Happy National Chocolate Chip Cookie day 2024!

I thought we already had national chocolate chip cookie day this year, but I saw yesterday that it is August 4th, which is today.    I already had funfetti cookies stuffed with golden oreos, but still whipped up a batch of chocolate chip cookies, also including white and milk chocolate chips.  These are made with browned butter and bread flour.  I used a bread flour recipe bc it is terribly humid, again, and I was hoping to keep the cookies from spreading.  I also froze the dough mounds for that same reason. The first batch did not spread at all.  They are large blobs and a little doughy, so I popped them in the fridge. 

These might be a little too puffy!

I have a few different cookie pans, so it might have been that.  😀

Remember to scoop your flour from your flour bag into your measuring cup so you get the right amount.  I recommend chilling the individual  dough cookies for a few hours.  Also preheat your oven before baking.

  • Ingredients list
  • 1 cup butter, browned and cooled 10 min
  • 1 1/4 cups packed brown sugar
  • 1/4 cup sugar
  • 1 egg
  • 1 egg yolk
  • 1 tsp vanilla
  • 1 tbs heavy cream or milk
  • 2 1/2 cups bread flour (scooped from your flour bag into your measuring cup so you get the right amount)
  • 1 tsp baking soda
  • 1 tsp salt
  • 2/3 cup semisweet chocolate chips
  • 2/3 cup white chocolate chips
  • 2/3 cup milk chocolate chips

Directions – pour browned butter in a mixing bowl.  Mix in brown sugar and sugar.  Blend in egg, yolk, vanilla and cream/milk.  Fold in dry ingredients.  Mix in chips.  Scoop out 1/4 cups of dough.  Chill a few hours.  Preheat oven to 350 degrees.   Line a cookie sheet with nonstick baking liners.  Stagger cookies on sheet.   Bake 10 to 12 minutes.   Tops will likely be gushy.  Place them in fridge to firm them up.

Bounceback Triple Chip Cookies

The triple chip cookie I made yesterday were a complete disaster.  So flat I found them unacceptable.  So I mashed them up, added a few tbs of melted butter and pressed them in a bottom of a pan, added a double recipe of brownies and will bring them to work tomorrow.

Anyway, I needed to bounce back with the triple chips.  These came out perfect.  A couple of things- you need all-purpose flour and bread flour.  You need to scoop your flour from your flour bag into your measuring cup so you get the right amount.   The dough needs to be frozen for 90 minutes and then bake it frozen. 

  • Ingredients
  • 1/2 cup butter, cold and shredded with a cheese grater or cubed into small pieces
  • 1/3 cup sugar
  • 1/3 cup brown sugar
  • 1 egg
  • 1 yolk
  • 1 tsp vanilla
  • 3/4 cup plus 1 tbs flour
  • 3/4 cup plus 1 tbs bread flour
  • 1 tsp baking powder
  • 2/3 cup mini chocolate chips (or semisweet)
  • 2/3 cup white chocolate chips
  • 2/3 cup milk chocolate chips

Directions – in a bowl cream cold, cubed butter, brown sugar and sugar.  Add egg, yolk and vanilla.  Fold in dry ingredients.  Blend in chips.  Scoop out 1/4 cups of dough.  Freeze 90 minutes.  Cookie dough is baked directly from freezer.   Preheat oven to 375 degrees.  Line a cookie sheet with parchment paper.  Stagger cookies on prepared sheet.  Bake 13 minutes.  Tops will be a little doughy.  Cool completley.   Put in fridge for an hour to firm up.  Theb, remove from fridge and store in covered container.

Does a cookie solve all problems?

That was the question my husband asked me after I got home from work and after the Bills lost by 5 in London and both lineback Matt Milano and defensive lineman Da’Quan Jones left with injuries. And they could both be out a while. Rob’s answer to all this was “chocolate chip cookies.” As soon as he said cookies, Gracie ran in and sat at my feet, like the good pup she is, as if to say “yes, mama, cookies make everything better. I do not agree, but I did make cookies. And yes,chocolate chip ones. Honestly, I am still mad about the loss, but someone will enjoy these damn cookies.

  • 2 cups all purpose flour

  • 1 tsp salt
  • 1 cup chocolate chips
  • 1 cup mini chocolate chips

Directions – in a bowl, cream butter flavor crisco, brown sugar and sugar. Add eggs and vanilla. Fold in dry ingredients. Mix in chips. Scoop out 1/4 cups of dough and form tall cylinders. Chill a few hours. Preheat oven to 375 degrees for 20 minutes. Line a cookie sheet with parchment paper and stagger cookies. Bake 14 to 16 minutes. Edges will be golden. Middle may be soft,but remove from oven. Cool completley. Chill in fridge to help cookies firm up. Store in covered container.

Oreo topped chocolate chip cookies

It is a rainy dreary Friday, so seems like a good time to bake cookies. These are chocolate chip cookies topped with crushed oreos. I made the cookies, formed them into mounds and them rolled the tops in crushed oreos. I chilled them for a few hours, then baked them.

These use a mix of regular all purpose flour and bread flour. Remember to scoop the flour from your flour bag into your measuring cup so you get the right amount. I also used some cornstarch to keep them from flattening too much.

  • Ingredients list
  • 1 cup butter, softened
  • 3/4 cup brown sugar
  • 1/4 cup sugar
  • 1 egg
  • 1 egg yolk
  • 1 tsp vanilla
  • 1 cup all purpose flour
  • 1 1/4 cups bread flour
  • 1 tbs cornstarch
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 cup chocolate chips
  • 10 to 12 oreos, finely crushed

Directions – cream butter, brown sugar and sugar. Add egg, yolk and vanilla. Blend in dry ingredients. Fold in chips. Scoop out 1/4 cups of dough. Roll tops in crushed oreos. Chill a few hours. Preheat oven to 350 degrees for 20 minutes before baking so it cycles to the right temp. On a cookie sheet lined with parchment paper, stagger cookies, as shown below.

Bake at 350 degrees for 13 to 15 minutes (the edges will be golden). The middle may be a little gushy, but will firm up as the cookies cool. Cool completely. Store in covered container.

Browned butter Triple Chip Cookies (aka “the Franks”

I got a request for the triple chip cookies from my hubby. I looked through my collection of chocolate chip cookie recipes and came across one using browned butter and bread flour. Browned butter is pretty simple to do. Just put your butter in a pan, cook it over medium heat, stirring occasionally, until you see little brown specs. You should let it cool down for 5 minutes or so. I was in a hurry and didn’t.. so some of my chips marbled. I think the cookies are still good. I have not made these with all purpose flour, so I am not sure how they would turn out.

Remember to scoop your flour from your flour bag into your measuring cup so you get the right amount. If you pour it, it gets backed in and your cookies might turn out dry. Also, preheat your oven to 350 degrees for 20 minutes before baking so it cycles to the right temp.

  • Ingredients
  • 1 cup butter, browned and cooled 5 minutes
  • 1/4 cup sugar
  • 1 1/4 cups brown sugar
  • 1 egg
  • 1 egg yolk
  • 2 tsp vanilla
  • 1 tbs heavy cream or milk
  • 2 1/4 cups bread flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tbs cornstarch ingredients.
  • 2/3 cup white chocolate chips
  • 2/3 cup milk chocolate chips
  • 2/3 cup semisweet chocolate chips

Directions – preheat oven to 350 degrees for 20 minutes. Line a cookie sheet with nonstick baking liners. Combine butter, sugar and brown sugar. Mix in egg, yolk, vanilla and cream or milk. Fold in dry ingredients. Mix in chips. Scoop out 3 tbs of dough and stagger on prepared sheets.

Bake 10 to 11 minutes (no longer) cool completely. Store in covered container.

Marble cookies for week 18 football friday

Marbled cookies

Today felt like a day for celebration. There was a miraculous update on Bills Safety Damar Hamlin. He collapsed during the Monday Night football game and was rushed to University of Cincinnati medical center. Each day there were updates of reported progress. Then today, the update was on “remarkable” progress, although he still has other progress to be made. One of the things that made me smile – Damar communicated to doctors asking, in writing, “did we win the game?” All the prayers made a big difference. God is good. Thanks to so many people who’s quick actions saved his life. And the outpouring of love for this young man has been overwhelming. All the donations and prayers made in his name and wonderful stories about him are just beautiful. My hope is all the love, kindness, and positive vibes and prayers put out there can remain and make the world a better, friendlier,more loving place.

And with that, I decided to bake marble cookies at 9 pm. Just a cookie made with browned butter and instead of adding all chocolate chips, I melted them and swirled them in.

Notes – I used bread flour in these in hopes they would not spread out too much. I did not have time to chill the dough. Remember to spoon your flour from your flour bag into your measuring cup so you get the right amount. And preheat your oven to 350 degrees for 20 minutes before baking.

  • 1 cup butter browned, not cooled
  • 1 1/4 cups butter, browned
  • 1/4 cup sugar
  • 1 egg
  • 1 yolk
  • 1 tsp vanilla
  • 1 tbs cream
  • 2 1/2 cups flour
  • 1 tsp baking soda
  • 1 cup chocolate chips,melted
  • Extra chocolate chips

In a bowl, combine browned butter, sugar and brown sugar. Add egg, yolk, vanilla and cream. Blend in dry ingredients. Swirl in melted chips to marble dough. Scoop out 2 tbs dough and form mounds. Lightly press a few chocolate chips on top. Chill a few hours. Line a cookie sheet with parchment paper. Preheat oven to 350 degrees for 20 minutes before baking. Stagger cookies on prepared sheer. Bake 10 minutes (no longer). Cool completley. Store in covered container.

Pretzel Buns (bread machine)

These are amazing! And they are pretty easy to make. I use a bread machine – dough cycle only – for these. You could probably use a stand mixer and need it (but I am not sure how much time that would involve, plus kneading dough is not my strength). I baked them in my oven.

  • Ingredients
  • 1 cup milk
  • 1/2 cup hot water
  • 1 packet instant yeast
  • 1 tbs sugar
  • 4 cups bread flour
  • 1 tsp salt

Directions – in your bread maker tin, pour in milk, water, sugar and yeast. Add flour and salt. Turn on bread machine and select dough cycle. Let it run through cycle. Spray your hands with Pam (trust me on this). Divide dough into 8 equal pieces and form into rolls. Let rise on a greased baking sheet for an hour. Preheat oven to 400 degrees for 20 minutes. In a small bowl, beat an egg and set aside. In a pot, boil 8 cups of water and two tbs baking soda. Place 2 buns doughs at a time, and boil each side for 45 seconds. Place on greased sheet. Brush with beaten egg and Sprinkle with salt. Bake at 400 degrees for 15 to 20 minutes. Cool completely. Store in a freezer bag and freeze. I think the rolls would take an hour to thaw put to eat.Buns!
