Celebratory blondies

Go Bills!

In honor of the Bills 21 point win over the defending Super Bowl champion Rams, I felt a celebratory treat was in order. Rob suggested blondies, so here they are.

Remember to preheat your oven to 350 degrees for 20 minutes so it cycles to the right temp. Also, spoon your flour from your flour bag into your measuring cup so you get the right amount. If you pour the flour directly into the measuring cup, it gets packed in and you actually wind up with too much flour and your treats could be dry. A grave offense.

  • Ingredients
  • 1/2 cup butter, melted and cooled 10 minutes
  • 1/2 cup brown sugar
  • 1/3 cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 cup flour
  • 1 1/2 cups chocolate chips

Directions – line an 8×8 pan with parchment paper and spray with baking spray. Preheat oven to 350 degrees for 20 minutes before baking. In a bowl, combine butter, brown sugar and sugar. Add egg and vanilla. Fold in flour. Mix in 1 cup chips. Press evenly into prepared pan. Sprinkle remaining 1/2 cup chips on top of dough and lightly press into dough. Bake 20-25 minutes. Bars will be light golden around edges. Cool completely and cut. Store in covered container.

Cookie monster!!!

I am so happy football season is here. We get the Sunday ticket once again for free and I am absolutely thrilled. Hope you have a wonderful day and thanks for stopping by.

Smores whoopie pies- NFL playoff edition

Smores whoopie pies

I figured I would up my treats game with the NFL super wildcard weekend. The Bills win over the Patriots was the best game I ever saw played by a Bills team. Just about everything went right and Josh Allen was flawless. Such a performance deserves a special cookie. So I present the smores whoopie pie – a Graham cracker cookie, fluff filling and melted chocolate on top. Each cookie is 1/4 cup of dough. The final whoopie pie is quite large, so next time I may only use 2 tbs dough for each cookie. Although I don’t expect any complaints at work with XL cookies

A few reminders – let your butter soften on the countertop for 45 minutes to an hour. Scoop your flour from your flour bag into your measuring cup. Preheat your oven for 20 minutes before baking So your ovem cycles to the right temp.

  • Ingredients for cookies
  • 3/4 cup butter, softened
  • 3/4 cup sugar
  • 1 1/2 cups brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 3 1/2 cups flour
  • 2 1/4 cups graham cracker crumbs
  • 2 tsp baking soda
  • 1/2 tsp salt

Directions – preheat oven to 350 degrees for 20 minutes. Line a cookie sheet with nonstick baking liners or parchment paper. In a bowl, cream butter, brown sugar and sugar. Add eggs and vanilla. Blend in dry ingredients, including Graham cracker crumbs. Scoop out 1/4 cups of dough. Slightly flatten. Bake 10 to 12 minutes. These are kind of hard to tell when they are done, but you don’t want to overcook them in the oven. Cool completely.

  • Filling ingredients
  • 1/4 cup butter, melted
  • 1 cup marshmallow fluff
  • 2 1/2 cups powdered sugar
  • Milk

Directions – blend fluff and butter. Mix in powdered sugar. Add a little milk if filling seems too thick. Now for the assembly.

Place a cookie, flatside up
Top with a dollop of filling
Place another cookie, flatside down, on top
Frost with melted chocolate

Thank you for stopping by today. I hope you have a wonderful day filled with joy. And I hope the Bills win 3 straight games these playoffs!

Week 8 victory Monday cookies

A chocolate version of the Franks! (Triple Chip chocolate cookies)

How is it week 8 already? Wow! I found today’s Bills game far too stressful. At least we got a win. And 5-2 is a solid record. To celebrate, I made a chocolate version of the triple chip cookies. And I slathered some melted milk chocolate on the bottom because, why not? Also, we set out a bowl of candy for Halloween, on a table. Rob keeps replenishing it and so far, no kid has dumped the bowl in his bag! And we only have 35 minutes left!

Shout out to our girl, Gracie, monitoring the situation

Remember to scoop your flour from your flour bag into your measuring cup. Do the same for the baking cocoa. And preheat your oven to 350 degrees for 20 minutes so it gets to the right temperature.

  • Ingredients
  • 1 cup butter, softened
  • 1 1\2 cups sugar
  • 1/2 cup brown sugar
  • 1 tsp vanilla
  • 2 eggs
  • 2 cups flour
  • 3/4 cup baking cocoa
  • 11/2 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1/2 cup chocolate chips
  • 1/2 cup white chips
  • 1/2 cup milk chocolate chips

Directions – cream butter, sugar and brown sugar. Add eggs and vanilla. Fold in dry ingredients. Mix in chips. Scoop out 1/4 cuos of dough. Chill at least an hour. Preheat oven to 350 degrees for 20 minutes. Line a cookie sheet with nonstick baking liners. Stagger cookies on the sheet. Bake 12 to 14 minutes. Cool completely. In a microwave safe bowl, combine 2 cups milk chocolate chips and 2 tsp of vegetable oil. Microwave in 30 second increments until you can stir smooth. Slather on bottom of cookies. Ler set. Store in covered container.

Is this necessary? Probably not, but who cares?

Thanks for stopping by! Have a wonderful day, one that I hope is filled with love, peace and happiness. And, remember to be kind. We are all fighting a battle, some battles are harder than others.
