Funfetti cookie dough pie

Last month, I made a cookie dough pie with edible chocolate chip cookie dough on a golden oreo crust.   Today, I made a version with edible funfetti cookie dough on a combo oreo-chocolate teddy graham  crust.  (I did not have enough oreos, so i made up with them with chocolate teddy grams)

A really nice treat for a very warm summer day.

  • Edible funfetti cookie dough
  • 1/2 cup butter, softened
  • 3/4 cup sugar
  • 3 tbs milk
  • 1/2 tsp vanilla
  • 1/2 tsp almond extract
  • 1 1/2 cups flour, heat treated (heated in a microwave safe plate, stirred after 30 seconds.  Heat  another 30 seconds and stir again
  • 1/2 tsp salt
  • A few tbs sprinkles

Directions – in a bowl, cream butter and sugar.  Add milk and extracts.  Blend in flour and salt.  Mix in sprinkles. 

Scoop out tbs of dough and place in freezer.

  • Crust ingredients
  • 20 oreo cookies, finely crushed
  • 1/4 cup butter, melted

Directions – line a pie pan with parchment paper.  In a bowl, mix crumbs and butter.  Press into prepared pan and freeze.

  • Filling
  • 4 oz cream cheese, softened
  • 1/4 cup brown sugar, firmly packed into measuring cup
  • 1/4 cup sugar
  • 8 oz cool whip, thawed

Directions – in a bowl, cream butter, sugar and brown sugar.  Fold in cool whip.  Keep out 8 funfetti balls of dough and set aside.  Mix rest in filling.  Spread in prepared crust.  Add remaining doughs on top.  Freeze at least an hour.   

Store, covered, in freezer or fridge (will be much softer in fridge)

No bake cookie dough pie

Another super simple, super sweet treat.  This no bake pie is kind of like a cheesecake, with cream cheese cook whip, sugar and brown sugar in the filling.  A golden oreo crust.  And eggless cookie dough in the filling and on top.

  • Crust ingredients
  • 20 golden oreos (or regular), finely ground
  • 1/4 cup butter, melted

Directions – line a pie plate with tin foil.  Set aside.  In a bowl, combine oreos and butter.  Evenly press into pan.  Place in freezer.

  • Cookie dough pieces
  • 6 tbs butter, softened
  • 1/3 cup brown sugar, firmly packed into measuring cup
  • 2 tbs sugar
  • 1 tsp vanilla
  • 1 cup flour, heated on a microwave safe plate on microwave for 20 seconds, then stir on plate
  • 1 tsp milk
  • 1/2 cup mini chocolate chips

In a bowl, combine butter, sugar and brown sugar.  Add flour and milk.  Mix in chips.  Scoop out 1/2 tbs dough and roll into balls.  Place in freezer while you make the filling.

  • Filling ingredients
  • 4 oz cream cheese, softened
  • 8 oz container cool whip, thawed
  • 1/4 cup sugar
  • 1/4 cup brown sugar, firmly packed into measuring cup

Directions – in a bowl, cream cream cheese, sugar and brown sugar.  Blend in cool whip.  set a few frozen cookie doughs aside, place rest in filling. 

Assembly – remove crust from freezer.  Evenly spread filling over.  Place extra cookie doughs on top.  Freeze at least an hour.  Store in covered container.

When it’s top hot to turn on the oven….

Summer officially began on Friday and it has made it’s presence known.  Here in Connecticut, like many parts of the country, it is going to be in the triple digits the next few days, with the heat index factored in.  So I decided to go with a no bake treat.  Chocolate covered peanut butter treats.  Super simple and require only a few ingredients.

  • Ingredients list
  • 1 cup butter melted
  • 1/4 cup brown sugar
  • 1 cup peanut butter
  • 2 sleeves graham crackers, finely crushed (2 cups finely crushed)
  • 1 3/4 – 2 cups powdered sugar (scooped from your container into your measuring cup)
  • 1 tsp vanilla

Directions – in a bowl, combine butter, brown sugar and vanilla.  Blend in powdered sugar and cracker crumbs.  Scoop out 2 tbs, roll into balls and slightly flatten.  Pop in fridge for a half hour or so.  Cover with melted chocolate.  Pop back in fridge to firm up chocolate. Store in covered container.

Fudge covered peanut butter footballs NFL opening weekend 2024

I had some leftover fudge from the Magic Middles cookies I attempted to create.  Instead of baking it into another treat.  I made a batch of no bake homemade peanut butter cups and formed (or tried to form) them into footballs and topped them with fudge. 

These are simple and easy.   I put them in the fridge to firm them up so they don’t all blob together. 😀

  • Ingredients
  • 1/2 cup butter
  • 2 cups peanut butter
  • 1/2 cup brown sugar
  • 2 1/2 cups powdered sugar

In a medium size pot, over low to medium heat, combine butter, peanut butter and brown sugar.  Stir occasionally until everything is melted.  Remove from heat.  Add powdered sugar and stir smooth.  Let cool and little and form whatever shapes you want.  Top with melted chocolate or fudge.  Store in covered container in fridge.

When it’s too hot to turn on the oven, you make no bake peanut butter bars

After back to back days of 90+ degrees, I turned on the AC (the house was 81 degrees). I did not want to turn on the oven to bake, so I opted to make no bake peanut butter bars. The triple chip chocolate cookies will have to wait to be baked another day.

  • Oreo crust ingredients
  • 20 oreos,finely crushed
  • 1 stick of butter, melted

Directions – line an 8×8 pan with tinfoil and spray with butter spray. combine oreos and butter and press into prepared pan.

  • Peanut butter layer
  • 1 1/2 cups crushed gram crackers (approx 1 sleeve of crackers)
  • 1 1 /2 cups powdered sugar
  • 1 cup peanut butter
  • 1 stick of butter, melted

In a bowl, combine ingredients and blend smooth. Spread over oreo crust.

Topping – in a microwave safe bowl, combine 1 cup milk chocolate chips and 1 tbs vegetable oil. Microwave in 30 second increments until you can stir smooth. Spread on top of peanut butter layer. Chill in fridge and cut. Store in covered container.
