Chocolate Oreo Cookies

I was looking to make something chocolate, but wanted the cookies to be a little different, so I decided to add some finely crushed oreos. And added some white frosting. Rob gave me a thumbs up. Always good to get a thumbs up from your chief taste tester!

Remember to scoop your flour from your flour bag into your measuring cup. These don’t really spread. I opted to keep them puffy and mound-like, but you can slightly flatten them if you want. Don’t bake these longer than 11 minutes. I know they seem undercooked, but they will firm up as they cool. If you bake them too long, they will be dry.

  • 1/2 cup butter, softened
  • 1/4 cup sugar
  • 3 tbs brown sugar
  • 1/4 cup powdered sugar
  • 1/3 cup vegetable oil
  • 1 egg
  • 1 tsp vanilla
  • 1 cup flour (scooped from your flour bag into your measuring cup)
  • 1/4 cup baking cocoa
  • 3 tbs cornstarch
  • 1/4 tsp baking powder
  • 1/4 tsp cream of tartar
  • 24 oreos, finely crushed

Directions – cream butter, sugar, brown sugar and powdered sugar. Add eggs, oil and vanilla. Blend in dry ingredients and crushed oreos. Scoop out 1/4 cups dough and form tall mounds. Chill a few hours. Preheat oven to 350 degrees for 20 minutes. Line a cookie sheet with parchment paper. Stagger cookies on sheet. Bake 9 to 11 minutes (no longer than 11). Cool completely.

  • Frosting ingredients
  • 1/4 cup butter, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla
  • 1 tbs cream (or more)

Cream butter and powdered sugar. Add vanilla and cream. Blend well. Frost cookies. Store in covered container.

Oreo topped chocolate chip cookies

It is a rainy dreary Friday, so seems like a good time to bake cookies. These are chocolate chip cookies topped with crushed oreos. I made the cookies, formed them into mounds and them rolled the tops in crushed oreos. I chilled them for a few hours, then baked them.

These use a mix of regular all purpose flour and bread flour. Remember to scoop the flour from your flour bag into your measuring cup so you get the right amount. I also used some cornstarch to keep them from flattening too much.

  • Ingredients list
  • 1 cup butter, softened
  • 3/4 cup brown sugar
  • 1/4 cup sugar
  • 1 egg
  • 1 egg yolk
  • 1 tsp vanilla
  • 1 cup all purpose flour
  • 1 1/4 cups bread flour
  • 1 tbs cornstarch
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 cup chocolate chips
  • 10 to 12 oreos, finely crushed

Directions – cream butter, brown sugar and sugar. Add egg, yolk and vanilla. Blend in dry ingredients. Fold in chips. Scoop out 1/4 cups of dough. Roll tops in crushed oreos. Chill a few hours. Preheat oven to 350 degrees for 20 minutes before baking so it cycles to the right temp. On a cookie sheet lined with parchment paper, stagger cookies, as shown below.

Bake at 350 degrees for 13 to 15 minutes (the edges will be golden). The middle may be a little gushy, but will firm up as the cookies cool. Cool completely. Store in covered container.

Oreo stuffed m&m cookies

Our new ESPN Radio lineup debuts tomorrow, and I wanted to bring in something fabulous (or semi-famulous), so I went with m&m chocolate cookies stuffed with oreos.  

Do they need to be stuffed?  No.  But I have a ton of oroes and feel stuffing them in treats is always a wise choice. Plus, who doesn’t love m&ms?

A few notes – remember to scoop your flour from your flour bag into your measuring cup so you get the right amount.  Also chill the stuffed cookies a few hours to prevent spreading.  And, preheat your oven to 350 degrees before baking so it cycles to the right temp.

  • Ingredients list
  • 3/4 cup butter, softened
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 1 egg
  • 1 yolk
  • 2 tsp vanilla
  • 2 1/4 cups flour
  • 1 tbs cornstarch
  • 3/4 tsp baking soda
  • 3/4 tsp salt
  • 1 cup mini m&ms
  • 1/2 cup mini chocolate chips
  • Oreos

Directions -cream butter, brown sugar and sugar. Add egg and yolk. Blend in dry ingredients. Fold in chips and m&ms. Scoop out 2 tbs dough and divide in half. Slightly flatten one half

Top with an Oreo

Flatten other half of dough and place on top.

Seal edges so oreo is completely covered.

Chill dough a few hours. Preheat oven to 350 degrees for 20 minutes before baking. Line a cookie sheet with nonstick baking liners. Scatter cookies on sheet. Bake 12 to 15 minutes, you will see a few golden patches on top. Remove from oven. Cool completely. Store in covered container.

I wanted to make some red velvet cookies, but take it up a notch – so I decided to stuff them with oreos and top them with fudge and mini m&ms. I didn’t have enough red food color,so I opted for blue food color. When I added the baking cocoa it made for a very dark blue cookie. I don’t have this red velvet thing down very well, but I think these cookies will still be good. 😋

Remember to spoon your flour from your flour bag into your measuring cup so you get the correct amount. If you pour directly from the flour bag, the flour gets packed into the measuring cup and that can make for a dry cookie. I chilled the cookies overnight before baking, to minimize spread. Preheat your oven to 350 degrees for 20 minutes before baking so your oven cycles to the right temp.

  • Cookie ingredients
  • 1/2 cup butter, cold and grated with a cheese grater or cut into small cubes
  • 1 cup brown sugar
  • 1 cup brown sugar
  • 2 eggs
  • 4 tbs food color
  • 1 tbs vanilla
  • 2 1/2 cups flour
  • 2/3 cup baking cocoa
  • 1 tsp baking soda
  • 4 tsp cornstarch

Directions – in a bowl, cream butter, sugar and brown sugar. Add eggs and vanilla. Blend in food color. Stir in dry ingredients. Scoop out 1/4 cup of dough

Divide in half and flatten each half, enough so an oreo will fit with a little extra around it

Place an oreo between the two halves

Completely cover cookie

Chill cookies for at least a few hours. When ready to bake,preheat oven for 20 minutes at 350 degrees. Line a cookie sheet with parchment paper. Stagger cookies on sheet (they do spread a bit).

Bake 15 minutes, no longer. As they are cooling, make the fudge topping. The topping may seem a little greasy when warm, but the fudge firms up nicely.

  • Fudge topping ingredients
  • 1/2 cup butter
  • 1 1/2 cups sugar
  • 1/3 cup evaporated milk
  • 2 cups milk (or semisweet) chocolate chips
  • 1 tsp vanilla

In a saucepan, over low heat, combine butter, sugar and evaporated milk. Stir occasionally to a boil. Remove from heat. Stir in chips until melted. Add vanilla. Spoon on top of cookies and press in some mini m&ms.

Caramel bars with an oreo crust

This is a fabulous, yet pretty easy treat to whip up. It features an oreo crust, homemade caramel and melted milk chocolate on top. You will need oreos, butter, heavy cream, brown sugar and chocolate. I made these in a bread pan. I used a food processor to crush the oreos, but you can also use a rolling pin.

  • Oreo crust ingredients
  • 30 oreos, finely crushed
  • 6 tbs butter, melted

Line a bread pan with tin foil. In a bowl, combine crushed oreos and butter. Press in bottom of foiled pan. Freeze 15 minutes.

  • Caramel filling
  • 1/3 cup brown sugar
  • 8 tbs butter
  • 2 tbs heavy cream

In a saucepan, combine brown sugar and butter. Cook over low-medium heat, whisking, to a boil. Boil 1 minute. Remove from heat. Stir in heavy cream. Let set for 15 minutes. Pour over oreo crust.

Top with melted chocolate. Chill 30 minutes. Cut and store in covered container.

Oreo stuffed chocolate cookies

These are a request from my youngest goddaughter Sara, for her dance recital tomorrow. They are chocolate cookies stuffed with oreos. I have a couple of these recipes. For these, I used melted chocolate chips, in addition to baking cocoa. They came out huge because I used 4 tbs of dough. Next time I will use 2 tbs.

  1. Ingredients
  2. 2 cups flour
  3. 1/2 cup baking cocoa
  4. 2 tsp baking powder
  5. 1 tsp salt
  6. 2 2/3 cups chocolate chips, melted (I used a combo of milk and semisweet chocolate chips)
  7. 4 eggs
  8. 1 tbs vanilla
  9. 10 tbs butter, softened
  10. 1 1/2 cups brown sugar
  11. 1/2 cup sugar
  12. Oreos!!!

Directions – cream butter, sugar and brown sugar. Add eggs and vanilla. Blend in chocolate. Fold in dry ingredients. Dough will be a little soft. Chill for 30 minutes or so. Scoop out two tbs of dough. Cover an oreo. Repeat process. Chill a few hours. Preheat oven to 350 degrees for 20 minutes. Line a cookie sheet with nonstick baking liners. Bake 13 to 15 minutes. Cool completely. Store in covered container.

I have a rather large bag of Oreos to use up, so instead of making different kinds of cookies to stuff, I ground some up and tossed them in these cookies. And they are frosted with a simple vanilla frosting. I used Crisco in these, but softened butter would probably work well too

Finally was able to order our replacement stove today! Yay! It is arriving on Wednesday! It has been a guessing game baking the last two months! At least the treats have all turned out well!

Big game for the Bills – against the Titans on Monday Night Football. So I upped my treat game -a mini Oreo stuffes inside a sugar cookie stuffed inside a brownie, with a chocolate blobby of frosting on top., why the frosting? I do not know. It seemed like the right call. Is it necessary? I believe the answer is yes.

  • Ingredients list
  • 2 boxes of brownie mix, plus ingredients listed on the boxes
  • Sugar cookie mix, plus ingredients listed on box/bag
  • Mini oreos

Directions – preheat oven to 350 degrees for 20 minutes. Line a 9×13 pan with tin foil and spray with baking spray. In a bowl, combine brownie mixes and ingredients listed on boxes. Spread evenly into prepared pan. In another bowl, combine sugar cookie mix and ingredients on box. Scoop put 1 tbs cookie dough and cover a mini Oreo. Repeat process. I think I did about 16 of these. Gently press into brownie dough in pan in 4 rows of 4. Bake 28 to 35 minutes, or until a toothpick inserted in center of brownie dough comes out with a few moist crumbs. Cool completley. Cut. You can frost these if you would like. Store in covered container.

I had some smores sandwich cookies that I picked up and thought they would be good to stuff in a cookie. So I put together a chocolate chip cookie dough, added some mini chips and crushed up the remaining 10 Oreos I had leftover from my peanut butter pie recipe. And I stuck a smores sandwich cookie in the middle of it. I have no idea if these will be good or not, but I think the people,at work will eat them.

1 1/2 tbs dough on the bottom and top and a smores sandwich cookie in the middle

  • 1/2 cup butter, softened
  • 1/2 cup Crisco
  • 1 cup brown sugar
  • 1/2 cup sugar
  • 2 eggs
  • 2 yolks
  • 1 tbs vanilla
  • 2 1/2 cups flour
  • 1 1/2 cups cake flour
  • 1 tbs cornstarch
  • 1 tsp baming soda
  • 1 tsp baking powder
  • 12 crushed Oreos
  • 1 cup mini chocolate chips
C is for cookie!

Directions – preheat oven to 375 degrees for 20 minutes. In a bowl, cream butter, Crisco, brown sugar and sugar. Add eggs and yolks and vanilla. Blend in dry ingredients. Mix in chips and Oreos. Scoop out 1 1/2 tbs of dough, slightly flatten. Place sandwich cookie on top. Scoop put another 1 1/2 tbs dough, slightly flatten, place on top of sandwich cookor. Completely cover cookie with dough. stagger on a cookie sheet that has been lined with nonstick baking liners or parchment paper. Bake 11 minutes. There will be light golden patches on top. Cool completely. Store in covered container.

These are the queen of stuffed cookies. An Oreo baked inside a chocolate chip cookie. And they are a request of one of my goddaughters, Sara, for her birthday party. Rob may or may not have taste tested one, so he can vouch for me at the family party tomorrow 🙂

The original Oreo is the best!

The trick to this is to not use too much dough to surround the Oreo. Use 1 1/2 tbs on top and 1 1/2 tbs on the bottom of each Oreo. That way they are nice and puffy and perfect looking.

Couple of other tips – I also like to use cornstarch to keep the cookies from spreading too much… Spoon your flour from your flour bag into your measuring cup… Chill the cookies at least for a few hours.. And preheat your oven to 350 degrees for 20 minutes before baking.

  • Ingredients
  • 1 cup butter, softened
  • 3 /4 cup brown sugar
  • 1 cup sugar
  • 1 tsp vanilla
  • 2 eggs
  • 3 1/2 cups flour
  • 1,tbs cornstarch
  • 1 tsp baking soda
  • 2 cups chocolate chips
  • Oreos!

Directions – cream butter, brown sugar and sugar. Add vanilla and eggs., fold in dry ingredients. Blend in chips. Scoop out 11/2 tbs of dough (I used a cookie scoop), slightly flatten, place an Oreo on top. Scoop out another 11/2 tbs dough, slightly flatten., place on top of Oreo. Mold dough around to completely cover cookie. Chill a few hours in fridge. Preheat oven to 350 degrees for 20 minutes. On a cookie sheet that’s been lined with nonstick baking liners or parchment paper, stagger cookies. (See pic above)

Bake 10 to 13 minutes, or until you see a few golden patches on top and bottoms of cookies are lightly golden. Cool completely. Store in covered container.
