Football Friday week 15 – stuffed chocolate snowball cookies

What could make a chocolate cookie better?  An oreo inside!

A rather simple treat for football friday 15 – chocolate snowball cookies stuffed with a hershey kiss or an oreo!   I used a sugar cookie mix to make thing easier.

Another big matchup for my Bills Sunday – at Detroit.   Should be a great one! 

Remember to scoop your flour and baking cocoa from their respective containers into your measuring cup so you get the right amount.  I also recommend freezing the individual stuffed doughs for a half hour to keep them from spreading.  Also, don’t bake any longer than 10 minutes.

  • Ingredients
  • 1 sugar cookie mix
  • 1/4 cup baking cocoa
  • 1/4 cup flour
  • 1 egg
  • 1/2 cup butter, melted
  • 1 -2 tbs water
  • 1 tsp vanilla
  • Hershey kisses or other candy
  • Oreos

Directions – in a bowl, combine sugar  cookie mix, flour and baking cocoa.  Stir in egg, butter and water.  Scoop out 2 tbs dough and form around each kiss.  (You will need more dough to cover oreo).  Freeze individual doughs for 30 minutes, at least.  Preheat oven to 375 degrees.  Line a cookie sheet with nonstick baking liners.  Stagger cookies on sheet.  Bake 8 to 10 minutes, no longer.  Immediately sprinkle with powdered sugar.  Cool completely.   Store in covered container.

Victory Tuesday treats – 2 days late!

Because the Bills game ended at 1030 Monday night, it was too late to bake victory Tuesday cookies.  Last night, our neighbor chatted us up as we were walking Gracie and it was too late to bake.  So tonight I was determined.  I present iced oatmeal cookies.  Some came out nice and thick like I wanted.  Others spread out.  Next time I will chill the dough for an hour or so and perhaps form the mounds a little higher.

  • Ingredients list
  • 1 cup butter, softened
  • 1/3 cup crisco
  • 1 3/4 cups brown sugar
  • 1 egg
  • 1 yolk
  • 1 1/2 tbs honey or corn syrup
  • 1 tsp vanilla
  • 1 tsp salt
  • 1 tsp cinnamon
  • 2 cups flour
  • 4 1/2 cups oats (I used a combo of old fashioned and quick)

Directions – in a bowl, cream butter, crisco and brown sugar.  Add egg, yolk, vanilla, honey,  salt and cinnamon.  Blend in half of flour and oats.  Blend in other half.  Divide into 18 even size pieces.  Roll into balls and chill and hour or so.  Preheat oven to 350 degrees.  Line a cookie sheet with parchment paper.  Stagger cookies on sheet.  Bake 13 to 15 minutes (no longer).  Cool completely.

  • Frosting ingredients
  • 1 1/2 cups powdered sugar
  • 2 tbs milk
  • 1 tsp vanilla

Directions – combine and drizzle on cooled cookies.  Store in covered container.

Cookies and Cream Cookies

Bills gameday week 3, treat # 1 – cookies and cream cookies.  These are a basic chocolate chip cookie dough  recipe with pieces of oreo, milk chocolate chips and white chocolate chips.  These are very large – 6 cookies, but I shall cut them in half or thirds for tomorrow. 

Remember to scoop your flour from your flour bag into your measuring cup so you get the right amount.  I recommend chilling the individual doughs for a half hour or so to keep them puffy.  Also make sure you preheat your oven so it cycles to the right temp.

  • Ingredients list
  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 2 cups flour
  • 1/2 tso baking soda
  • 1 1/2 tsp baking powder
  • 1 tbs cornstarch
  • 1 tsp salt
  • 1 cup oreos, broken into pieces
  • 1 /2 cup milk chocolate chips
  • 1/2 cup white chocolate chips

Directions – in a bowl, cream sugar, brown sugar and sugar.  Add egg and vanilla.  Blend in dry ingredients.   Mix in oreos and chips.  Divide into 6 even pieces and form into tall mounds.  Chill 30 minutes to an hour.  Line a cookies sheet with parchment paper.  Stagger cookies on sheet like below.

Preheat oven to 375 degrees.  Bake 14 minutes (no longer).  Cool completely.   Store in covered container.

A classic cookie for a classic NFL rivalry (Go Bills)

Week 2 of the NFL season kicks off tomorrow with my beloved Bills taking on the Dolphins.   The rivalry has so many great memories and moments- from us finally beating the Dolphins in 1980 (ending the 0 for the 1970s) to  Jim Kelly’s late touchdown run in Miami in 1989 to Josh and the current Bills matchups against the Dolphins.  Such a classic rivalry deserves a classic cookie, so I went with one of the chocolate chip cookies in my collection.  These use part browned butter and cold butter cut into small cubes, as well as a tsp of active yeast.  I recommend chilling or freezing individual doughs for a few hours to keep from spreading.

  • Ingredients list
  • 1/2 cup butter, browned
  • 1/4 cup butter, cold and cut into small cubes
  • 2 1/4 cups flour
  • 3/4 tsp baking soda
  • 1 tsp active dry yeast
  • 3/4 cup brown sugar
  • 1/2 cup sugar
  • 1 egg
  • 2 tsp vanilla
  • 1 cup chocolate chips

To brown butter, place in a pan and heat over low to medium heat until you see brown specs in bottom.  This may take 10 minutes or so.  Let cool 10 minutes.

Directions – in a bowl, combine flour, baking soda and yeast.  Cut in butter.  In a separate bowl, combine browned butter, sugar and brown sugar.  Mix in egg and vanilla.  Add flour mixture.  Stir in chips.  Scoop out 1/4 cups of dough and form tall mounds.  Chill or freeze for a few hours.  Preheat oven to 375.  Line a cookie sheet with parchment paper.  Stagger cookies on sheet.  Bake 11 to 13 min, no longer.  Cool.  Pop in fridge for a few hours to firm up, if they are a little gushy.  Store in covered container.

Golden oreo stuffed cake mix cookies

Need a quick treat?  This is one recipe to try.  I used golden oreos, but you can use any candy you want too.  I added sprinkles to the dough, which is optional, of course.  You can also make these unstuffed. I estimate this recipe makes 12 to 15 cookies.

  • Ingredients list
  • 1 cake mix
  • 1/3 cup vegetable oil
  • 1 egg
  • 1 tbs water
  • Golden oreos

Directions – preheat oven to 350 degrees.  Line a cookie sheet with parchment paper.  In a bowl, combine cake mix, vegetable oil, egg and water.   You may need to use your hands (like when making meatballs) to get dough to come together.  Add sprinkles, if using.  Scoop out 2 tbs dough and form around oreos.   Stagger cookies on prepared sheets.  Bake 9 to 10 min.  Cool completely.   Store in covered container.

Half Moon/Black and White Cookies

These cookies are magical.  A soft cake-like vanilla cookies with one half frosted with vanilla buttercream, the other frosted with a chocolate fudge frosting.  I actually made these smaller than a traditional half moon/bw cookie and they are still pretty big

Remember to scoop your flour from your flour bag into your measuring cup so you get the right amount.  Also preheat your oven before baking.

  • Ingredients list
  • 1/4 cup shortening
  • 3/4 cup sugar
  • 1 egg
  • 1 3/4 cups flour
  • 1 tbs baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 1/2 cup milk

Directions – preheat oven to 350 degrees.  In a bowl, cream shortening and sugar.  Add egg and vanilla.  Blend in dry ingredients and milk.  Line a cookie sheet with nonstick baking liners.  Scoop out 2 tbs dough and place on sheet.  Leave some space bc these spread.  Bake 9 to 11 minutes.  Cool completely.

  • Buttercream frosting ingredients
  • 4 tbs butter, softened
  • 2 tbs shortening
  • 1 3/4  cups powdered sugar
  • 2 to 3 tbs milk
  • 1 tsp vanilla

In a bowl, cream butter and shortening, add powdered sugar.  Stir in milk and vanilla.

  • Fudge frosting
  • 1/4 cup chocolate chips
  • 1/2  tbs butter
  • 1 cup powdered sugar
  • 1/2 tbs corn syrup
  • 1 tsp vanilla
  • 2  tbs very hot water

In a microwave safe bowl,  chips and butter in 30 sec increments.   Blend in remaining ingredients. You can add more powdered sugar or hot water to get the consistency you want.

To frost, turn the cookies flat side up, like below

frost one half with vanilla, the other with chocolate.  Chill to set frosting.  Store in covered container.

Funfetti cookies stuffed with golden oreos

I broke out of the chocolate box with these treats – funfetti cookies stuffed with golden oreos. 

Even my chocolate loving friends will enjoy this very sweet treat!  They have sprinkles!

It is humid, again, so they spread way more than I prefer, so I cut them in half (my work friends would do that anyways 😀).  Next time, I may freeze the individual doughs to try and prevent as much spreading.

This recipe made a lot of cookies!  But is that ever a bad thing?

  • Ingredients list
  • 1/2  cup butter, softened
  • 1/2 cup crisco
  • 2 cups packed brown sugar
  • 2/3 cup sugar
  • 2 eggs
  • 2 tsp vanilla
  • 3 cups flour (scooped from flour bag into measuring cup)
  • 1/2 cup baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1 cup sprinkes
  • Golden oreos

Directions – in a bowl, blend butter and crisco.  Add sugar and brown sugar.  Mix in eggs and vanilla.  Stir in dry ingredients.  Fold in sprinkles.  Scoop out 1 1/2 tbs dough.

Divide scoop  in half.  Evenly flatten each like below. 

Place an oreo on top of one flattened half.

Top with other flattened half.

Evenly form around cookie. 

Chill.  Preheat oven to 350 degrees.  Line a cookie sheet with parchment paper. stagger cookies doughs on prepared sheet.

Bake 10 to 12 minutes, bottoms and edges will be golden. 

Cool completely.  Cut in half, if you want, like below.

Chocolate triple chip cookies

Another hot, humid day, so why not turn on the oven to bake cookies? 😉

Today, I present chocolate triple chip cookies.  And I topped them with melted chocolate because I have a million hershey kisses in the house.

  • Ingredients list
  • 7 tbs butter, melted
  • 1/2 cup brown sugar
  • 3 tbs sugar
  • 1 egg
  • 1 tbs heavy cream
  • 1 tsp vanilla
  • 1 1/4 cups flour
  • 1/4 cup unsweetened baking cocoa
  • 1/2 tbs cornstarch
  • 1/4 tsp baking powder
  • 1/4 baking soda
  • 1/3 cup white chocolate chips
  • 1/3 cup milk chocolate chips
  • 1/3 cup semisweer chocolate chips

Directions – Pour melted butter in a bowl, add sugar and brown sugar.  Mix in egg, vanilla, and heavy cream. Blend in dry ingredients, then chips.  Scoop out 1 1/3 tbs dough (I used a cookie scoop).   Preheat oven to 350 degrees.  Line a cookie sheet with nonstick baking liners. Stagger cookie doughs on prepared sheet.    Bake 8-9 minutes, no longer.   Cool completely.  Store in covered container.

Funfetti cookie sandwiches

I haven’t made funfetti cookies in quite a while, so I felt I was due to bake up a batch.  I baked them when it was a little humid, so they came out a little flatter than I preferred, so I made each one into a cookie sandwich.  I think next time, I may add a little more flour, perhaps 1/4 cup more.

I recommend scooping the flour from your flour bag into your measuring cup so you get the right amount.  Also chill the individual mounds of dough for a few hours.  Preheat your ovent to 350 degrees for 20 minutes before baking so it cycles to the right temp.

  • Funfetti cookie ingredients
  • 1 cup of butter, softened
  • 1 1/2 cups sugar
  • 2 eggs
  • 2 tsp vanilla
  • 2 tsp almond extract (or you can omit this if you don’t have it)
  • 3 to 3 1/4 cups flour
  • 1 1/2 tsp baking soda
  • 1 1/2 tbs cornstarch
  • 1/2 tsp salt
  • 1 cup sprinkles

Directions – in a bowl, cream butter and sugar.  Add eggs and extracts.  Blend in dry ingredients.   Fold in sprinkles.   Scoop out 2 tbs dough and form tall mounds.  Chill a few hours. When ready to bake, preheat oven to 350 degrees.  Line a cookie sheet with parchment paper.  Stagger cookies on sheet – alternating a row of 2, then a row of one.  These spread so leave some room.  Bake 10 to 11 minutes.  they will be a little gushy.  Cool completely.  you can also pop them in the fridge to firm them up a bit.

  • Filling ingredients
  • 1/2 cup butter soft
  • 3 cups powdered sugar
  • 2 tbs milk
  • 1 tsp vanilla

Directions- in a bowl cream butter and powdered sugar.  Add milk and vanilla. 

Assembly – cut each cookie in half.  Spread some filling between 2 halves.  Store in fridge for a few hours.

Brownie stuffed peanut butter cookies

The other cookies I made using small brown squares – peanut butter!   Few things go together like peanut butter and chocolate.

Remember to scoop your flour from your flour bag into you measuring cup so you get the right amount.   Chill your brownie stuffed cookie dough overnight to prevent spreading.  Preheat oven to 375 degrees for 20 minutes so it cycles to the right temp.

  • 1/2 cup crisco
  • 3/4 cup peanut butter
  • 1/3 cup sugar
  • 1/3 cup brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 2 tbs milk
  • 1 1/2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • Brownies cut into 1 inch squares

Directions – in a bowl, cream crisco and peanut butter.  Blend in sugar and brown sugar.  Add egg, vanilla, and milk.  Fold in dry ingredients.  Scoop out 2 tbs dough.  Divide in half and slightly flatten. Place a brownie piece between 2 flattened halves and seal edges around brownie.  Chill a few hours or overnight.  Preheat oven to 375 degrees for 20 minutes.  Line a cookie sheet with parchment paper.  Stagger cookies on sheet.  Bake 8 to 10 minutes (no longer).  Cool completely.   Store in covered container.
