Round 2, game 6 victory treats – melted ice cream brownies stuffed in melted ice cream chocolate chip cookies

I really had to step up these Sabres victory treats, we came back from a 3-1 deficit in Montreal, in a must win last night and won 8-3.  Yowsa.  It was awesome!  So i thought what can I do here?   I decided to make melted ice cream brownies and stuff them inside melted ice cream cookies.  Boom!

  • Brownies ingredients lost
  • 1 cup chocolate ice cream, melted
  • 1/2 cup butter, melted
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 cup flour
  • 1/3 cup baking cocoa
  • 1/4 tsp baking powder
  • 1/4 tsp salt

Directions – line an 8×8 pan with tin foil and spray with baking spray.  Set aside.  Preheat oven to 350 degrees.   In a bowl, combine butter and sugar.  Add eggs and vanilla.  Blend in dry ingredients then ice cream.  Evenly spread into pan.  Bake 22 to 27 minues, or until a toothpick inserted in center comes out with a few moist crumbs.  Cool completely.  Then cut in small squares.

For the chocolate chip cookies, I used a mix of vanilla and chocolate ice cream.  I also used a combo of all purpose and bread flour, but you can just use all purpose flour.  I used milk chocolate chips, but again, whatever chip is fine.

  • Chocolate chip cookie dough ingredients
  • 1 cup ice cream, melted
  • 1 1/2 cups all purpose flour
  • 1 cup bread flour
  • 1 tsp baking soda
  • 1/2 cup crisco
  • 1 cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 cup milk chocolate chips

In a bowl, cream crisco and sugar.  Add egg and vanilla.  Blend in dry ingredients,  then ice cream.  Fold in chips.  Scoop out 1/4 cups of dough and divide in half.  Flatten each half.  On one half, place a brownie square.

Top with another half.

Seal edges. 

I recommend chilling these for a few hours.  When ready to bake, preheat oven to 350 degrees.  Line a cookie sheet with parchment paper and stagger cookies on sheet.  Bake 12 to 15 minutes, no longer.  Cool completely.  Store in covered container

Mini Peanut butter m&m peanut butter cookies stuffed with Reese’s eggs

My other treat for work, in honor of opening day of the NHL and NBA Playoffs and my Sabres first playoff game in forever, is for all my peanut butter loving friends- peanut butter cookies with mini peanut butter m&ms

And stuffed with reese’s eggs.  

Boom!

Remember to scoop your flour bag into your measuring cup so you get the right amount.  Also firmly packed your brown sugar into your measuring cup so you get the right amount.  Chill the dough at least a few hours before baking to keep them puffy and preheat the oven before baking.

  • Ingredients list
  • 1/2 cup butter, softened
  • 3/4 cup peanut butter
  • 3/4 cup brown sugar
  • 1/4 cup sugar
  • 1 egg
  • 1 tbs milk
  • 1 tsp vanilla
  • 2 cups flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup peanut butter mini m&ms
  • Reeses eggs, unwrapped  (not the regular size ones)

Directions – in a bowl, cream butter, peanut butter, brown sugar and sugar.  Add egg, vanilla and milk.  Blend in dry ingredients then m&ms.   Scoop out 1/4 cup of dough and divide in half.  Flatten each half.  On one half, place a Reese’s egg.  Place other half on top and seal edges. Chill a few hours.  When ready to bake,preheat oven to 350 degrees.  Line a cookie sheet with parchment paper.  Stagger cookies on sheet. 

Bake 11 to 13 minutes, no longer.  cool completely.  

Store in covered container.

Toasted sugar, graham cracker, milk chocolate chip cookies stuffed with mallo cups

Now that’s a cookie!

I had a bag of mallo cups and wanted to use them up, so I thought of making a s’mores related treat. 

I also have seen some articles that suggest using toasted sugar in cookie recipes, so I thought i would use the mallo cups stuffed in milk chocolate chip cookies made with toasted sugar and some finely ground graham crackers.

Stuffed with mallo cups

First about toasting the sugar- you don’t have to.. but if you want to – place the cup of sugar on a cookie sheet and spread to a relatively thin layer.  Bake in a preheated oven (350 degrees) for 15 minutes, or so, stirring every so often, until sugar is a light golden, like below.

I also used a combo of all purpose flour and bread flour.   Bread flour makes cookies a little more chewy.  You can use just all purpose flour entirely.

These are stuffed with Reese’s pb hearts (the mini chips are the marker)

  • 1 cup sugar, toasted (see above for directions)
  • 3 1/2 tsp baking powder
  • 2 tsp baking soda
  • 2 tsp salt
  • 4 eggs
  • 3 cups all purpose flour
  • 1 1/2 cups bread flour
  • 1/2 cup finely crushed graham cracker crumbs
  • 2 cups milk chocolate chips
  • Mallo cups

Directions – in a bowl, cream butter, brown sugar, toasted sugar, baking soda, baking powder and salt.  Add eggs and blend well.  Mix in flours, then graham cracker crumbs.  If dough seems a bit dry, add a tbs or two of water.   Scoop out 1/ cup of dough.

Divide in half and slightly flatten each half.  

  On one half, place a mallo cups.

Top with other flattened half and seal edges. 

Chill a few hours.  When ready to bake, preheat oven to 350 degrees.  Line a cookie sheet with nonstick baking liners. Stagger cookies on sheet.  Bake 16 to 20 minutes (golden spots on top).  Cool completely.  Store in covered container.

Chocolate cake mix cookies stuffed with cookie dough oreos!

I found these oreos in the “aisle of shame” at aldi. 

If you are not familiar with it, it is an aisle of stuff you “probably” don’t need, but the price is great and you think “why not”?   That aisle is the best!  It is how I wound up with an electric cake pop maker and churro maker (both work like the George foreman electric plug in grill), which i have yet to use.  Each was 7$.

Use any cake mix flavor and any oreo flavor you want.  I used chocolate cake mix and cookie dough oreos today.

Preheat your oven to 350 degrees before baking.

  • Ingredients list
  • 1 cake mix
  • 1/3 cup vegetable oil
  • 1 egg
  • 2 tbs
  • Oreos

Directions – preheat oven to 350 degrees.  Line a cookie sheet with nonstick baking liners.  In a bowl, mix cake mix, oil, egg and water.  Scoop out 3 tbs dough.

Divide in half.  Flatten both.   Lay one half on a flattened surface.

Top with an oreo.

Place other flattened half on top and seal edges. 

Stagger on cookie sheet. 

Bake 10 minutes, no longer.  Cool completely.   Store in covered container.

Chocolate chip cookie truffle stuffed dark chocolate cookies

I wanted to make chocolate chip cookies, but they spread out way too much and i found them unacceptable to bring into work, so I decided to crush them up, make them into truffles and stuff them into dark chocolate cookies. 

The truffles were pretty easy to make and I think stuffing them in cookies was a pretty good idea.

Remember to scoop your flour from your flour bag into your measuring cup so you get the right amount.  The same goes for the baking cocoa.  I also recommend freeze the cookie doughs once they are stuffed to keep them puffy.

  • Truffles ingredients
  • Chocolate chip cookies, finely crushed
  • 4 ounces cream cheese softened

Directions – in a bowl, mix well.  Scoop out 1 tbs and roll into balls.  Freeze an hour.

  • Cookies ingredients
  • 5 tbs butter, softened
  • 1/4 cup sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 1/3 cups dark chocolate chips, melted (i put the chips in a microwave safe bowl and microwaved them in 45 second increments until I could stir smooth)

1 cup plus 1 tbs flour

1/4 cup baking cocoa

1 tsp baking powder

1/2 tsp baking soda

Directions – in a bowl, cream butter, sugar and brown sugar.  Add eggs and vanilla.  Stir in melted chocolate.  Blend in dry ingredients.  Scoop out 1 tbs dough and slightly flatten.

Place a chocolate chip cookie truffle on trop

Scoop out another tbs dough and slightly flatten.  Place on top of truffle.

Seal edges.  

Chill doughs a few hours.  Preheat oven to 350 degrees.  Line a cookiensheet with nonstick baking liners or parchment paper.  Stagger cookies on sheet.  Bake 11 to 13 minutes, no longer.  Cool completely.   Store in covered container.

Stuffed monster cookies for Championship week Saturday

Keeping my Championship week treat baking going with stuffed monster cookie#.  These have peanu butter, oats, milk chocolate chips and are stuffed with a) Reese’s pb cups

b) double stuff oreos or c) golden oreos. 

The oats make them healthy, right?

Remember to scoop your flour from your flour bag into your measuring cup so you get the right amount.  I also recommend chilling the individual doughs for an hour or two.

  • Ingredients list
  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 3/4 cup brown sugar
  • 1/4 cup sugar
  • 1 tsp vanilla
  • 2 eggs
  • 1 1/2 cups flour
  • 1 cup oats (i used instant)
  • 1 tsp baking soda
  • 1 tbs cornstarch
  • 1 cup mini m&ms
  • 1 cup milk chocolate chips

Directions -in a bowl, cream butter, peanut butter, brown sugar and sugar.  Add eggs and vanilla.  Blend in dry ingredients and oats.  Fold in chips and m&ms.  Scoop out 1 tbs dough and slightly flatten.

Top with a Reese’s pb cup or oreo

Scoop out another tbs of dough, slightly flatten and place on top.

Seal edges.

Chill and hour or two.  Preheat oven to 350 degrees.  Line a cookie sheet with parchment paper and stagger cookies.

Bake 11 to 13 minutes, no longer.  Cool completely.   Store in covered container .

Brownie stuffed M&M chocolate chip cookies for Championship week

This is a big week – championship week in men’s college basketball, amid the start of NFL free agency, and races are tightening in the NHL and NBA ahead of the postseason.  So I felt stuffed cookies were in order.  Specifically – M&M chocolate chip cookies stuffed with a brownie.  Sounds about right. 

  • Ingredients list
  • 1/2 cup butter, softened
  • 1/2 cup butter crisco
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 2 tsp vanilla
  • 3 1/4 cups flour
  • 3.4 Oz instant vanilla pudding mix
  • 1 1/2 tsp baking soda
  • 2 tsp cornstarch
  • 1 1/2 cups M&ms
  • 1/2 cup chocolate chips
  • One batch of brownies cut into small cubes

Directions – in a bowl, cream butter, butter crisco, sugar and brown sugar.  Add eggs and vanilla.  Blend in pudding mix.  Fold in dry ingredients.  Mix in chips and m&ms.  Scoop out 1 tbs dough and slightly flatten.  Place a brownie cube on top.  Scoop out another tbs of dough and slightly flatten.  Place on top of  brownie cube and seal edges to hide brownie.  Chill and few hours or over night.  Preheat oven to 350.  Line a cookie sheet with nonstick baking liners.  Stagger cookies doughs on sheet. 

Bake 12 to 14 minutes, no longer.

Golden oreo stuffed Funfetti cookies

I thought I would mix things up after baking a LOT of chocolate treats lately.  Today, I present funfetti cookies stuffed with golden oreos (although I did sneak some double stuff chocolate oreos in a few).

Remember to scoop your flour from your flour bag into your measuring cup so you get the right amount.  Also, i chilled them individual stuffed doughs overnight to try and keep them from spreading.

Ingredients list

12 tbs butter, softened

2/3 cup brown sugar

2/3 cup sugar

1 egg

1 egg yolk

1 tsp vanilla

1 tsp almond extract

2 1/4 cups flour

3/4 tsp baking soda

1 tsp salt

1/4 cup 🌈  sprinkles

Directions – in a bowl, cream butter, sugar, brown sugar.  Blend in egg, yolk, and extracts.  Fold in dry ingredients.  Mix in sprinkles.  Scoop out 1/4 cup dough.

Divide dough  in half and flatten each half. 

Place oreo on top of one half. 

Place other flattened half on top. 

Seal edges. 

Chill doughs a few hours.   Preheat oven to 350 degrees.  Line a cookie sheet with nonstick baking liners or parchment paper.  Stagger cookies on sheet.  Bake 10 to 12 minutes, no longer.  Cool completely.  Store in covered container

Victory Monday treat #2 – stuffed peanut butter cookies

The number two treat for our wildcard victory – peanut butter treats stuffed with reese’s trees (I have a LOT left over!  Also, I was proud of myself for resisting my urge to buy Reese’s hearts or Reese’s eggs at BJs yesterday).

I recommend scooping your flour from your flour bag into your measuring cup so you get the right amount.  I also recommend chilling the individual mounds of dough for a few hours (I did not for these today). 

  • Ingredients list
  • 1 cup crisco
  • 1 cup sugar
  • 1 cup brown sugar
  • 1 cup peanut butter
  • 2 eggs
  • 1 tsp vanilla
  • 1 tsp baking powder
  • 1 1/2 tsp baking soda
  • 2 1/2 cups flour (scooped from flour bag into your measuring cup)
  • Reese’s trees, unwrapped

Directions – in a bowl, cream crisco, peanut butter, sugar and brown sugar.  Add eggs and vanilla.  Mix in dry ingredients.  Scoop out 1/4 cups of dough.  Divide in half.  Place a tree in between two halves and seal edges.  Chill a few hours.   Preheat oven to 375 degrees.  Line a cookie sheet with nonstick baking liners.  Stagger on sheet. Bake 9 to 11 minutes (no longer).  Cool completely.   Store in covered container.

Football friday # 16 – Fudge stuffed snowball cookies

I made some fudge last night and thought I would use some of it to stuff in  snowball cookies (still plenty of fudge left over. ).  The cookies spread a little more than I prefer, but I was in a bit of a hurry and didn’t have time to chill or freeze the dough. 🙂

Remember to scoop your flour from your flour bag into your measuring cup so you get the right amount.  I recommend freezing or chilling the dough in the fridge for a few hours to try to keep the cookies puffy.

  • Ingredients
  • 1 cup butter, softened
  • 1/2 cup shortening
  • 4 tbs sugar
  • 6 tbs powdered sugar
  • 3 cups flour
  • 1 cup mini chocolate chips
  • Fudge, cut into small cubes
  • Directions – in a bowl, cream butter, shortening, sugar and powdered sugar.  Blend in flour.  Scoop out 2 tbs dough and divide in half.  Flatten each half.  Put a cube of fudge in between 2 halves and seal cookie.  Chill or freeze a few hours.  Preheat oven to 325 degrees.  Line a cookie sheet with nonstick baking liners or parchment paper.  Stagger cookies on sheet.  Bake 12 to 14 minutes, no longer.  Cool completely.  I popped mine in the fridge to firm them up.  Store in covered container.
