Milk chocolate chip mini m&m chocolate cookies

These are not just large cookies, they are not extra large. I feel they are 2XL. They are basically a cup of cookie dough bc they were the 3rd thing I baked today, after brownies and milk chocolate chip cookies. I made them big and cooked them at a higher temp to finally finish baking.

Remember to spoon your flour from your flour bag into your measuring cup so you get the right amount. I chilled these overnight. They did not spread out at all,so you could flatten the mounds before you chill them. Also preheat your oven to 410 degrees for 20 minutes before baking so it cycles to the eight temp.

  • 1 cup butter, softened
  • 1 cup brown sugar
  • 1/4 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 cup baking cocoa
  • 3 1/4 cups flour
  • 1 tsp cornstarch
  • 1 tsp baking soda
  • 1 cup milk chocolate chips
  • 1 cup mini m&ms

Directions – cream butter, brown sugar and sugar. Add eggs and vanilla. Blend in dry ingredients. Mix in chips and m&ms. Divide into 8 equal pieces. Flatten to however thick you want the cookies. Chill a few hours or overnight. Line a cookie sheet with nonstick baking liners. Preheat oven to 410 degrees for 20 minutes. Stagger cookies on sheet. Bake for 10 minutes (no longer because you are baking at a higher temp than usual for cookies)

XL milk chocolate chip cookies with ground macadamia nuts

To occupy my time before the Bills game tomorrow, I decided to bake a couple of things. Three to be exact, for Damar Hamlin, who continues to recover after a cardiac arrest event during a game on January 2nd. These are milk chocolate chip cookies with ground macadamia nuts. Not sure why I decided to grind them up (with my old school nutgrinder), but I did. These are pretty big cookies. I used 1/2 cup scoops of dough and chilled them overnight so they did not spread out too much.

Remember to spoon your flour from your flour bag into your measuring cup. Chill your dough. And preheat your oven for 20 minutes before baking so the stove cycles to the right temp. Also, do not overcook these. They will seem doughy, but will firm up and be ok after they cool. Or if you eat them warm, is there anything wrong with gushy cookies?

  • 4 1/2 cups flour
  • 1 tsp cornstarch

  • 2 cups milk chocolate chips
  • Finely ground macadamia nuts (opt)

Directions – cream butter, brown sugar, and sugar. Add eggs and vanilla. Blend in dry ingredients. Fold in chips and ground nuts. Scoop out 1/2 cups of dough and roll into balls. Chill a few hours or overnight. Preheat oven to 375 degrees for 20 minutes. Line a cookie sheet with nonstick baking liners. Stagger cookies on prepared sheets. Bake 11 to 15 minutes. I did mine for 13 and a half. Cool completley. Store in covered container.

While my triple chip cookie dough was chilling in the fridge (I believe chilled dough makes for the best cookies), we took Gracie on her nightly walk. She gets 2 walks a day, yet is still chubby. That’s a story for another day. Anyways, she met 2 new friends. A beautiful white German Shepherd named Rory and a American Eskimo named Gretzky. Rob and both did a double take. Indeed the pup is named Gretzky. Her fiancee, like Rob, is a huge hockey fan, and Gretzky fan. A really cool moment. Onto the recipe!

  • 1 cup butter, softened
  • 1 cup brown sugar
  • 1 tsp vanilla
  • 2 eggs
  • 3.4 oz instant vanilla pudding mix
  • 2 1/2 cups flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 cup chocolate chips
  • 1 cup white chocolate chips
  • 1 cup milk chocolate chips

Directions – cream butter and brown sugar. Add eggs and vanilla, pudding mix, baking soda and baking powder. Blend in flour. Fold in chips. Scoop out 1/4 cup of dough and form into mounds. Chill a few hours. Preheat oven to 35p degrees for 20 minutes. Line a cookie sheet with nonstick baking liners. Stagger cookies on the sheet – a row of 2, a row of 1, another row of 2 and a final row of 1. Baking 10 to 14 minutes. (Golden patches on tops of cookies). Cool completely. Store in covered container.

Dark chocolate triple chip cookies

For the first time in many weeks (maybe 20), there is no football! But I still,felt the need to bring something to work on a Monday (ahead of this nor’easter), so I decidedto go with dark chocolate cookies. I picked up a monster size bag of dark chocolate chips from bjs, along with a large bag of semisweet chips! One can never have too many bags of chocolate chips!

Gooey chocolate cookies!
  • Ingredients
  • 3 tbs butter
  • 2 1/4 cups dark chocolate chips
  • 3 eggs
  • 3/4 cup sugar
  • 1 tbs vanilla
  • 1/4 cup plus 2 tbs flour
  • 1/4 tsp plus 1/8 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup milk chocolate chips
  • 1/3 cup,semisweet chocolate chips
  • 1/3 cup dark chocolate chips

Directions – Melt butter and 2 1/4 cups dark chocolate chips in 30 second increments until you can stir smooth. Add eggs and vanilla. Plenty in dry ingredients. Fold in chips. Mixture will be quite soft. Scoop out 1/4 cups of dough, place on a flat surface and chill a few hours or overnight. Preheat oven to 350 degrees for 20 minutes. Line a sheet with nonstick baking liners. You likely will have to use a spatula to scrape dough from your flat surface to your baking sheets. Bake 10 to 12 minutes. They will be slightly gooey in center. They will continue to bake on cookie sheet once removed from oven. Sprinkle warm cookies with powdered sugar. Store in covered container.
