20 to 22 minutes, no longer.   Cool completely.

  • Ganache ingredients
  • 3/4 cup heavy cream
  • 2 cups chocolate chips

Directions- in a microwave safe bowl, heat cream 2 minutes.  Add chocolate chips.  Let sit 3 minutes.  Stir smooth.   Let sit 10 minutes, then frost bars. 

Cut and store in covered container..

Carrot cake snickerdoodle bars with mini chocolate chips and cream cheese frosting

I noticed a carrot cake mix and a snickerdoodle cookie mix and thought they’d be perfect together in bar form, with some mini chocolate chips and cream cheese frosting.   Super easy recipe for the bars  just 5 ingredients! 

A perfect treat for Sabres game day as we go for a 6th straight win!

  • Ingredients list
  • 1 carrot cake mix
  • 1 snickerdoodle mix (minus the cinnamon sugar packet)
  • 3 eggs
  • 1 cup butter, melted
  • 1 cup mini chocolate chips (opt)

Directions – line a 9×13 pan with tin foil and spray with baking spray.  Set aside.   Preheat oven to 350 degrees.  In a bowl, blend cookie and cake mixes.  Mix in eggs and melted butter.  Stir in chips.  Evenly spread into prepared pan.  Bake 18 to 22  minutes (no longer).  Cool completely.

  • 1/2 cup butter, softened
  • 8 oz cream cheese, softened
  • 3 cups powdered sugar (scooped from container into your measuring cup so you get the right amount)
  • 2 tbs heavy cream
  • 1 tsp vanilla

Directions – in a bowl, cream butter and cream cheese.  Slowly blend in powdered sugar. Mix in vanilla and cream.  Frost bars.

Chocolate cake mix cookies stuffed with cookie dough oreos!

I found these oreos in the “aisle of shame” at aldi. 

If you are not familiar with it, it is an aisle of stuff you “probably” don’t need, but the price is great and you think “why not”?   That aisle is the best!  It is how I wound up with an electric cake pop maker and churro maker (both work like the George foreman electric plug in grill), which i have yet to use.  Each was 7$.

Use any cake mix flavor and any oreo flavor you want.  I used chocolate cake mix and cookie dough oreos today.

Preheat your oven to 350 degrees before baking.

  • 1 cake mix
  • 1/3 cup vegetable oil
  • 1 egg
  • 2 tbs
  • Oreos

Directions – preheat oven to 350 degrees.  Line a cookie sheet with nonstick baking liners.  In a bowl, mix cake mix, oil, egg and water.  Scoop out 3 tbs dough.

Divide in half.  Flatten both.   Lay one half on a flattened surface.

Top with an oreo.

Place other flattened half on top and seal edges. 

Stagger on cookie sheet. 

Bake 10 minutes, no longer.  Cool completely.   Store in covered container.
