Lemon brownies with crushed lemon oreos and lemon frosting

In addition to making lemon cookies with crushed lemon oreos and lemon frosting for Sabres game night and MLB opening night, I also made these lemon brownies with crushed lemon oreos and lemon frosting.  (Confession – i wanted to finish using the lemon oreos).  

Remember to scoop your flour from your flour bag into your measuring cup so you get the right amount.  And, preheat your oven before baking.

  • Ingredients list
  • 1/2 cup butter
  • 3/4 cup white chocolate chips
  • 3/4 cup sugar
  • 2 eggs
  • 1/4 cup lemon juice
  • 1 1/4 cups flour
  • 1/4 tsp salt
  • 15 to 20 finely crushed lemon oreos

Directions – line an 8×8 pan with tin foil and spray with baking spray.  Set aside.  Preheat oven to 350 degrees.  In a microwave safe bowl, heat chips and butter for 1 minutes.   Stir until melted.  (You may need to do another 30 seconds to ensure chips are melted).   Add sugar, eggs and lemon juice.  Mix in dry ingredients, then crushed oreos.  Evenly spread into prepared pan.  Bake 20 to 25 minutes, until a toothpick inserted in center comes out with a few crumbs.  Cool completely.

  • Frosting ingredients
  • 3 cups powdered sugar
  • 1/3 cup lemon juice.

Directions – combine powdered sugar and juice in a bowl.  You may need to add more powdered sugar to get the thickness you want. Frost cookies and store in covered container

May the Sabres run their winning streak to 10 treats

For my final treat of 2025, I made lemon frosted cake mix squares.  I didn’t have a lemon cake mix, so I used a white one and added some lemon extract, along with the other ingredients.  These are for my friend rib’s birthday and as luck for the Sabres, who go for their 10th straight win tonight against the Stars, one of the best teams in the NHL.

These are super simple, don’t require a ton of ingredients or time.  You can leave them plain or frost them.

  • Ingredients list
  • 1 white cake mix
  • 1 sugar cookie mix
  • 3 eggs
  • 1 cup butter, melted
  • 2 tsp lemon extract

Directions – preheat oven to 350 degrees.  Spray a 9×13 pan with baking spray.  In a bowl, combine mixes.   Blend in butter, then eggs and extract.  Evenly spread into prepared pan.   Bake 18 to 20 minutes, no longer.  Cool completely.

  • 1/2 cup butter, softened
  • 2 cups powdered sugar
  • 3 tbs lemon juice

In a bowl, combine ingredients.  Frost bars.  Cut and store in covered container.

Frosted Lemon Bars (made with a cake mix)

Frosted lemon bars

Today’s recipe is a change from my usual chocolate overload. Lemon bars. They are for our friend Marc, celebrating his birthday. They use a lemon cake mix and only a few other ingredients. You can use another flavor cake mix. if you want. If you do, use vanilla extract instead of lemon. I also opted for lemon frosting on top of the lemon bars. Again, if you opt for another flavor bar, vanilla frosting would be fine. Quick reminder to preheat your oven to 350 degrees for 20 minutes before baking So the oven is the right temp. If you think 2 tbs lemon juice in the frosting might be too tart, start with 1 and add 1 tbs water.

  • Lemon bar ingredients
  • 1 lemon cake mix
  • 2 eggs
  • 1 tbs lemon juice
  • 1/2 cup oil

Directions – preheat oven to 350 degrees for 20 min. Line an 8×8 pan with parchment paper and spray with baking spray. In a bowl, blend cake mix, eggs, lemon juice and oil. Spread evenly into pan. Bake 15 to 17 min (do not overbake). Cool completely.

Frosting – combine 2 cups powdered sugar amd 2 tbs lemon juice. (Add water, a tsp at a time,if you want to thin it out a bit.). Add yellow food coloring (optional). Frost bars. Store in covered container.
