Brownies stuffed with a whole lotta stuff

These brownies are a creation of my hubby, who discovered “junk bars” at a local cafe. They seemed to be a layer of brownies, topped with magic cookie bars, oreos, marshmallows and then another layer of brownies. So I went to work and tried to make the same thing.

These are very thick. They took 45 to 50 minutes to bake.

A reminder to scoop your flour from your flour bag into your measuring cup so you get the right amount. Also preheat your oven for 20 minutes before baking so it cycles to the right temp.

  • Brownies ingredients
  • 1 cup butter, melted
  • 1 cup baking cocoa
  • 2 cups sugar
  • 3 eggs
  • 1 tsp vanilla
  • 1/2 tsp salt
  • 1 1/4 cups flour

Directions – line a 9×13 pan with tin foil and spray with baking spray. in a bowl, combine melted butter, baking cocoa and sugar. Mix in eggs, one at a time, then vanilla. Blend in flour and salt. Spread half of mixture evenly in bottom of prepared pan.

  • Magic cookie bar layer
  • 1 cup butter, softened
  • 1 cup brown sugar
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 1/2 cups flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup graham cracker crumbs
  • 3/4 cup coconut
  • 1 cup chocolate chips
  • Pieces of oreos
  • Marshmallows

Directions – preheat oven to 350 degrees. cream butter, sugar and brown sugar. Add eggs and vanilla. Blend in dry ingredients. Add graham cracker crumbs. Blend in chips and coconut. Spread evenly over brownie dough.

Top with pieces of marshmallows and oreos.

Then drop blobs of remaining brownie batter on top.

Bake at 350 degrees for 45 to 50 minutes (toothpick inserted in center comes out with moist crumbs) cool and top with melted chocolate.

Store in covered container.

Triple Vanilla Brownies

These were made in obscene humidity, and frosted while they were still warm. I also doubled the following recipe. I do not recommend doing any of those 3 things if you bake them…

I almost did not bring these in bc i felt they were not presentable. However. they are a big hit at work today.

  • Brownies
  • 1/2 cup butter
  • 1 bag of white chocolate chip (10 oz)
  • 3/4 cup sugar
  • 3 eggs
  • 1 tsp vanilla
  • 1 1/4 cups flour (scooped from your flour bag into your measuring cup so you get the correct amount)
  • 1/2 tsp salt
  • 1 cup milk chocolate chips

Directions – preheat oven to 350 degrees for 20 minutes. Line a 9×13 pan with parchment paper and spray with baking spray. In a microwave safe bowl, melt white chocolate chips and butter in 45 second increments until you can stir mixture melted. Blend in sugar and vanilla. Mix in eggs one at a time. Fold in flour and salt. Stir in milk chocolate chips. Evenly spread into prepared pan. Bake 15 to 23 minutes until a toothpick is inserted in center basically comes put clean (you will see golden patches on top). Cool completely.

  • Frosting ingredients
  • 4 tbs butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla
  • 2 tbs hot water

Blend together. You can add more water or powdered sugar to get the consistency you want. Frost brownies. Store in covered container.

Smores brownies

A little story about these brownies. Rob decided to go to a local bakery (!) And buy a treat. He got this smores brownie thing that he said was not good. So he asked if I could make him some. These are pretty easy. I made homemade brownies, but you can certainly use a boxed mix for your brownies base.

These were hard to cut the way i made them. (Baked the brownies, immediately sprinkled with chocolate chips, graham cracker pieces, and cut up marshmallows). I think next time, I would cut the cooled brownies individually, then top them with melted chocolate, crushed graham crackers, and toasted marshmallows.

Remember to scoop your flour from your flour bag into your measuring cup so you get the right amount (do the same for your baking cocoa). Also preheat your oven to 350 degrees for 20 minutes before baking

  • Ingredients
  • 10 tbs butter, melted
  • 1 cup sugar
  • 1/3 cup brown sugar
  • 3/4 cup baking cocoa
  • 2 eggs
  • 1 egg yolk
  • 2 tsp vanilla
  • 2/3 cup flour
  • 1 tbs cornstarch
  • 1/2 tsp salt
  • Marshmallows, mini or cut into pieces
  • Graham crackers broken into pieces
  • 1 cup chocolate chips

Directions – line an 8×8 or 9×9 pan with parchment paper and spray with baking spray. In a bowl, combine melted butter, sugar, brown sugar and baking cocoa. Add eggs, yolk and vanilla. Blend in flour, cornstarch and salt. Mixture will be thick. Spread in prepared pan. Bake at 350 degrees for 20 to 25 minutes (until toothpick inserted on center comes out with a few moist crumbs). You can do the topping one of two ways

1) sprinkle hot brownies with 1 cup milk chocolate chips, 4 graham crackers broken into pieces and 2 cups mini marshmallows. Broil on low 3 to 5 minutes. Cool completely. Cut and store in covered container.

2) cool brownies completely. In a pan sprayed with pam, toast marshmallows by broiling on low for 5 minutes Cut into pieces. Top with melted chocolate chips. Crushed graham crackers and toasted marshmallows. Store in covered container.

Brownie cupcakes with fudge frosting

I got an unusual request from Rob. Chocolate cupcakes topped with chocolate frosting and coconut. Normally, coconut is not his bag.. but luckily I had coconut in my stash of baking items (it is rare I am missing anything). So I made a small batch (5) of jumbo brownie cupcakes, frosted them and sprinkled them with coconut. Not sure what to do with the rest of the coconut. Of course, you do not have to use coconut. And you can use regular size cupcake pans and liners, but they will cook in less time.

All that chocolate goodness!
  • Ingredients
  • 1 stick butter
  • 4 oz unsweetened chocolate (I used a bar of baker’s and broke it into pieces
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 cup flour

Directions – preheat oven to 350 degrees for 20 minutes. Line a jumbo cupcake pan with jumbo cupcake liners. in a microwave safe bowl, melt butter and unsweetened chocolate in 40 second increments until you can stir smooth. Let cool 5 to 10 minutes. Add sugar and brown sugar. Mix in eggs and vanilla. Add flour and stir until just blended. Spoon 2/3 cup batter into prepared pans for jumbo cupcakes. Spoon 1/3 into regular size cupcakes. Jumbo cupcakes take 18 to 22 minutes to bake. Regular take 15 to 19 minutes. (A toothpick inserted in center comes out with a few crumbs) The middles might seem a little soft, but they will continue to cook in the pan after being removed from oven. I always err of the side of underbaking. Cool completely.

  • Frosting ingredients
  • 1/2 stick butter soft
  • 2 tbs unsweetened baking cocoa
  • 1 1/2 cups powdered sugar
  • 2 tbs milk

Blend butter and baking cocoa. Add powdered sugar. Add milk. You can add more powdered sugar and /or milk to get the consistency you want. Frost cupcakes. Sprinkle with coconut.

Brownie stuffed chocolate chip cookies

Now that’s a cookie!

To celebrate having one of our favorite co-workers on campus this week in Bristol – the one and only Harry Douglas, of “Fitz and Harry” on ESPN Radio, as well as day 2 of the 2023 NFL draft, I present brownie stuffed chocolate chip cookies. I “cheated” and used a mix for the brownies. But honestly, I think brownie mixes are just fine to use and make great brownies, especially when you are pressed for time.

Nothing wrong with using a brownie mix!

Remember to scoop your flour from your flour bag into your measuring cup so you get the correct amount. If you pour directly from the bag to the measuring cup, it gets packed in, and you could end up with dry cookies! I chilled the dough overnight to prevent spreading. Also, preheat the dough for 20 minutes before baking so it gets to the right temp.

  • Ingredients list
  • 1 pan brownies baked and cooled, cut into 2 inch squares
  • 2 1/4 cups flour
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 tsp cornstarch
  • 1/2 cup crisco
  • 3/4 cup brown sugar
  • 3/4 cup sugar
  • 2 tsp vanilla
  • 2 eggs
  • 2 cups chocolate chips

Directions – in a bowl, cream crisco, sugar and brown sugar. Add eggs and vanilla. Blend in dry ingredients. If dough seems a little try, add a tbs or 2 of water. Fold in chips. Scoop out 1/4 cups of dough. Divide in half and slightly flatten.

Place a small brownie square on top.

Top with other half of flattened cookie dough

Seal edges so you can’t see brownie.

Chill dough at least a few hours or overnight. Preheat oven to 350 degrees for 20 minutes before baking. Line a cookie sheet with nonstick baking liners. Stagger cookies on sheet. Bake 13 minutes – there will be light golden patches on top. Don’t bake them too much longer. Even if they are a little doughy, they will firm up. Store in covered container.

I got a request from Rob for brownies and thought these would fit the bill. I was looking for something that baked in 20 minutes or less.

Remember to scoop your flour from your flour bag into your measuring cup so you get the right amount. Also, preheat the oven to 350 degrees for 20 minutes before baking so it cycles to the right temp for baking.

  • Ingredients
  • 10 tbs butter
  • 1 1/4 cups sugar
  • 3/4 cup baking cocoa
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 2 eggs
  • 1/2 cup flour
  • 1 cup chocolate chips

Directions – line an 8×8 pan with tin foil and spray with baking spray. Preheat oven to 350 degrees for 20 minutes before baking. In a microwave safe bowl, microwave butter, sugar, baking cocoa and salt for 30 to 45 seconds. Stir. Mix in vanilla and eggs. Add flour and beat only for 40 strokes. Fold in chips. Spread evenly into prepared pan. Bake 20 minutes (a toothpick inserted in the center of brownies comes out basically clean. Cool completely.

For NFL Super Wildcard weekend, I felt a big time cookie was needed. I saw some marshmallows in my cabinet and thought smores cookies would work. I used a basic chocolate chip cookie dough base. To one half I added cocoa and graham cracker crumbs to the other. And I topped them with marshmallow halves. I suppose I could have just made it all graham cracker or all chocolate for the base, but would they still be a “super” cookie? Probably, but I love to take things up a notch.

Remember to scoop your flour from your flour bag into measuring cup so you get the correct amount. I did not chill this batch and they spread out quite a bit, so next time I will chill them to help prevent that. Also preheat the oven to 350 degrees for 20 minutes before baking so the oven cycles to the right temp.

And one last thing – Go Bills.

  • Ingredients
  • 1 cup butter, softened
  • 1 1/2 cups brown sugar
  • 1/4 cup sugar
  • 2 eggs
  • 2 tsp vanilla
  • 2 1/2 cups flour
  • 1 tsp baking soda
  • 1/2 cup baking cocoa
  • 4 graham cracker sheets, crushed
  • 1/2 cup chocolate chips
  • 12 Large marshmallows, cut in half

These make 12 good size cookies

Directions – cream butter, brown sugar and sugar. Add eggs and vanilla. Blend in flour and baking soda. Divide dough in half. To one half, add baking cocoa and blend well. To the other half, mix in graham cracker crumbs, then chocolate chips. Scoop out 2 tbs of chocolate dough, top with a scoop of 2 tbs graham cracker dough. Chill.

Preheat oven to 350 degrees for 20 minutes. On a cookie sheet lined with parchment paper. Stagger cookies. Bake 10 minutes. Remove and place 2 marshmallow halves on top. Bake 4 more minutes. Cool completely. Store in covered container.

A simple, yet great way to get your chocolate fix. Brownies, yet in cookies form. Plus, they take less time to bake than brownies, 10 minutes, as opposed to 20. Remember to scoop your flour from your flour bag into you measuring cup and preheat your oven for 20 minutes before baking.

  • Ingredients
  • An 18.3 oz brownie mix
  • 1/4 cup flour
  • 2 eggs
  • 5 tbs vegetable oil
  • 2 tbs water
  • 1 cup chocolate chips

Directions – preheat oven to 350 degrees for 20 minutes before baking. Line cookie sheets with parchment paper or nonstick baking liners. In a bowl, combine brownie mix, eggs, oil, and water. Fold in chips. Scoop out 2 tbs of dough and place on baking sheets. Do not put too close together bc they spread a little. Bake 10 minutes. Sprinkle warm cookies with powdered sugar. Cool completely. Store in covered container.

  • Ingredients
  • 1/2 cup butter
  • 1/2 cup dark chocolate chips
  • 2 eggs
  • 1 cup sugar
  • 1/3 cup baking cocoa powder
  • 1/2 cup flour
  • 1/2 cup chocolate chips

Directions – preheat oven to 350 degrees for 20 minutes before baking. Line and 8×8 pan with parchment paper and spray the papered pan. In a microwave safe bowl, heat dark chocolate chips and butter in 30 second increments until you can stir it smooth. Add sugar and eggs. Blend in cocoa and flour. Fold in chocolate chips. Spread into pan. Sprinkle with additional chips. Bake 20 to 25 minutes, or until a toothpick inserted in center comes out with a few moist crumbs. Cool completely (although Rob is never good at that step before eating). Cut and store in covered container.

Brownie stuffed mini M&M cookies (or should it be mini M&M cookies stuffed with brownies?)

Rob requested brownie the other night and ate one. I forgot to bring them into work today, so I thought I should find a way to use them up, so I made cookies with mini M&Ms and mini chocolate chips, and stuffed them with brownies!

Remember to scoop your flour from your flour bag into your measuring cup, cool your dough for a few hours to keep spreading to a minimum, and preheat your oven to 350 degrees for 20 minutes so it cycles to the right temp.

  • Ingredients
  • 1 cup butter, softened
  • 1 cup brown sugar
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 2 2/3 cups flour
  • 1/2 cup instant vanilla pudding mix
  • 1 tsp baking soda
  • 1 cup mini m&ms
  • 1 cup mini chocolate chips

Cream butter,sugar and brown sugar. Add eggs and vanilla. Mix in pudding mix and other dry ingredients. Blend in m&ms and chips.

Scoop out 1/4 cup of dough
Divide dough in half and slightly flatten each half
On one flattened half, place a small brownie square
Top with other flattened half

Seal edges
All ready to be baked

Chill a few hours. Preheat oven to 350 degrees for 20 minutes. On a cookie sheet lined with parchment paper stagger cookies. Bake 12 to 14 minutes. Cool completely. Store in covered ccontainer.
