Puffy, large chocolate chip cookies

All that puffy goodness!

Testing out our new Frigidaire gas oven with a chocolate chip cookie recipe… One of the more than 20 ccc recipes I have. They came out perfect. I also picked up some aluminum cookie sheets because I have been ready some articles how they bake cookies better. I am very pleased with how they came out. I think I may be investing in some aluminum cake and brownie pans too 🙂

Remember to scoop your flour from your flour container into your measuring cup so you get the right amount. Also, chill the mounds of dough for a couple of hours. And finally, preheat your oven to 375 degrees for 20 minutes before baking, so your oven cycles to the right temp.

  • Ingredients
  • 1/2 cup butter, softened
  • 1/4 cup Crisco
  • 3/4 cup brown sugar
  • 1/2 cup sugar
  • 1 egg
  • 2 tsp vanilla (I used imitation)
  • 2 1/4 cups flour (scooped from your flour container into your measuring cup)
  • 2 tsp cornstarch
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 1/2 cups chocolate chips

Directions – cream butter, Crisco, brown sugar and sugar. Add egg and vanilla. Blend in dry ingredients. Fold in chips. Scoop out 1/4 cups of dough. Gently push a few extra chips on top. Chill dough mounds a few hours in fridge. When ready to bake, preheat oven to 375 degrees for 20 minutes. On a cookie sheet lined with nonstick baking liners, stagger cookies on the sheet. Bake 9 to 12 minutes (light golden patches on top). I let these cool on the sheet for 10 minutes after removing from oven,hoping they would stay puffy (they did). Store in covered container.

Easy frosted sugar cookies

These are part 2 of my work treats for tomorrow – frosted sugar cookies. They are so easy to make. They are soft and sweet and have the perfect sugar cookie frosting. I did not cut them out. Just scooped out some dough and flattened to about 1/2 inch.

Remember to scoop your flour from your flour bag into your measuring cup so you get the right amount. And, preheat your oven to 375 degrees for 20 minutes so it cycles to the right temp.

No need to be fancy with the frosting
  • Ingredients
  • 1 cup butter, softened
  • 3/4 cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 2 1/2 cups flour
  • 1 tsp baking powder

Directions – preheat oven to 375 degrees for 20 minutes. Line a cookie sheet with parchment paper or nonstick baking liners. cream butter and sugar. Add egg and vanilla. Fold in dry ingredients. Scoop out 1/4 cups of dough, roll into balls and flatten to 1/2 inch thick. Bake 8 to 10 minutes (there will be no golden spots on top). Cool completely.

  • 2 tbs butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla
  • 2- 4 tbs milk or water

Directions – blend butter and powdered sugar. Add vanilla and enough milk or water to get desired consistency. Frost cooled cookies. Store in covered container.

Week 8 victory Monday cookies

A chocolate version of the Franks! (Triple Chip chocolate cookies)

How is it week 8 already? Wow! I found today’s Bills game far too stressful. At least we got a win. And 5-2 is a solid record. To celebrate, I made a chocolate version of the triple chip cookies. And I slathered some melted milk chocolate on the bottom because,why not? Also, we set out a bowl of candy for Halloween, on a table. Rob keeps replenishing it and so far, no kid has dumped the bowl in his bag! And we only have 35 minutes left!

Remember to scoop your flour from your flour bag into your measuring cup. Do the same for the baking cocoa. And preheat your oven to 350 degrees for 20 minutes so it gets to the right temperature.

  • Ingredients
  • 1 cup butter, softened
  • 1 1\2 cups sugar
  • 1/2 cup brown sugar
  • 1 tsp vanilla
  • 2 eggs
  • 2 cups flour
  • 3/4 cup baking cocoa
  • 11/2 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1/2 cup chocolate chips
  • 1/2 cup white chips
  • 1/2 cup milk chocolate chips

Directions – cream butter, sugar and brown sugar. Add eggs and vanilla. Fold in dry ingredients. Mix in chips. Scoop out 1/4 cuos of dough. Chill at least an hour. Preheat oven to 350 degrees for 20 minutes. Line a cookie sheet with nonstick baking liners. Stagger cookies on the sheet. Bake 12 to 14 minutes. Cool completely. In a microwave safe bowl, combine 2 cups milk chocolate chips and 2 tsp of vegetable oil. Microwave in 30 second increments until you can stir smooth. Slather on bottom of cookies. Ler set. Store in covered container.

Is this necessary? Probably not, but who cares?

My president taste tester, Rob, asked for some chocolate chip cookies, so I made a small batch.  Our pup, Gracie, has quite a sweet tooth so she patiently waited for them to cool down.  Rob gave her some non chocolate pieces, so that made her happy.  Now she is enjoying a chilly fall night on the deck.  Life is good.

  • Ingredients
  • 1/2 cup butter, grated with a cheese grater
  • 1 /3 cup brown sugar
  • 1/3 cup sugar
  • 1 egg
  • 1 yolk
  • 1 tsp vanilla
  • 3/4 cup bread flour
  • 3/4 cup flour
  • 1 tsp baking powder
  • 3/4 cup mini chocolate chips
  • 1/4 cup chocolate chips

Directions – preheat oven to 375 degrees for 20 minutes. In a bowl, mix butter,sugar and brown sugar well. Add egg, yolk and vanilla. Blend in dry ingredients. Mix in chips. Scoop out 1/4 cups of dough. Freeze 20 minutes. Line a cookie sheet with nonstick baking liners. Stagger cookies. Bake 15 to 18 minutes (lightly brownes on bottom) cool completely. Store in covered container.

Chocolate chip sugar cookies stuffed with Oreos

An Oreo stuffed inside a chocolate chip sugar cookie

I have an abundance of Oreos so in an attempt to use them up, I decided to stuff them inside a chocolate chip sugar cookie. I used a Betty Crocker sugar cookie mix and added some chocolate chips. Then I stuffed an Oreo inside. And as soon as I took them out of the oven, I sprinkled them with powdered sugar. Feel free to use any cookie recipe (or mix).

  • Ingredients
  • 1 sugar cookie mix
  • 1/2 cup butter, softened
  • 1 tbs water
  • 1 egg
  • 1 cup chocolate chips
  • Oreos

Directions – preheat oven to 375 degrees for 20 minutes. In a bowl, combine cookie mix, butter, water and egg. Mix well. Add chips. Scoop out 3 tbs of dough. Evenly form around an Oreo. Stagger on a cookie sheet lined with nonstick baking liners. Bake 10 to 14 minutes, until light golden on bottom. Immediately sprinkle with powdered sugar after removing from oven. Cool completely. Store in covered container.

My president of taste testing, Rob, put in a request for these – brown butter blondies with chocolate chips. Super simple and are ready in no time. Browning butter is a very simple process. Just melt the butter in a saucepan, stirring occasionally until you see little brown bits in it.

Couple of reminders – Make sure you preheat your oven for 20 minutes before baking. Also spoon your flour from your flour container into your measuring cup.

  • Ingredients
  • 1/2 cup butter, browned and cooled for 10 minutes
  • 1 cup brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 cup flour
  • 1/2 tsp salt
  • 1 cup chocolate chips

Directions – preheat oven to 350 degrees for 20 minutes. Line an 8×8 or 9×9 pan with tin foil and spray with baking spray. In a bowl, combine brown butter, brown sugar, egg and vanilla. Fold in flour and salt. Blend in chips. Spread evenly into pan. Bake 20 minutes (no longer). Cool completely. Store in covered container.

Chocolate Chip cookies recipe # 25

Extra chips in this cookie!

These are one of my many, many chocolate chip cookie recipes. Rob requests only two things – chocolate chip cookies and brownies. I don’t like making the same thing over and over, so I have a collection of various recipes for both. That way there is a little variety for me in my baking. These cookies came out a little gushier than normal because we are having issues with our oven. It is less than 4 years old. I was pleasantly surprised that we got the warranty with it. So we are getting it fixed for free. We are waiting on some parts to come in and the tech will be back to fix it.

Some tips – scoop your flour from your flour container into measuring cup. Also, preheat your oven for 20 minutes before baking to allow it to cycle for the right temp.

  • Ingredients
  • 1 cup butter, cold (I used a cheese shredder to shred it)
  • 1 cup brown sugar
  • 1/2 cup sugar
  • 2 eggs
  • 1 tbs vanilla
  • 2 cups bread flour
  • 1 cup cake flour
  • 1 tbs cornstarch
  • 1 tsp baking soda
  • 2 cups chocolate chips

Directions – cream butter, brown sugar and sugar. Add eggs and vanilla. Blend in dry ingredients. Fold in 1 1/2 cups chocolate chips. Divide dough into 12 equal mounds of dough. Gently press remaining 1/2 cup chocolate chips into tops of each mound. Chill a few hours. Preheat oven to 400 degrees for 20 minutes. Line a cookie sheet with parchment paper or nonstick baking liners. Stagger cookies on prepared sheets. Bake 12 to 16 minutes, depending on how gushy you want your cookies. Cool completley. Store ina covered container. I also chilled them a little too in the fridge.

Pumpkin cake/bars with vanilla frosting

Pumpkin cake/bars

Fall is here, so I decided to make something pumpkin flavored. These are somewhere between a cake and a bar cookie. I went with a vanilla frosting, but a cream cheese or brown butter one would work well too.

A little extra powdered sugar on top for extra sweetness
  • Ingredients
  • 1 cup oil
  • 15 oz can of pure pumpkin
  • 1 3/4 cup sugar
  • 4 eggs
  • 2 cups flour
  • 2 tsp baking soda
  • 1 tbs cinnamon
  • 1 tsp nutmeg
  • 1 tsp pumpkin pie spice

Directions – preheat oven to 350 degrees for 20 minutes so your oven gets to the right temperature for baking. Spray a 10×15 pan with baking spray. In a bowl, combine pumpkin, sugar, oil and eggs. Blend in dry ingredients. Spread into prepared pan. Bake 18 to 22 minutes or until a toothpick inserted in the middle comes out with a few crumbs.

  • Frosting
  • 1/2 cup butter, melted
  • 2 to 3 cups powdered sugar
  • 2 to 3 tbs milk
  • 1 tsp vanilla

Combine. Frost cake while still warm. Cool completely. Cut into pieces and store in covered container.

Whoopie pies!!!!

I am not sure if the melted milk chocolate on top is necessary

I needed to bake something for our block party tomorrow, so I thought whoopie pies would be good. They gave me a chance to use whoopie pie pans (one of many baking items I have that are for one thing only, like my twinkie pan and churros maker). These are easy – they use a cake mix and a few other ingredients. The filling is marshmallow fluff based and I topped them with melted milk chocolate because… Well, why not?

Remember to preheat your oven to 350 degrees for 20 minutes so that it heats up properly (a tip from an LG tech).

Whoopie pie pan!
  • Ingredients
  • 1 chocolate cake mix
  • 1/2 cup baking cocoa
  • 1/2 cup vegetable oil
  • 1/2 cup water
  • 3 eggs
  • 1 tbs vanilla
Two might be a bit much to eat in one sitting!

Directions – preheat oven to 350 degrees for 20 minutes. I used a whoopie pie pan that I sprayed with baking spray. You can also line a cookie sheet with parchment paper or nonstick baking liners. In a bowl, combine cake mix and baking powder. Add oil, water,eggs and vanilla. Batter will be on the thick side. Scoop out 2 tbs dough and spread to edge of each whoopie pie cavity… Or scoop out 2 tbs and place on parchment paper and spread into a 3 inch circle. Bake 8 to 10 minutes, or until a toothpick inserted in the center basically comes out with a few crumbs. Cool completely.

  • Frosting
  • 1 cup butter softened
  • 1 1/3 cups marshmallow fluff
  • 1 cup powdered sugar
  • 1 tsp vanilla
  • Water

Directions – combine butter and fluff. Blend in powdered sugar and vanilla. You can add water, a tsp at a time, if you want to thin it out a little. Place a dollop between two whoopie pies. Store in covered contaner.

What happened to my puffy cookies?

These cookies were supposed to be puffy mounds of goodness for my goddaughter’s 13th birthday. Instead, they ended up flat as pancakes, but extremely large. So I brought them to work and made Sara something more acceptable looking! I blame these on the heat and humidity. They were well-received at work today. ☺

Note- you don’t have to use cake flour, you can entirely use regular flour of you want. Also preheat your oven to 410 degrees for 20 minutes before baking so it heats up to the right amount.
