Week 4 victory treats – Cookies and cream cookies stuffed with brownies

Whew!  That was a very stressful Bills win today!  But a win is a win and worthy of victory treats!

I feel like I haven’t made stuffed cookies in a while, so I decided to whip some up.  These are a cookies and cream cookies, with crushed oreos and milk chocolate chips stuffed with brownies.

You can use your favorite brownie recipe or a mix for these.  After they are completely cooled, I recommend cutting them in squares and putting them in the fridge.

When baking the cookies – remember to scoop your flour from your flour bag into your measuring cup so you get the right amount.   Also, after assembling the cookie dough stuffed with a brownie, chill the doughs a few hours.  And, preheat your oven before baking.

Hot fudge filled chocolate cookies

Remember to scoop your flour from your flour bag into your measuring cup so you get the right amount.  freeze the individual  doughs for a few hours to keep the cookies puffy.  And preheat your oven before baking.

  • Ingredients list
  • 1 cup butter, softened
  • 3/4 cup brown sugar
  • 1/2 cup sugar

  • Hot fudge

Directions – in a bowl, cream butter, sugar and brown sugar.  Mix in eggs.  Blend in dry ingredients.  Fold in crushed oreos and pop tarts.  Mix well.  Scoop out 1/4 cups of dough.  Make an indentation in the center, scoop a tsp of hot fudge in center. Crushed oreo cookies stuffed with Reese’s eggs

I know it is June 1st, but I still have a boatload of Reese eggs (that’s what I get for buying the big bag from BJ’s).

They are good for a while, but thought i would use some up by stuffing them in crushed oreo chocolate cookies.

I left a few plain without the Reese’s eggs and covered them in m&ms, for the non peanut butter lovers at work.

Remember to scoop your flour from your flour bag into your measuring cup so you get the right amount.   I recommend chilling the individual doughs for at least a few hours.  And, preheat your oven before baking.

  • Ingredients list
  • 1 1/2 cups crisco
  • 3/4 cup sugar
  • 1 1/2 cups firmly packed brown sugar
  • 2 eggs
  • 1 tbs vanilla
  • 1 cup unsweetened baking cocoa
  • 3 cups flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 20 oreos, finely crushed in a food processor
  • Reese’s eggs, removed from wrapper

Directions- in a bowl,  cream crisco, brown sugar and sugar.  Add eggs and vanilla.  Mix in dry ingredients then blend in oreos.  Scoop out 1/4 cups of dough and divide in half.  Slightly flatten each half.   Place one half on countertop.

Tops with a Reese egg.

Top with other flattened half

Seal edges so you can’t see Reese egg.

Chill a few hours or overnight.  When ready to bake, preheat oven to 350 and line a cookie sheet with parchment paper.  Stagger cookies on sheet.

Bake 12 to 14 minutes, no longer.  Cool completely.  Store in covered container.

Celebrating Josh’s MVP.  Treat # 1 – caramel topped with melted chocolate chips in an oreo brownie base

A hat trick of treats to celebrate Josh Allen’s mvp award.   These treats feature an oreo crust with pieces of brownie, topped with homemade caramel and topped with melted chocolate chips.  if you don’t have spare brownies around, you can leave them out.   The homemade caramel part may sound intimidating, but it is so easy.

  • Oreo crust ingredients
  • 30 oreos finely crushed
  • 4 or 5 brownies broken up into bits
  • 4 tbs butter, melted

Directions  – line a bread pan with tin foil.  In a bowl,  combine ingredients and press evenly in top of foil.  Freeze for 10 minutes

  • Caramel ingredients
  • 1/3 cup brown sugar
  • 8 tbs butter
  • 2 tbs heavy cream

In a pan over low-medium heat, combine sugar and butter, stirring constantly.   Bring to a boil.  Remove from heat and whisk in heavy cream.  Let sit for 15 minutes.  Then, pour over oreo brownie crust.  Top with melted chocolate.  Cut and store in covered container in fridge.

Football Friday week 15 – stuffed chocolate snowball cookies

What could make a chocolate cookie better?  An oreo inside!

A rather simple treat for football friday 15 – chocolate snowball cookies stuffed with a hershey kiss or an oreo!   I used a sugar cookie mix to make thing easier.

Another big matchup for my Bills Sunday – at Detroit.   Should be a great one!

Remember to scoop your flour and baking cocoa from their respective containers into your measuring cup so you get the right amount.  I also recommend freezing the individual stuffed doughs for a half hour to keep them from spreading.  Also, don’t bake any longer than 10 minutes.

  • Ingredients
  • 1 sugar cookie mix
  • 1/4 cup baking cocoa
  • 1/4 cup flour
  • 1 egg
  • 1/2 cup butter, melted
  • 1 -2 tbs water
  • 1 tsp vanilla
  • Hershey kisses or other candy
  • Oreos

Directions – in a bowl, combine sugar  cookie mix, flour and baking cocoa.  Stir in egg, butter and water.  Scoop out 2 tbs dough and form around each kiss.  (You will need more dough to cover oreo).  Freeze individual doughs for 30 minutes, at least.  Preheat oven to 375 degrees.  Line a cookie sheet with nonstick baking liners.  Stagger cookies on sheet.  Bake 8 to 10 minutes, no longer.  Immediately sprinkle with powdered sugar.  Cool completely.   Store in covered container.

  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup sugar
  • 1 egg
  • 1 tsp vanilla

Golden oreo stuffed cake mix cookies

Need a quick treat?  This is one recipe to try.  I used golden oreos, but you can use any candy you want too.  I added sprinkles to the dough, which is optional, of course.  You can also make these unstuffed. I estimate this recipe makes 12 to 15 cookies.

  • Ingredients list
  • 1 cake mix
  • 1/3 cup vegetable oil
  • 1 egg
  • 1 tbs water
  • Golden oreos

Directions – preheat oven to 350 degrees.  Line a cookie sheet with parchment paper.  In a bowl, combine cake mix, vegetable oil, egg and water.   You may need to use your hands (like when making meatballs) to get dough to come together.  Add sprinkles, if using.  Scoop out 2 tbs dough and form around oreos.   Stagger cookies on prepared sheets.  Bake 9 to 10 min.  Cool completely.   Store in covered container.

Hot cocoa cookie sandwiches (Oreos included)

I was looking to use up some hot cocoa so in addition to making brownies, I made these cookies.  I didn’t have time to chill the dough, so they spread a lot.  Because of that,  I made them into sandwiches.

Scoop your flour from your flour bag into your measuring cup so you get the right amount.  Also, I recommend chilling this dough for a few hours.

  • Ingredients list
  • 1/2 cup crisco
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 1/2 cup hot cocoa
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 1/4 cups flour
  • 1 tbs cornstarch
  • 10 oreos, crushed
  • 1 cup milk chocolate chips
  • (You can add marshmallow bits too if you want)

Directions – in a bowl, cream crisco, sugar and brown sugar.  Add egg ans vanilla.   Stir in dry ingredients.  Fold in chips and oreos.  Scoop out 1/4 cups of dough.  Chill a few hours.  Line a sheet with parchment paper. Preheat oven to 350 degrees.   Stagger cookies on sheet.  Bake 10 to 12 minutes.  Cool completely.   Cut each in half.

  • Filling ingredients
  • 1/4 cup butter, softened
  • 1 cup marshmallow fluff
  • 2 cups powdered sugar
  • Milk or heavy cream
  • 1 tsp vanilla

Directions – in a bowl, blend together butter and fluff.  Slowly mix in powdered sugar.  Add enough milk or cream to get the consistency you want.  Add vanilla.  Spread between 2 cookies like this
