Puffy, large chocolate chip cookies

All that puffy goodness!

Testing out our new Frigidaire gas oven with a chocolate chip cookie recipe… One of the more than 20 ccc recipes I have. They came out perfect. I also picked up some aluminum cookie sheets because I have been ready some articles how they bake cookies better. I am very pleased with how they came out. I think I may be investing in some aluminum cake and brownie pans too 🙂

Remember to scoop your flour from your flour container into your measuring cup so you get the right amount. Also, chill the mounds of dough for a couple of hours. And finally, preheat your oven to 375 degrees for 20 minutes before baking, so your oven cycles to the right temp.

  • Ingredients
  • 1/2 cup butter, softened
  • 1/4 cup Crisco
  • 3/4 cup brown sugar
  • 1/2 cup sugar
  • 1 egg
  • 2 tsp vanilla (I used imitation)
  • 2 1/4 cups flour (scooped from your flour container into your measuring cup)
  • 2 tsp cornstarch
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 1/2 cups chocolate chips

Directions – cream butter, Crisco, brown sugar and sugar. Add egg and vanilla. Blend in dry ingredients. Fold in chips. Scoop out 1/4 cups of dough. Gently push a few extra chips on top. Chill dough mounds a few hours in fridge. When ready to bake, preheat oven to 375 degrees for 20 minutes. On a cookie sheet lined with nonstick baking liners, stagger cookies on the sheet. Bake 9 to 12 minutes (light golden patches on top). I let these cool on the sheet for 10 minutes after removing from oven,hoping they would stay puffy (they did). Store in covered container.

Week 8 victory Monday cookies

A chocolate version of the Franks! (Triple Chip chocolate cookies)

How is it week 8 already? Wow! I found today’s Bills game far too stressful. At least we got a win. And 5-2 is a solid record. To celebrate, I made a chocolate version of the triple chip cookies. And I slathered some melted milk chocolate on the bottom because,why not? Also, we set out a bowl of candy for Halloween, on a table. Rob keeps replenishing it and so far, no kid has dumped the bowl in his bag! And we only have 35 minutes left!

Remember to scoop your flour from your flour bag into your measuring cup. Do the same for the baking cocoa. And preheat your oven to 350 degrees for 20 minutes so it gets to the right temperature.

  • Ingredients
  • 1 cup butter, softened
  • 1 1\2 cups sugar
  • 1/2 cup brown sugar
  • 1 tsp vanilla
  • 2 eggs
  • 2 cups flour
  • 3/4 cup baking cocoa
  • 11/2 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1/2 cup chocolate chips
  • 1/2 cup white chips
  • 1/2 cup milk chocolate chips

Directions – cream butter, sugar and brown sugar. Add eggs and vanilla. Fold in dry ingredients. Mix in chips. Scoop out 1/4 cuos of dough. Chill at least an hour. Preheat oven to 350 degrees for 20 minutes. Line a cookie sheet with nonstick baking liners. Stagger cookies on the sheet. Bake 12 to 14 minutes. Cool completely. In a microwave safe bowl, combine 2 cups milk chocolate chips and 2 tsp of vegetable oil. Microwave in 30 second increments until you can stir smooth. Slather on bottom of cookies. Ler set. Store in covered container.

Is this necessary? Probably not, but who cares?

Chocolate Chip cookies recipe # 25

Extra chips in this cookie!

These are one of my many, many chocolate chip cookie recipes. Rob requests only two things – chocolate chip cookies and brownies. I don’t like making the same thing over and over, so I have a collection of various recipes for both. That way there is a little variety for me in my baking. These cookies came out a little gushier than normal because we are having issues with our oven. It is less than 4 years old. I was pleasantly surprised that we got the warranty with it. So we are getting it fixed for free. We are waiting on some parts to come in and the tech will be back to fix it.

Some tips – scoop your flour from your flour container into measuring cup. Also, preheat your oven for 20 minutes before baking to allow it to cycle for the right temp.

  • Ingredients
  • 1 cup butter, cold (I used a cheese shredder to shred it)
  • 1 cup brown sugar
  • 1/2 cup sugar
  • 2 eggs
  • 1 tbs vanilla
  • 2 cups bread flour
  • 1 cup cake flour
  • 1 tbs cornstarch
  • 1 tsp baking soda
  • 2 cups chocolate chips

Directions – cream butter, brown sugar and sugar. Add eggs and vanilla. Blend in dry ingredients. Fold in 1 1/2 cups chocolate chips. Divide dough into 12 equal mounds of dough. Gently press remaining 1/2 cup chocolate chips into tops of each mound. Chill a few hours. Preheat oven to 400 degrees for 20 minutes. Line a cookie sheet with parchment paper or nonstick baking liners. Stagger cookies on prepared sheets. Bake 12 to 16 minutes, depending on how gushy you want your cookies. Cool completley. Store ina covered container. I also chilled them a little too in the fridge.

What happened to my puffy cookies?

These cookies were supposed to be puffy mounds of goodness for my goddaughter’s 13th birthday. Instead, they ended up flat as pancakes, but extremely large. So I brought them to work and made Sara something more acceptable looking! I blame these on the heat and humidity. They were well-received at work today. ☺

Note- you don’t have to use cake flour, you can entirely use regular flour of you want. Also preheat your oven to 410 degrees for 20 minutes before baking so it heats up to the right amount.

  • 1/2 cup cup butter

  • 1 cup brown sugar
  • 1/2 cup sugar
  • 1 tbs vanilla
  • 2 eggs
  • 1 1/2 cups flour
  • 1 1/2 cups cake flour

  • 2 cups chocolate chips

Directions – cream butter, Crisco, sugar and brown sugar. Add eggs and vanilla. Blend in dry ingredients. Fold in chips. Divide dough evenly into 8 mounds. Chill at least a few hours. Preheat oven to 410 degrees for 20 minutes. On a cookie sheer lined with nonstick baking liners, stagger cookies. Bake 14 to 16 minutes (you will see light golden pathches on top) . cool completely. Store in covered container.

White chocolate chip macadamia nut cookies

White chocolate chip macadamia nut cookiss

This cookie is a request from my mom.  White chocolate chip macadamia nut cookies.  A pretty standard cookie dough.  I used a mixture of Crisco and butter.  You can do all butter or all Crisco, if you prefer.  I added an egg yolk for a softer cookie. I also added 1 tbs of cornstarch because they help keep the cookies puffy. 

Remember to scoop your flour from your flour bag into you measuring cup.  I also recommend chilling the dough for a few hours.  Also preheat your oven for 20 minutes before baking to get the right temperature.

  • 1/2 cup butter, softened
  • 1/4 cup Crisco

Chill a couple of hours. Preheat oven to 350 degrees for 20 minutes. Line a cookie sheet with nonstick baking liners. Stagger cookies. Bake 10 to 14 minutes (light golden patches on top). Cool completely. Store in covered container.

Kluber Chip Cookies

I needed another name for yet another chocolate chip cookie and Corey Kluber of the Yankees had a no hitter this week, so I am naming these in his honor. I know a lot of people have complained about the amount of no hitters, but I appreciate them and think they’re great. Hence, the cookies!

These are made with bread flour, so they are a very thick cookie. I also used 3 kinds of chips – semisweet, milk chocolate and white chocolate. Remember to spoon your flour from you container into your measuring cup to get the correct amount, and preheat your oven for 20 minutes before baking so you get the right temp.

Triple chip gooey goodness!
  • Ingredients
  • 1/2 cup butter, softened
  • 1/2 cup Crisco
  • 3/4 cup brown sugar
  • 1/2 cup sugar
  • 1 tsp vanilla
  • 3 cups bread flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tbs cornstarch
  • 1/2 tsp salt
  • 2/3 cup semisweer chocolate chips
  • 2/3 cup milk chocolate chips
  • 2/3 cup white chips

Directions – preheat oven to 375cream butter, crisco, sugar and brown sugar. Add eggs and vanilla. Blend in dry ingredients. Fold in chips. Divide into 12 scoops of dough. Line a cookie sheet with nonstick baking liners or parchment paper. Stagger cookies on sheet. Bake 12 to 16 minutes (light golden patches on top and lightly golden on the bottom). Cool completely. Store in covered container.

Mega triple chip cookies

Right out of the oven!

What better way to celebrate a random Thursday in May than with a mega chocolate chip cookie. Needed a synonym for big, so mega was my winner this time. I had no time to chill the dough, so I went with Crisco this time because I find butter can make the cookies spread if the dough is not chilled. I used a mix of all purpose flour and cake flour because I realized I have two boxes of cake flour. (You can also sift together 1 1/2 cups all purpose flour with 1 1/2 tbs cornstarch and make your own cake flour. Rob also asked for triple chips (milk chocolate, white chocolate and semisweet). Remember to spoon your flour from your container into your measuring cup to get the correct amount and preheat your oven for 20 minutes before baking.

  • Ingredients
  • 1 cup Crisco
  • 1/2 cup sugar
  • 1 1/4 cups brown sugar
  • 2 eggs
  • 1 tbs vanilla
  • 1 1/2 cups cake flour
  • 1 1/2 cups flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tbs cornstarch
  • 1/2 tsp baking soda
  • 2/3 cup white choc chips
  • 2/3 cup chocolate chips
  • 2/3 cup milk chocolate chips
The bigger the cookie, the better!

Directions – preheat oven to 375 degrees for 20 minutes. Cream Crisco, brown sugar and sugar. Add eggs and vanilla. Blend in dry ingredients. Dough may take a while to come together. Mix in chips. Divide dough evenly into 9 pieces. Line a cookie with nonstick baking liners. Stagger cookies on the prepared sheet. Bake 12-14 minutes. (Golden spots on top). Let cool completely on cookie sheets. Store in covered container.

Who needs a cookie?

Acceptable flat chocolate chip cookies

Look at all those chips!

Usually, I prefer my cookies to be puffy, like mounds of sweet goodness. These turned out a little flatter than I prefer, but I still believe the are acceptable to serve to others. And as an extra treat, I melted milk chocolate and coated some on the bottom. Why, you ask? Just because. ☺

  • Cookie ingredients
  • 1 cup butter, softened
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 tbs vanilla
  • 1 tsp baking soda
  • 2 tsp hot water
  • 1 tsp cornstarch
  • 3 cups flour
  • 2 cups chocolate chips

Directions – cream butter, sugar, and brown sugar. Add eggs. In a separate cup, dissolve baking soda in water. add to sugar mixture. Mix in vanilla. Fold in dry ingredients. Stir in 1 1/2 cups chips. Form 1/4 cups of dough into mounds. Gently add extra chips (from remaining 1/2 cup) into the top of each mound. Chill dough a few hours. Preheat oven to 350 for 20 minutes. Line a cookie sheet with nonstick baking liners. Bake 12 to 14 minutes (light golden spots on top). Cool completely. Optional – combine 1 cup chocolate chips and 1 tbs vegetable oil in a microwave safe container. Microwave in 30 second increments until you can stir smooth. Cover bottoms of cookies. Let set, upside down, until chocolate is solid. Store in covered container.

Frost the bottoms with melted chocolate!

Very Large Chocolate Chip Cookies

Larger cookies mean less time baking!

This recipe is pretty self explanatory. They are very large chocolate chip cookies. I decided to go big in celebration of Rob and I getting our first Pfizer shots. Great experience at CVS overall, topped off by 80s music being played in the store. First song I heard- “The Glory of Love” by Peter Cetera. How I love that song! (And the movie it was in – “Karate Kid 2”) I was (still am actually) a huge fan of a songs in that genre from that decade. Lionel Richie was the best! Anyways, I felt a huge relief after getting the shot.. Like a big step toward the road back to normal. This has been an incredibly difficult past 12 months for so many people. Our light is at the end of the tunnel. Anyways, to celebrate, I present these cookies. Yes, they are large, but if you eat two or three of the small ones, you may as well have a big one!

I subbed one yolk for an egg to make the cookies softer. I also added cornstarch to keep the cookies puffy. If you don’t have cake flour, you can sift together 3 /4 cup flour and 1 tbs cornstarch.

Remember – scoop your flour from your flour container into your measuring cup. Also chill your mounds of dough for at least an hour. And, preheat your oven for 20 minutes before baking. The oven cycles through various temperatures and gets to the right temp after 20 minutes.

Directions – cream butter, brown sugar and sugar. Add egg and yolk. Blend in dry ingredients. It takes a while to come together. I actually used my hands like I was making meatballs at this point. Fold in chips. Divide dough into 8 equal amounts and form mounds. Chill a few hours. Line a cookie sheet with nonstick,baking liners. On a cookie sheet lined with nonstick baking liners, stagger cookies. Preheat oven to 400 degrees for 20 minutes. Bake 8 to 9 minutes (light golden spots on top). Cool completely. Store in covered container.

Monster size chocolate chip cookies

Now,that’s a cookie!

You may want to schedule an extra workout session, run or walk before eating one of THESE chocolate chip cookies to burn off the extra calories. To say they are large is an understatement! Everyone loves chocolate chip cookies, so instead of having two or 3, just have one of these and call it a day! These use a mix of cake flour and all purpose flour. If you don’t have cake flour, you can make it by sifting 1 1/2 cups all purpose flour with 1 1/2 tbs cornstarch. Also, I was in a rush and only had cold butter to work with, so I used a cheese grater to shred it so I could work with it quickly.

  • Ingredients
  • 1 cup butter, cold, grated with a cheese grater
  • 1 cup brown sugar
  • 1/2 cup sugar
  • 2 eggs
  • 2 yolks
  • 2 1/2 cups flour
  • 1 1/2 cups cake flour
  • 1 tbs cornstarch
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 cups chocolate chips

Directions – cream grated cold butter, brown sugar and sugar. Add eggs and yolks. Fold in dry ingredients. Mix in chips. Divide dough evenly into thirds. Then divide each third in half. Then, divide each remaining dough pieces in half. There are your 12 cookies., pile dough into mounds. Chill at least a few hours. Preheat oven to 400 degrees fpr 20 minutes. On a cookie sheet lined with nonstick baking liners, bake 10 to 12 minutes. There will be light golden spots on top. Cool on sheets completely. Do not be like my husband and grab one while it is still hot. 😳 store in covered container.

When it comes to cookies, the bigger, the better!
