I got a request from Rob for brownies and thought these would fit the bill. I was looking for something that baked in 20 minutes or less.
Remember to scoop your flour from your flour bag into your measuring cup so you get the right amount. Also, preheat the oven to 350 degrees for 20 minutes before baking so it cycles to the right temp for baking.
Ingredients
10 tbs butter
1 1/4 cups sugar
3/4 cup baking cocoa
1/2 tsp salt
1 tsp vanilla
2 eggs
1/2 cup flour
1 cup chocolate chips
Directions – line an 8×8 pan with tin foil and spray with baking spray. Preheat oven to 350 degrees for 20 minutes before baking. In a microwave safe bowl, microwave butter, sugar, baking cocoa and salt for 30 to 45 seconds. Stir. Mix in vanilla and eggs. Add flour and beat only for 40 strokes. Fold in chips. Spread evenly into prepared pan. Bake 20 minutes (a toothpick inserted in the center of brownies comes out basically clean. Cool completely.

For NFL Super Wildcard weekend, I felt a big time cookie was needed. I saw some marshmallows in my cabinet and thought smores cookies would work. I used a basic chocolate chip cookie dough base. To one half I added cocoa and graham cracker crumbs to the other. And I topped them with marshmallow halves. I suppose I could have just made it all graham cracker or all chocolate for the base, but would they still be a “super” cookie? Probably, but I love to take things up a notch.
Remember to scoop your flour from your flour bag into measuring cup so you get the correct amount. I did not chill this batch and they spread out quite a bit, so next time I will chill them to help prevent that. Also preheat the oven to 350 degrees for 20 minutes before baking so the oven cycles to the right temp.

2 1/2 cups flour

4 graham cracker sheets, crushed
1/2 cup chocolate chips
12 Large marshmallows, cut in half
These make 12 good size cookies
Directions – cream butter, brown sugar and sugar. Add eggs and vanilla. Blend in flour and baking soda. Divide dough in half. To one half, add baking cocoa and blend well. To the other half, mix in graham cracker crumbs, then chocolate chips. Scoop out 2 tbs of chocolate dough, top with a scoop of 2 tbs graham cracker dough. Chill.
Preheat oven to 350 degrees for 20 minutes. On a cookie sheet lined with parchment paper. Stagger cookies. Bake 10 minutes. Remove and place 2 marshmallow halves on top. Bake 4 more minutes. Cool completely. Store in covered container.

1/4 cup flour
2 eggs
5 tbs vegetable oil
2 tbs water
1 cup chocolate chips
Directions – preheat oven to 350 degrees for 20 minutes before baking. Line cookie sheets with parchment paper or nonstick baking liners. In a bowl, combine brownie mix, eggs, oil, and water. Fold in chips. Scoop out 2 tbs of dough and place on baking sheets. Do not put too close together bc they spread a little. Bake 10 minutes. Sprinkle warm cookies with powdered sugar. Cool completely. Store in covered container.

1/2 cup dark chocolate chips

1 cup sugar
1/3 cup baking cocoa powder
1/2 cup flour
1/2 cup chocolate chips
Directions – preheat oven to 350 degrees for 20 minutes before baking. Line and 8×8 pan with parchment paper and spray the papered pan. In a microwave safe bowl, heat dark chocolate chips and butter in 30 second increments until you can stir it smooth. Add sugar and eggs. Blend in cocoa and flour. Fold in chocolate chips. Spread into pan. Sprinkle with additional chips. Bake 20 to 25 minutes, or until a toothpick inserted in center comes out with a few moist crumbs. Cool completely (although Rob is never good at that step before eating). Cut and store in covered container.
Rob requested brownie the other night and ate one. I forgot to bring them into work today, so I thought I should find a way to use them up, so I made cookies with mini M&Ms and mini chocolate chips, and stuffed them with brownies!

Chill a few hours. Preheat oven to 350 degrees for 20 minutes. On a cookie sheet lined with parchment paper stagger cookies. Bake 12 to 14 minutes. Cool completely. Store in covered ccontainer.
I have made many batches of chocolate chip cookies stuffed with brownies, so I reversed it this time and stuffed a tollhouse bar in a brownie cookie. I didn’t chill the dough, so they came out a little flatter than I prefer, but I think my coworkers will still like them. You can use any chocolate chip cookie bar recipe (homemade or a mix) you want. I recommend my Congo bar recipe on my blog.
Ingredients
1 batch congo/tollhouse bars, baked, completely cooled and cut into small squares.
1 brownie mix
1/4 cup flour
1/4 cup vegetable oil
2 eggs
Water (if you feel dough is too dry, add a tbs or 2)
Directions – combine brownie mix, flour, oil and eggs. Add water if you feel dough is top dry. Scoop out 2 tbs of dough and divide in half. Slightly flatten each half. Now, we assemble!

Chocolate chip cookie dough ingredients
1/2 cup butter, cold, shredded with a cheese grater
1/2 cup brown sugar
1/4 cup sugar
1 egg
1 yolk
1 tsp vanilla
3/4 cup cake flour
1 1/4 cups flour
1 tbs cornstarch
1/2 tsp baking powder
1/2 tsp baking soda
2 cups chocolate chips
Directions – cream butter, sugar and brown sugar. Add egg, yolk and vanilla. Blend in dry ingredients. Fold in chips.
Cookie assembly – using a 1 1/2 cookie scoop (or measuring spoons), scoop out your dough. Layer a scoop of chocolate dough, a scoop of chocolate chip cookie dough, another scoop of chocolate dough, and another scoop of chocolate chip dough (6 tbs of dough, total). Roll into a ball to marble the doughs. Chill a few hours or over night.
This is how I stagger my cookies
When ready to bake – preheat oven to 400 degrees for 20 minutes. Line a cookie sheet with nonstick baking liners or parchment paper, stagger cookies on a sheet. I fit 7 to a sheet. They do spread a little. Bake 15 to 18 minutes. Cool completely. Store in covered container.

Directions – preheat oven to 375 degrees for 20 minutes. Line a cookie sheet with nonstick baking liners. In a bowl, cream butter, crisco, and sugar. Add egg and vanilla. Fold in dry ingredients. Scoop out 2 tbs of dough. Divide in half. Flatten one half. Place a brownie square on top. Flatten other half and place on top of brownie square. Completely cover brownie with dough. Place cookies on prepared cookie sheet. I fit 8 on a sheet. Bake 12 to 15 minutes. (Lightly golden on bottom) cool completely. Store in covered container.

My husband requested a funni bone treat today, which is a chocolate cake, with a peanut butter filling and a chocolate ganache on top. I asked if he wanted a brownie or chocolate cake base and could not decide, so I combined them! I used a chocolate cake mix, a brownie mix, eggs, water and oil. I used a cookie sheet 18×12. A warning – this makes a large sheet of brownie cake!
Brownie cake ingredients
1 chocolate cake mix
1 brownie mix
4 eggs, beaten
1 cup vegetable oil
1 1/4 cups water
Directions – preheat oven to 350 degrees for 20 minutes before baking. Line an 18×12 cookie sheer with parchment paper. In a bowl, combine cake mix and brownie mix. Blend in oil and water. Fold in eggs. Spread into prepared pan. Bake 16 to 20 minutes, until a toothpick inserted in the center comes out with a few crumbs. Cool completely. Cut into rectangles .
Peanut butter fudge filling
1 stick butter
3/4 cup sugar
1/3 cup evaporated milk
1 bag peanut butter chips
1 cup powdered sugar
Directions – over medium-low heat, melt butter, sugar and evaporated milk, stirring occasionally. Bring to a boil and let boil 1 minute. Add chips and stir until melted. Remove from heat. Add powdered sugar. Set aside to firm up.
Ganache ingredients
1 cup heavy cream
1 1/2 cups chocolate chips
1 1/2 cups milk chocolate chips
Directions – in a microwave she bowl, microwave cream for 90 seconds. Add chips, swirling cream to cover then. Lwt set 5 minutes. Stir smooth.

We spent this snowy Saturday shovelling, letting Gracie in and out approximately one million times, and watching hockey. Rob requested hostess cupcakes,so I did a little tweak – hot cocoa brownies, with hostess filling, chocolate ganache and a squiggle. The squiggle is never my forte. Blend in dry ingredients just until combined. Fold in chips. Bake 30 to 35 minutes, until a toothpick inserted in center comes out with a few crumbs. Cool completely.

1/4 cup butter, softened
1 cup marshmallow fluff
2 cups powdered sugar
1 tsp vanilla
Milk
Directions – in a bowl, blend butter and fluff well. Add vanilla. Mix in powdered sugar,slowly. Add milk, a tsp at a time, to get the consistency you want. Spread over cooled brownies
Ganache ingredients
1/2 cup heavy cream
1 1/2 cups chocolate chips
Directions – place chips in a bowl. In a saucepan, heat heavy cream just to a boil. Pour over chips. Let sit 5 minutes. Stir smooth. (If you need to, microwave mixture for 20 seconds and that should allow you to stir it smooth). Spread over fluff filling
Squiggle ingredients
1/4 cup butter softened
1 cup powdered sugar
1 tsp vanilla
1-2 tsp milk
Directions – blend together well. Scoop into a plastic sandwich bag and cut out a corner. Now squiggle on top of chocolate layer! If you can do a squiggle, more power to you. My abilities only allow a blob. Store in covered container.
