Very puffy triple chip cookies

As we enjoy another night of Stanley Cup playoff hockey, I decided to make some chocolate chip cookies. These are made with browned butter and 2 oz of cream cheese. The cream cheese helped them stay thick and they did not spread out at all. You can not taste the cream cheese at all! They stayed nice and puffy and are loaded with 3 kinds of chocolate chips.

A few notes – browned butter is super easy. Place the butter in a sauce pan, cook over low heat . A few minutes after it completely melts, brown specks will appear. Turn off the pan and pour butter in bowl. Let it cool for 30 minutes. Spoon your flour from your flour bag into your container so you get the right amount. And preheat your oven to 350 degrees for 20 minutes before baking so your oven cycles to the right temp.

1/2 cup butter

2 oz cream cheese (I used low fat)

1/2 cup sugar

1/2 cup brown sugar

1 egg

1 yolk

2 tsp vanilla

2 1/4 cup flour (scooped from your flour bag into your measuring cup)

1 tbs cornstarch

1/2 tsp salt

1/2 tsp baking soda

2/3 cup white chocolate chips

2/3 cup milk chocolate chips

2/3 cup semisweet chocolate chips

3 kinds of chips!

Directions – place butter in a pan, cook over low-medium heat until there are small brown specks. Cool in a bowl for a half hour. (Otherwise, the chips may melt and you will have marble cookies). Preheat oven to 350 degrees for 20 minutes before baking. In a bowl, combine cooled butter, cream cheese, brown sugar and sugar. Add egg, yolk and vanilla. Blend in dry ingredients (you may need to use your hands and mix them like meatballs). Mix in chips. Scoop our 1/4 cups dough. Line a cookie sheet with nonstick baking liners. Stagger cookies on the sheet. Bake 10 to 12 minutes (no longer). Cool completely.

Milk chocolate chip mini m&m chocolate cookies

These are not just large cookies, they are not extra large. I feel they are 2XL. They are basically a cup of cookie dough bc they were the 3rd thing I baked today, after brownies and milk chocolate chip cookies. I made them big and cooked them at a higher temp to finally finish baking.

Remember to spoon your flour from your flour bag into your measuring cup so you get the right amount. I chilled these overnight. They did not spread out at all,so you could flatten the mounds before you chill them. Also preheat your oven to 410 degrees for 20 minutes before baking so it cycles to the eight temp.

  • 1 cup butter, softened
  • 1 cup brown sugar
  • 1/4 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 cup baking cocoa
  • 3 1/4 cups flour
  • 1 tsp cornstarch
  • 1 tsp baking soda
  • 1 cup milk chocolate chips
  • 1 cup mini m&ms

Directions – cream butter, brown sugar and sugar. Add eggs and vanilla. Blend in dry ingredients. Mix in chips and m&ms. Divide into 8 equal pieces. Flatten to however thick you want the cookies. Chill a few hours or overnight. Line a cookie sheet with nonstick baking liners. Preheat oven to 410 degrees for 20 minutes. Stagger cookies on sheet. Bake for 10 minutes (no longer because you are baking at a higher temp than usual for cookies)

These sugar cookies are awesome.. so easy to make and so soft. And no chilling of the dough is necessary. These cookies are my all-time favorite to make, bringing back memories of making cutouts with my mom. I am terrible with decorating, so these jack o lanterns are one of the few things people can decipher. I started out frosting some and decorating with mini yellow and green m&ms. That was too time-consuming, so I sprinkled a handful on top of some other cookies instead. Then, to speed up the process, I made sandwich cookies.

Remember to scoop your flour from your flour bag into your measuring cup so you get the right amount. And, preheat your oven for 20 minutes before baking so the oven cycles to the right temp.

A handful of m&ms
  • Ingredients
  • 1 1/2 cups crisco
  • 1 1/3 cups sugar
  • 4 eggs
  • 1 tsp vanilla
  • 4 cups flour
  • 1 tsp baking powder

Preheat oven to 350 degrees for 20 minutes before baking. Line a cookie sheet with non-stick baking liners. In a large mixing bowl, cream crisco and sugar 3 to 4 minutes. Blend in eggs and vanilla. Slowly blend in dry ingredients. Lightly flour your countertop. Roll out dough to desired thickness (I like mine thick), and cut. Place on prepared cookie sheer. Bake 8 or 9 minutes. (Cookies will be light, but no doughy. Do not overcook). Cool completley.

  • Frosting ingredients
  • 3 tbs melted butter
  • 4 cups powdered sugar
  • Milk (enough to get the consistency of frosting you want)
  • 1 tsp vanilla

Blend together. Frost or fill cookies. Store in covered container.

Football Friday # 3 – frosted sugar cookies

Some are specially decorated with red and blue m&ms. Go Bills!

I thought frosted sugar cookies would be a great way to celebrate this third Friday of the NFL season. These use 1/2 tsp of cream of tartar. If you don’t have any, you can substitute 3/4 tsp baking powder. I didn’t chill the dough and they came out fine.

If you don’t want to do the spray glass in Pam, dip in sugar and slightly flatten cookies with sugar dipped glass, you can just slightly flatten them.

Remember to scoop your flour from your flour bag into your measuring cup and preheat your oven to 350 degrees for 20 minutes before baking.

  • Cookie ingredients
  • 1 cup butter, softened
  • 3/4 cup oil
  • 1 1/2 cups sugar
  • 3/4 cup powdered sugar
  • 2 eggs
  • 2 tbs water
  • 5 1/2 cups flour
  • 1/2 tsp baking soda
  • 1/2 tsp cream of tartar (or 3/4 tsp baking powder)

Directions – preheat oven to 350 degrees for 20 minutes before baking. Line a cookie sheet with parchment paper or baking liners. In a bowl, cream butter, oil, sugar, powdered sugar, eggs and water. Add dry ingredients. Scoop out 1/4 cups of dough and roll into balls. Stagger on prepared cookie sheets. Spray the bottom of a drinking glass with Pam and dip bottom of glass in sugar. Slightly flatten each cookie on sheet (you will have to repeat spraying of bottom of glass and dipping in sugar process). Bake at 350 degrees for 12 minutes (no longer). Cool completely.

  • 4 1/2 cups powdered sugar
  • 1 1/2 cups butter, softened
  • 3 tbs milk
  • 2 tsp vanilla

Directions – blend butter and powdered sugar. Add milk and vanilla. Frost cookies. Place in covered container and store in fridge.

Banana chocolate chip bars with brown butter frosting

I am filling in tomorrow morning at work and need a treat to bring in for my people. These are dense banana bars with chocolate chips and brown butter frosting. They are also made with melted white chocolate chips. I have done different flavored treat using melted white chips, so this time ibtried banana. I arrive at 6 am tomorrow morning, so breakfast will be served then.:)

Reminders – preheat your oven to 350 degrees for 20 minutes before baking So it cycles to the right temp. Scoop your flour from your flour bag into your measuring cup to get the right amount. If you pour the flour directly into the measuring cup, it gets packed in and can dry out the bars.

Bananas = fruit= breakfast
  • Ingredients
  • 2 sticks of butter
  • 1 1/2 cups white chocolate chips
  • 1 cup sugar
  • 2 eggs
  • 1 tbs vanilla
  • 2 cups mashed bananas
  • 3 1/2 cups flour
  • 1 -2 cups of chocolate chips

Directions – preheat oven to 350 degrees for 20 minutes. Line a 9×13 pan with tin foil and spray with baking spray. In a microwave safe bowl,melt white chips and butter in 45 second increments until you can stir smooth. Stir in sugar. Mix in eggs. Stir in bananas. Blend in flour. Fold in chocolate chips. Spread evenly into foiled pan. Bake 22 to 27 minutes or until a toothpick inserted in center basically comes out clean. The edges will be a light golden brown. While bars are warm, make the frosting.

  • Frosting ingredients
  • 1 stick butter
  • 2 plus cups powdered sugar
  • 1/4 cup heavy cream
  • 1 tsp vanilla

Brown butter over low-medium heat (there will be little brown specs at the bottom. ) Remove from heat and pour into bowl. Cool 5 minutes. Add powdered sugar. Mix in cream and vanilla. Spread over warm bars. Cool completely and cut. Store in covered container.

These brownies are right up Rob’s alley! These are very thick and extra chocolatey because they are filled with chocolate chips, sprinkled with chocolate chips and powdered sugar on top! I think my hubby was quite pleased with how his request turned out! Of course, he only eats one, so the rest come to work with me!

  • Ingredients
  • 3/4 cup butter, melted
  • 2/3 cup baking cocoa
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 3 eggs
  • 1 tsp chocolate extract
  • 1 cup flour
  • Dash salt
  • 1 cup chocolate chips

Directions – preheat oven to 350 for 20 minutes. Line and 8×8 pan with tin foil and spray with baking spray. Combine butter and cocoa. Add eggs and extract. Blend in sugar, brown sugar. Add flour and salt. Blend in chips. Mixture will be thick. Spread into prepared pan. Bake 20 to 25 minutes, until a toothpick inserted in center comes out with a few moist crumbs. Sprinkle warm brownies with extra chocolate chips and gently press down into brownies. Then Sprinkle with powdered sugar. Store in covered container.

Kluber Chip Cookies

I needed another name for yet another chocolate chip cookie and Corey Kluber of the Yankees had a no hitter this week, so I am naming these in his honor. I know a lot of people have complained about the amount of no hitters, but I appreciate them and think they’re great. Hence, the cookies!

These are made with bread flour, so they are a very thick cookie. I also used 3 kinds of chips – semisweet, milk chocolate and white chocolate. Remember to spoon your flour from you container into your measuring cup to get the correct amount, and preheat your oven for 20 minutes before baking so you get the right temp.

Triple chip gooey goodness!
  • Ingredients
  • 1/2 cup butter, softened
  • 1/2 cup Crisco
  • 3/4 cup brown sugar
  • 1/2 cup sugar
  • 1 tsp vanilla
  • 3 cups bread flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tbs cornstarch
  • 1/2 tsp salt
  • 2/3 cup semisweer chocolate chips
  • 2/3 cup milk chocolate chips
  • 2/3 cup white chips

Directions – preheat oven to 375cream butter, crisco, sugar and brown sugar. Add eggs and vanilla. Blend in dry ingredients. Fold in chips. Divide into 12 scoops of dough. Line a cookie sheet with nonstick baking liners or parchment paper. Stagger cookies on sheet. Bake 12 to 16 minutes (light golden patches on top and lightly golden on the bottom). Cool completely. Store in covered container.
