Week 3 victory treats – vanilla little debbie cookies

The other treat for the Bills win over the Dolphins – a vanilla version of little debbie brownie cookies.  I made my own white chocolate cocoa powder and used that.  I probably could have bought white chocolate cocoa at the grocery store,  but didn’t feel like going out again, so I made my own.

White chocolate cocoa ingredients

  • 1/3 cup chocolate chips
  • 1 cup instant milk powder
  • 2/3 cup powdered sugar
  • 1/3 cup sugar

Directions – in a food processor, chop up white chips for about a minute.  Add remaining ingredients and run food processor until a fine powder forms. 

Remember to scoop your flour from your flour bag into your measuring cup so you get the right amount.. also, chill the dough for a few hours.  And preheat your oven before baking.

  • Ingredients list
  • 1/4 cup butter, softened
  • 1/4 cup crisco
  • 3/4 cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 cup flour
  • 1/4 cup plus 2 tbs white chocolate cocoa powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Directions- in a bowl, cream crisco, butter and sugar.  Add egg and vanilla.  Blend in dry ingredients.   Scoop out 1/4 cups dough.  Chill a few hours. Line a cookie sheet with parchment paper. Preheat oven to 350 degrees.  Stagger cookies on prepared sheets. 

Bake 12 to 16 minutes.  Cool completely

  • White chocolate frosting ingredients
  • 1/4 cup white chocolate chips, melted
  • 1/4 cup butter, softened
  • 1 1/2 cup powdered sugar
  • 2 tbs heavy cream
  • 1 tsp vanilla

In a bowl, cream butter, powdered sugar, heavy cream and vanilla.  Blend in melted white chocolate.   Frost cookies.

White chocolate brownies

I have a few non chocolate loving friends and work, so I wanted to bring in something non chocolate they would enjoy, so I used white chocolate chips and made white chocolate brownies.  Very fudge like.  The only thing missing- sprinkles!

Remember to scoop your flour from your flour bag into your measuring cup so you get the right amount, and preheat your oven to 325 degrees before baking

  • Ingredients list
  • 1/2 cup butter
  • 1 1/4 cups white chocolate chips
  • 1/3 cup sugar
  • 2 eggs
  • 1 cup flour

Directions – preheat oven to 325 degrees.  Line an 8×8 pan with tin foil and spray with pam.  Set aside.  In a microwave safe bowl, combine white chips and butter.  Microwave in 45 second increments until you can stir smooth.  Add sugar.  Beat in eggs, one at a time.  Mix in flour.  Evenly spread into pan.  Bake 20 to 25 minutes, edges will be light golden and center will be set.  Cool completely.

  • 1/2 cup white chocolate chips 2 tbs heavy cream

In a microwave safe bowl, combine and microwave in 45 second increments until you can stir smooth.  Spread on top of brownies.  Cut and store  in covered container.

Perfectly puffy triple chip cookies

I know most people don’t love cooler weather, but honestly, I am ok with it because the puffy cookies are back! (Also my hair is less of a battle to straighten). Today, I present puffy triple chip cookies, featuring semisweet, milk chocolate and white chocolate chips.

I used butter flavor crisco in this recipe, as well as cornstarch.

A reminder to scoop your flour from your flour bag into your measuring cup so you get the right amount. Chill the mounds of dough for at least an hour to prevent spreading. And preheat your oven for 20 minutes, so it cycles to the right temp.

  • 1 cup butter flavor crisco
  • 1 cup brown sugar
  • 1/2 cup sugar
  • 2 eggs
  • 2 tsp vanilla
  • 3.4 oz instant pudding mix
  • 2 1/4 cups flour (scooped from your flour container into your measuring cup)
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tbs cornstarch
  • 1/2 cup semisweet chocolate chips
  • 1/2 cup white chocolate chips
  • 1/2 cup milk chocolate chips

Directions – in a bowl, using a wooden spoon or rubber spatula, cream butter crisco, brown sugar and sugar. Add eggs. Mix in vanilla and pudding mix. Blend in flour, baking powder, baking soda and cornstarch. Blend in chips. Scoop out 1/4 cups of dough and form into mounds. Chill at least an hour in the fridge. Preheat oven to 350 degrees for 20 minutes. Line a cookie sheet with parchment paper and stagger cookies. Bake at 350 degrees for 11 to 13 minutes. The bottoms will be lightly browned. The tops will be a little gushy, but will firm up as they cool and set overnight.

Store in covered container.

Triple Vanilla Brownies

These were made in obscene humidity, and frosted while they were still warm. I also doubled the following recipe. I do not recommend doing any of those 3 things if you bake them…

I almost did not bring these in bc i felt they were not presentable. However. they are a big hit at work today.

  • Brownies
  • 1/2 cup butter
  • 1 bag of white chocolate chip (10 oz)
  • 3/4 cup sugar
  • 3 eggs
  • 1 tsp vanilla
  • 1 1/4 cups flour (scooped from your flour bag into your measuring cup so you get the correct amount)
  • 1/2 tsp salt
  • 1 cup milk chocolate chips

Directions – preheat oven to 350 degrees for 20 minutes. Line a 9×13 pan with parchment paper and spray with baking spray. In a microwave safe bowl, melt white chocolate chips and butter in 45 second increments until you can stir mixture melted. Blend in sugar and vanilla. Mix in eggs one at a time. Fold in flour and salt. Stir in milk chocolate chips. Evenly spread into prepared pan. Bake 15 to 23 minutes until a toothpick is inserted in center basically comes put clean (you will see golden patches on top). Cool completely.

  • Frosting ingredients
  • 4 tbs butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla
  • 2 tbs hot water

Blend together. You can add more water or powdered sugar to get the consistency you want. Frost brownies. Store in covered container.

Triple chip cookies and meeting Gretzky (no, not that one)

While my triple chip cookie dough was chilling in the fridge (I believe chilled dough makes for the best cookies), we took Gracie on her nightly walk. She gets 2 walks a day, yet is still chubby. That’s a story for another day. Anyways, she met 2 new friends. A beautiful white German Shepherd named Rory and a American Eskimo named Gretzky. Rob and both did a double take. Indeed the pup is named Gretzky. Her fiancee, like Rob, is a huge hockey fan, and Gretzky fan. A really cool moment. Onto the recipe!

  • 1 cup butter, softened
  • 1 cup brown sugar
  • 1 tsp vanilla
  • 2 eggs
  • 3.4 oz instant vanilla pudding mix
  • 2 1/2 cups flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 cup chocolate chips
  • 1 cup white chocolate chips
  • 1 cup milk chocolate chips

Directions – cream butter and brown sugar. Add eggs and vanilla, pudding mix, baking soda and baking powder. Blend in flour. Fold in chips. Scoop out 1/4 cup of dough and form into mounds. Chill a few hours. Preheat oven to 35p degrees for 20 minutes. Line a cookie sheet with nonstick baking liners. Stagger cookies on the sheet – a row of 2, a row of 1, another row of 2 and a final row of 1. Baking 10 to 14 minutes. (Golden patches on tops of cookies). Cool completely. Store in covered container.

Banana chocolate chip bars with brown butter frosting

I am filling in tomorrow morning at work and need a treat to bring in for my people. These are dense banana bars with chocolate chips and brown butter frosting. They are also made with melted white chocolate chips. I have done different flavored treat using melted white chips, so this time ibtried banana. I arrive at 6 am tomorrow morning, so breakfast will be served then.:)

Reminders – preheat your oven to 350 degrees for 20 minutes before baking So it cycles to the right temp. Scoop your flour from your flour bag into your measuring cup to get the right amount. If you pour the flour directly into the measuring cup, it gets packed in and can dry out the bars.

Bananas = fruit= breakfast
  • Ingredients
  • 2 sticks of butter
  • 1 1/2 cups white chocolate chips
  • 1 cup sugar
  • 2 eggs
  • 1 tbs vanilla
  • 2 cups mashed bananas
  • 3 1/2 cups flour
  • 1 -2 cups of chocolate chips

Directions – preheat oven to 350 degrees for 20 minutes. Line a 9×13 pan with tin foil and spray with baking spray. In a microwave safe bowl,melt white chips and butter in 45 second increments until you can stir smooth. Stir in sugar. Mix in eggs. Stir in bananas. Blend in flour. Fold in chocolate chips. Spread evenly into foiled pan. Bake 22 to 27 minutes or until a toothpick inserted in center basically comes out clean. The edges will be a light golden brown. While bars are warm, make the frosting.

  • Frosting ingredients
  • 1 stick butter
  • 2 plus cups powdered sugar
  • 1/4 cup heavy cream
  • 1 tsp vanilla

Brown butter over low-medium heat (there will be little brown specs at the bottom. ) Remove from heat and pour into bowl. Cool 5 minutes. Add powdered sugar. Mix in cream and vanilla. Spread over warm bars. Cool completely and cut. Store in covered container.

Week 2 Victory Treats

Oreo fudge topped brownies

The Bills got their first win of the season today in Miami, so victory Monday treats are in order. I went with fudge brownies topped with a fudgy frosting with crushed Oreos. A little over the top for only week 2, but I like to set the bar high.

Remember to preheat your oven to 350 degrees for 20 minutes before baking to make sure your oven heats up to the right temperature. Also, spoon your flour from your flour bag into you measuring cup so you get the right amount (and so the same with your baking cocoa)

All that chocolatey goodness!
  • Ingredients
  • 12 tbs butter (1 1 /2 sticks)
  • 1/3 cup chocolate chips
  • 2 cups sugar
  • 3 eggs
  • 1 tbs vanilla
  • 1 cup flour
  • 1 cup baking cocoa
  • 1 /2 tsp salt
  • 1 cup chocolate chips

Directions -preheat oven to 350 degrees for 20 minutes. Line a 9×13 pan with parchment paper and spray with baking spray. Set aside. In a microwave safe bowl, heat butter and chocolate chips in 30 second increments until you can stir smooth. Add sugar. Blend in eggs and vanilla. Fold in flour, salt, and baking cocoa. Mix in chips. Mixture will be thick. Press into prepared pan. Bake 20 to 25 minutes or until a toothpick inserted in the center basically comes out clean. Cool completely.

  • Topping ingredients
  • 1 cup white chocolate chips
  • 1 cup milk chocolate chips
  • 6 tbs heavy cream
  • 2 cups powdered sugar
  • 12 oreos, crushed

Directions – in a microwave safe bowl,melt both kinds of chocolate chips with heavy cream in 30 second increments until you can stir smooth. Blend in powdered sugar. Fold in Oreos. Frost brownies. Cut into squares. Store in covered container.

White chocolate chip macadamia nut cookiss

This cookie is a request from my mom.  White chocolate chip macadamia nut cookies.  A pretty standard cookie dough.  I used a mixture of Crisco and butter.  You can do all butter or all Crisco, if you prefer.  I added an egg yolk for a softer cookie. I also added 1 tbs of cornstarch because they help keep the cookies puffy.

Chill a couple of hours. Preheat oven to 350 degrees for 20 minutes. Line a cookie sheet with nonstick baking liners. Stagger cookies. Bake 10 to 14 minutes (light golden patches on top). Cool completely. Store in covered container.

Cream cheese sugar cookies stuffed with carrot cake truffles!

Anyone who knows me knows I LOVE to make stuffed cookies, using Oreos, candy, brownies, etc. I made a carrot cake and instead of bringing the leftovers into work, I turned them into carrot cake truffles, covered in melted white chocolate, and stuffed in cream cheese sugar cookies. I felt some sort of sugar cookie was the right way to go. These are my Thursday football treats! Yes, I know I usually make Friday football treats, but I have a zoom call with college friends tomorrow, so this week they are TFT (Thursday football treats)

Thursday football treats!
  • Ingredients
  • 1 carrot cake, baked, cooled and frosted (you can even use a cake mix and canned frosting)
  • 12 oz white chocolate chips
  • 1/2 stick butter, softened
  • 8 oz cream cheese, softened
  • 1 1/2 cups sugar
  • 1 egg
  • 1 tbs vanilla
  • 2 1/2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda

Directions for truffles – smush the frosted carrot cake in a bowl and scoop out 2 tbs and roll into a ball. Freeze 1 hour. In a microwave safe bowl, microwave chips in 30 second intervals until you can stir smooth. Dip truffles in, place on wax paper or parchment paper and chill at least 1 hour.

Cookie directions – cream butter, cream cheese and sugar. Add egg and vanilla. Fold in dry ongredients. Scoop out 2 tbs tbs of dough. Flatten. Place a truffle on top. Tops with another 2 tbs of flattened dough.

Seal truffle.

Store in fridge at least a few hours. Preheat oven to 350 degrees for 20 minutes. Scatter on a cookie sheet lined with nonstick baking liners. Bake 12 to 15 minutes (bottoms will be light golden). Sprinkle with powdered sugar while warm. Store in covered container.
