Chocolate snowball cookies

Chocolate snowball cookies

Victory cookie number two for my Bills – chocolate snowball cookies. An easy cookie to make and everyone will love them!

Cookie monster at it again!

Remember to scoop your flour, baking cocoa and powdered sugar from your respective containers into your measuring cups. If you pour directly into your measuring cups, the flour, cocoa and powdered sugar get packed in and you wind up with too much.. Which may make for a dry cookie. A grave sin, if there ever was one. Also preheat your oven to 350 degrees for 20 minutes so it cycles to the right temp for baking.

A stack of chocolate snowballs
  • 1 cup butter, softened
  • 1 /2 cup powdered sugar
  • 1/4 cup baking cocoa
  • 1 tsp vanilla
  • 2 cups flour
  • 1 cup mini chocolate chips

Directions – cream butter and powdered sugar. Blend in baking cocoa and vanilla. Fold in flour. Mix in chips. Scoop out 2 tbs of dough. Roll into balls, flatten slightly. Line a cookie sheet with nonstick baking liners or parchment paper. These don’t spread,so you can place rows of 3 on each prepared sheet. I got 9 or 12 on each, depending on the size of cookie sheet used. Sprinkle hot cookies with powdered sugar. Cool completely. Sprinkle with more powdered sugar. Store in covered container.

Thanks so much for stopping by. Remember to be kind. Life has been pretty hard for so many the last year and a half. The kindness you show someone may be what they need on that day.

Snowball cookies

Snowball cookies

Sunday’s win was a big one for my beloved Buffalo Bills, so I thought that called for two kinds of victory cookies! These are snowballs cookies. A very soft cookie, not overly sweet, with mini chocolate chips. These are a little bigger than a typical snowball cookie. I use 2 tbs dough.

That cookie monster!

Remember to scoop your flour and powdered sugar from into your measuring cups, as opposed to pouring then directly in. When you pour, the flour and powdered sugar are packed in and you end up with too much, making for a dry cookie. Also, preheat your oven to 375 degrees before baking So your oven cycles to the right temp.

A pile of snowballs!
  • Ingredients
  • 1 cup butter, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla
  • 2 1/4 cups flour
  • 1 cup mini chocolate chips
  • Extra powdered sugar
Sweet snowballs

Cream butter and powdered sugar. Add vanilla. Blend in flour. Mix in chips. Scoop out 2 tbs dough and roll into a ball. Slightly flatten. Line a cookie sheet with nonstick baking liners. These do not spread, so you can place 3 across and fit in as many as you’d like on a wheet ( I fit 9 or 12 on a sheet, depending on the size of the cookie sheet). Bake 12 minutes. Sprinkle hot cookies with powdered sugar. Cool completley. Sprinkle with more powdered sugar. Store in covered container.

Thanks so much for stopping by today. Let me know how these turn out if you make them. Remember to be kind. We all need some kindness each day. This has been a difficult year and a half with the pandemic. Some days are harder than others. The kindness you show someone may be just what they need that day.

Brown butter triple chip cookies

The cookie monster!

As I continue to break in out new stove, I present another version of the triple chip cookie. I used browned butter to give them a different flavor and active yeast to make them chewy.

Tips – scoop your flour from your flour bag into your measuring cup. (Pouring it in packs in the flour and winds up being too much flour, which could make dry cookies). I like to chill the dough for a bit so they cookies don’t get too flat. Also, preheat your oven to 375 degrees for 20 minutes so it cycles to the right temp

  • Ingredients
  • 1/2 cup butter
  • 1/4 cup cold butter, shredded
  • 2 1/4 cups flour
  • 1 tsp active yeast
  • 3/4 tsp baking soda
  • 3/4 cup brown sugar
  • 1/2 cup sugar
  • 1 egg
  • 1 tbs vanilla
  • 1/2 cup chocolate chips
  • 1/2 cup white chips
  • 1/2 cup milk chocolate chips

In a pan, brown butter over low-medium heat. (The butter melts, you continue to cook and stir it occasionally until little brown specks appear. Once that happens, set aside for ten minutes. In a bowl, combine flour, baking soda and yeast. Cut in cold, shredded butter. Add browned butter, sugar, brown sugar, egg and vanilla. Stir in chips. Scoop out 1/4 cups dough. Chill a few hours. Preheat oven to 375 degrees for 20 minutes. Line a cookie sheet with nonstick baking liners or parchment paper. Stagger cookies. Bake 9 to 13 minutes (light golden patches on top). Cool completely.

My new pooh potholder!

Thanks for stopping by today! I wish you a day of peace, love and joy. Remember to be kind. We are all fighting a battle of some sort. Your kindness may be the light that someone needs. ❤

Snowball cookies with mini chocolate chips

The only thing mini about these cookies is the chips!

These are a variation of a recipe I saw in one of my Nestle cookbooks that one of my grandmothers gave to me when I was in college. It is also the treat that Rob requested. I used a mix of Crisco and butter, but you can use all butter if you want. It is a very easy dough to make and the cookies will be a big hit! I made mine on the larger side, with 2 tbs of dough. You can use 2 tsp and you will bake more of them, obviously. They also take less time to cook.

Remember to scoop your powdered sugar and flour from your respective containers into measuring cups so you get the correct amount. Also, preheat your oven to 375 degrees for 20 minutes before baking so it cycles to the right temp.

  • Ingredients
  • 1/2 cup butter, softened
  • 1/2 cup Crisco
  • 1/2 cup powdered sugar
  • 1 tbs vanilla
  • 2 1/4 cups flour
  • 1/4 tsp salt
  • 1-2 tbs water
  • 1 cup mini chocolate chips
That cookie monster, at it again!

Directions – preheat oven to 375 degrees for 20 minutes before baking. Line a cookie sheet with parchment paper or nonstick baking liners. In a bowl, cream butter, Crisco and powdered sugar. Add vanilla. Blend in flour and salt. Mix in water. You may have to use your mixer for a while. It takes the dough some time to come together. Add chips. Scoop out 2 tbs dough, roll into a ball and slightly flatten. Place on prepared cookie sheet. Sprinkle with powdered sugar. Bake 10 to 12 minutes (bottoms will be lightly golden). Sprinkle warm cookies with powdered sugar. Cool completely. Store in covered container.

Gingerbread men/Reindeer sandwich cookies

Gingerbread men sandwich cookies

In the spirit of the Christmas season, I present you with this gingerbread men recipe. You can also flip them upside down and they become reindeer! I can not decorate, so I made these into sandwich cookies, using a simple vanilla frosting recipe. The only thing I forgot to do was sprinkle sugar on top of the cookies before baking.

Reminders – 1) scoop your flour from your flour bag into your measuring cup so you get the right amount. 2) chill the dough at least a few hours. (You may need to let it sit out for a bit after the chill process to make it easier to roll out. 3) preheat oven to 350 degrees for 20 minutes before baking so it cycles to the right temperature

Reindeer sandwich cookies
  • Ingredients
  • 1/2 cup butter, soft
  • 1/2 cup sugar
  • 1 egg
  • 2/3 cup molasses
  • 3 tbs water
  • 3 cups flour
  • 3/4 tsp baking soda
  • 2 tsp ginger
  • 2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ground cloves
  • Extra sugar

Directions – cream butter and sugar. Add egg, molasses and water. Blend in dry ingredients. Dough may be a little sticky. Cover and chill at least a few hours. Preheat oven to 350 degrees for 20 minutes before baking. On a floured surface, roll out dough to desired thickness and cut with cookie cutters. Line a cookie sheet with parchment paper or nonstick baking liners. Place on sheet. Bake 8 to 9 minutes. Cool completely.

Frosting – combine 2 tbs melted butter, 2 cups powdered sugar,1 tsp vanilla and add enough cream, a tbs at a time, to the desired consistency/thickness you want. Add food coloring if desired, spread between 2 cookies.

Yum!

Thanks for stopping by! If you make these, let me know how they turn out. I hope you have a wonderful day, filled with peace, happiness and love. And remember, be kind. We all need kindness

Puffy, large chocolate chip cookies

All that puffy goodness!

Testing out our new Frigidaire gas oven with a chocolate chip cookie recipe… One of the more than 20 ccc recipes I have. They came out perfect. I also picked up some aluminum cookie sheets because I have been ready some articles how they bake cookies better. I am very pleased with how they came out. I think I may be investing in some aluminum cake and brownie pans too 🙂

Remember to scoop your flour from your flour container into your measuring cup so you get the right amount. Also, chill the mounds of dough for a couple of hours. And finally, preheat your oven to 375 degrees for 20 minutes before baking, so your oven cycles to the right temp.

  • Ingredients
  • 1/2 cup butter, softened
  • 1/4 cup Crisco
  • 3/4 cup brown sugar
  • 1/2 cup sugar
  • 1 egg
  • 2 tsp vanilla (I used imitation)
  • 2 1/4 cups flour (scooped from your flour container into your measuring cup)
  • 2 tsp cornstarch
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 1/2 cups chocolate chips

Directions – cream butter, Crisco, brown sugar and sugar. Add egg and vanilla. Blend in dry ingredients. Fold in chips. Scoop out 1/4 cups of dough. Gently push a few extra chips on top. Chill dough mounds a few hours in fridge. When ready to bake, preheat oven to 375 degrees for 20 minutes. On a cookie sheet lined with nonstick baking liners, stagger cookies on the sheet. Bake 9 to 12 minutes (light golden patches on top). I let these cool on the sheet for 10 minutes after removing from oven, hoping they would stay puffy (they did). Store in covered container.

Thanks so much for stopping by. If you make these, let me know how they turn out. I hope you have a wonderful day, filled with joy, peace and love. And remember to be kind. We all deal with trials and tribulations. Some are tougher than others.

Week 8 victory Monday cookies

A chocolate version of the Franks! (Triple Chip chocolate cookies)

How is it week 8 already? Wow! I found today’s Bills game far too stressful. At least we got a win. And 5-2 is a solid record. To celebrate, I made a chocolate version of the triple chip cookies. And I slathered some melted milk chocolate on the bottom because, why not? Also, we set out a bowl of candy for Halloween, on a table. Rob keeps replenishing it and so far, no kid has dumped the bowl in his bag! And we only have 35 minutes left!

Shout out to our girl, Gracie, monitoring the situation

Remember to scoop your flour from your flour bag into your measuring cup. Do the same for the baking cocoa. And preheat your oven to 350 degrees for 20 minutes so it gets to the right temperature.

  • Ingredients
  • 1 cup butter, softened
  • 1 1\2 cups sugar
  • 1/2 cup brown sugar
  • 1 tsp vanilla
  • 2 eggs
  • 2 cups flour
  • 3/4 cup baking cocoa
  • 11/2 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1/2 cup chocolate chips
  • 1/2 cup white chips
  • 1/2 cup milk chocolate chips

Directions – cream butter, sugar and brown sugar. Add eggs and vanilla. Fold in dry ingredients. Mix in chips. Scoop out 1/4 cuos of dough. Chill at least an hour. Preheat oven to 350 degrees for 20 minutes. Line a cookie sheet with nonstick baking liners. Stagger cookies on the sheet. Bake 12 to 14 minutes. Cool completely. In a microwave safe bowl, combine 2 cups milk chocolate chips and 2 tsp of vegetable oil. Microwave in 30 second increments until you can stir smooth. Slather on bottom of cookies. Ler set. Store in covered container.

Is this necessary? Probably not, but who cares?

Thanks for stopping by! Have a wonderful day, one that I hope is filled with love, peace and happiness. And, remember to be kind. We are all fighting a battle, some battles are harder than others.

Small batch of chocolate chip cookies

Small batch, but big cookies

My president taste tester, Rob, asked for some chocolate chip cookies, so I made a small batch.  Our pup, Gracie, has quite a sweet tooth so she patiently waited for them to cool down.  Rob gave her some non chocolate pieces, so that made her happy.  Now she is enjoying a chilly fall night on the deck.  Life is good.

Waiting patiently for the cookies on top of the stove to cool

Chocolate chip sugar cookies stuffed with Oreos

An Oreo stuffed inside a chocolate chip sugar cookie

I have an abundance of Oreos so in an attempt to use them up, I decided to stuff them inside a chocolate chip sugar cookie. I used a Betty Crocker sugar cookie mix and added some chocolate chips. Then I stuffed an Oreo inside. And as soon as I took them out of the oven, I sprinkled them with powdered sugar. Feel free to use any cookie recipe (or mix).

  • Ingredients
  • 1 sugar cookie mix
  • 1/2 cup butter, softened
  • 1 tbs water
  • 1 egg
  • 1 cup chocolate chips
  • Oreos
Cookie monster at it again!

Stagger on a cookie sheet lined with nonstick baking liners. Bake 10 to 14 minutes, until light golden on bottom. Immediately sprinkle with powdered sugar after removing from oven. Cool completely. Store in covered container.
