Smores cookies bars

Amidst all the holiday baking with cutout sugar cookies, snickerdoodles and gingerbread men, I went a little outside the box and decided to make smores cookie bars. They are quite simple and are topped with marshmallow buttercream frosting and melted milk chocolate chips. We are going to our friends’ house tonight for a Christmas party and these are what we are bringing.

Remember to preheat your oven to 375 degrees for 20 minutes before baking so your oven cycles to the right temp. Also, spoon your flour bag from your flour container

  • Bars ingredients list
  • 1 cup crisco (original or butter flavor)
  • 1 cup brown sugar
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 3 cups flour (scooped your flour bag into your measuring up so you get the right amount)
  • 2 tsp baking powder
  • 1 tsp salt
  • 2 cups finely crushed graham crackers

Preheat oven to 375 degrees for 20 minutes. Line a 9×13 pan with tin foil and spray with baking spray. In a bowl, cream crisco, brown sugar and sugar. Mix in eggs and vanilla. Blend in dry ingredients and crushed graham cracker. Spread evenly into prepared pan. Bake 20 to 25 minutes (edges just turn golden). Cool completely.

  • Frosting ingredients
  • 1/2 cup butter, softened
  • 1 cup marshmallow fluff
  • 2 1/2 cups to 3 cups powdered sugar
  • 2 to 3 tbs heavy cream
  • 1 tsp vanilla

Cream butter and fluff. Mix in powdered sugar slowly. Add cream and vanilla. Blend to desired consistency. Frost cooled bars. Top with melted chocolate. Store in covered container.

Thank you so much for stopping by today! I wish you a day filled with peace and love.

Chocolate hot cocoa and marshmallow chip cookies

I saw this wonderful creation from Nestlé at Aldi and I bought, not one, but 2 bags. Hot cocoa and marshmallow chips? Genius!

I figure pop one bag in some chocolate cookie dough and magic happens.

I put up both our trees this weekend.. and pulled put my favorite ornament. (I also love the red haired doll from Rudolph, which is right next to it). It is year 34 with this Bills ornamant, and am hoping Santa comes through this time!

Go Bills!

Remember to scoop your flour from your flour bag into your measuring cup so you get the right amount, scoop out your dough and then chill the individual mounds at least an hour, and preheat your oven to 350 degrees for 20 minutes before baking so it cycles to the right temp.

  • Ingredients list
  • 1 1/2 cups butter, softened
  • 1 1/2 tbs vegetable oil
  • 1 1/2 cups brown sugar
  • 1/3 cup plus 3 tbs sugar
  • 3 eggs
  • 2 tsp vanilla
  • 3 3/4 cups flour
  • 3/4 cup baking cocoa
  • 3 tsp cornstarch
  • 1/2 tsp salt
  • 1 bag of hot cocoa chips
  • 1 cup milk chocolate chips

Directions – cream butter, oil, sugar, and brown sugar. Add eggs and vanilla. Blend in dry ingredients. Fold in chips. Scoop out dough (I used my cookie scoop that is 6 tbs worth). I formed them into tall mounds and chills them for at least an hour. Line a cookie sheet with parchment paper. Preheat oven to 350 degrees for 20 minutes before baking. Stagger cookies on prepared sheets. Bake 15 to 18 minutes. Cool completely. Store in covered container.

Thanks for stopping by today! Remember to be kind! Go Bills!

Sugar Cookie Bars

I wanted to make cookies for work tomorrow morning as college football’s championship weekend wraps up, but I am also tired (because i put up one of our Christmas trees), so I make them into sugar cookie bars instead.

My Christmas tree topper!

Remember to scoop from your flour bag into your measuring cup so you get the right amount. Preheat your oven to 35p degrees for 20 minutes before baking. And, don’t bake these longer than 10 to 12 minutes. They may seem a little doughy, but you don’t want them to dry out.

  • Ingredients list
  • 1/2 cup crisco
  • 1/2 cup butter crisco
  • 1 cup sugar
  • 1 tsp vanilla
  • 2 tbs water
  • 1 egg
  • 2 1/2 cups flour
  • 2 tsp baking powder

Directions – preheat oven to 350 degrees for 20 minutes so your oven cycles to the right temp. Spray a 9×13 pan with baking spray. In a bowl cream crisco, butter crisco and sugar. Add egg, eater and vanilla. Stir in dry ingredients. (If dough seems to sticky, add another 1/4 cup flour). Press evenly into prepared pan. Bake 10 to 12 minutes. Cool completely.

  • Frosting ingredients
  • 1/2 cup butter
  • 3 cups powdered sugar
  • 4 to 6 tbs milk (depending on consistency you want)
  • 1 tsp vanilla

In a bowl, cream butter and powdered sugar. Add milk and vanilla. Frost Bars. Cut and store in covered container.

Oreo Brookie brownies

An oreo layer on the left, nutter butter on the right

I could not decide between making brownies or chocolate chip cookies, so I combined them and put a layer of oreos in between them and baked them up. I thought of putting melted chocolate on top, but decided that would be too much. 😀

Remember to preheat your oven to 350 degrees for 20 minutes before baking. Also, scoop your flour from your flour bag into your measuring cup so you get the right amount. Do the same drill with your baking cocoa.

  • Brownie ingredients
  • 2 1/2 cups sugar
  • 2/3 cup vegetable oil
  • 1/2 cup milk
  • 2 eggs
  • 1 tsp vanilla
  • 2 cups flour
  • 1 cup baking cocoa
  • Oreos

Directions – preheat oven to 350 degrees. Line a 9×13 baking pan with parchment paper and spray with baking spray. In a bowl, combine sugar, oil, and milk. Beat in eggs and vanilla. fold in dry ingredients. The mixture will be thick. Spread into bottom of prepared pan. Layer with oreos. Set aside

  • Chocolate chip layer
  • 1/2 cup butter softened
  • 1/4 cup butter flavor crisco
  • 3/4 cup brown sugar
  • 1/4 cup sugar
  • 1 egg
  • 1 egg yolk
  • 1 tsp vanilla
  • 1 3/4 cups flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 cup chocolate chips

Directions – in a bowl, combine butter, crisco, sugar, and brown sugar. Add egg, yolk, and vanilla. Blend in dry ingredients. Mix in chips. I grabbed handfuls of dough and flattened them like a pancake and placed them on top of oreo layer.

Bake in 350 degrees in a preheated oven for 15 minutes. Cover with tin foil to keep edges from getting too brown. Bake another 20 to 25 minutes (or possibly longer). Try not to let the edges get too brown. I would rather underbake than overbake. If you feel it is underbaked after you cut brownies up, you can chill them overnight in the fridge. That helps firm them up.

Week 11 victory cookies

A classic cookie is what I opted to bake for my week 11 Bills victory cookies – chocolate chip.  This has not been a season for as many victory cookies as past years, but I take wins when we get ’em.  So I baked cookies at 830 tonight.  Yikes!

Remember to scoop your flour from your flour bag into your measuring cup so you get the right amount,  chill your individual cookie dough a few hours before baking.  Preheat oven to 375 degrees for 20 minutes before baking so oven cycles to the right temp before baking.

  • Ingredients
  • 1 cup butter, softened
  • 3/4 cup brown sugar
  • 3/4 cup sugar
  • 1 tsp vanilla
  • 2 eggs
  • 1 tbs vegetable oil
  • 2 1/2 cups flour
  • 1/2 tsp baking powder
  • 1/4 tep salt
  • 1 cup chocolate chips

Directions – cream butter, sugar, and brown sugar. Add eggs, vanilla and vegetable oil. Blend in dry ingredients. Mix in chips. Scoop out 2 tbs dough. Chill a few hours. Preheat oven to 375 degrees before baking. Line a cookie sheet with nonstick baking liners. Stagger cookies on prepared sheets. Bake 9 to 11 minutes. Cookies will be a little undercooked on top, but bottoms will be browned. Cool completely. Chill in fridge to help cookies firm up. Store in covered container.

Mini M&M chocolate chip cookies for football Friday #11

I was a little short on time tonight, so I made mini M&M chocolate chip cookies, using crisco and butter crisco. By using crisco instead of butter, I did not need to chill the dough to keep them puffy.

Remember to scoop your flour from your flour bag into your measuring cup so you get the right amount. Also preheat your oven to 375 degrees for 20 minutes before baking.

  • Ingredients
  • 1/2 cup crisco
  • 1/2 cup butter crisco
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 2 tbs water
  • 2 tsp vanilla
  • 3 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup mini m&ms
  • 1 cup chocolate chips

Directions – preheat oven to 375 degrees. Line a cookie sheet with parchment paper. In a bowl, cream crisco, butter crisco, sugar, brown sugar, eggs, water and vanilla. Blend in dry ingredients. Mix in chips and m&ms. Scoop out 3 tbs of dough and form tall cylinders. Stagger on prepared cookie sheets. Bake 8 to 11 minutes. Bottoms will be golden. Cookies will be a little undone on top, but will firm up as they cool. Store in covered container.

Thanks for stopping by! Remember to be kind because everyone is fighting some sort of battle. Go Bills!

A big game calls for big time treats!

Another big game for the Bills this week – at Cincinnati on Sunday Night Football. Night games are tough because 1) they get over after 11 pm and 2) I have all day to get nervous. I prefer 1 pm Sundays! Anyways, a game of this magnitude calls for me to step up my cookie game for work tomorrow morning. So here are sugar cookies stuffed with brownies. Perhaps I should have drizzled them with a fudge topping! Next time, perhaps!

Remember to scoop your flour bag into your measuring cup so you get the right amount. Also chill the individual cookie doughs before baking to prevent spreading.

  • Ingredients list
  • 1 pan of brownies, baked as directed, cooled and cut into small squares
  • 1 1/2 cups crisco
  • 1 1/3 cups sugar
  • 4 eggs
  • 1 tbs vanilla
  • 4 1/2 cups flour
  • 1 tsp salt
  • 1 tsp baking powder

Directions – cream crisco and sugar. Add eggs and vanilla. Blend in dry ingredients. Scoop out 1 tbs dough and lightly flatten.

Place a brownie square on top

Top with a other tbs of dough

Seal edges to completely cover brownie.

Chill doughs for a few hours. When ready to bake, preheat oven to 350 degrees for 20 minutes. Line a cookie sheet with parchment paper. Stagger cookies on sheet.

Bake 12 to 14 minutes. Bottoms will be lightly golden. The tops were a little doughy so I popped them in the fridge to firm them up. Store in covered container (either in fridge or on countertop).

Thanks for stopping by today. Hope you have a wonderful day, filled with peace, joy and love. Go Bills!

Frosted brownie cookies

These are my delayed celebration cookies for the Bills win Thursday night. I do not tempt the football gods with premature celebration treats, so I always wait until the win is completed. • 2 eggs
  • 1 tsp vanilla
  • 4 tbs cornstarch or honey

  • 1/2 tsp baking soda
  • 1 cup baking cocoa

Directions – preheat oven to 350 degrees for 20 minutes. Line a cookie sheet with parchment paper. in a bowl, cream butter, brown sugar and sugar. Blend in eggs, corn syrup and vanilla. Fold in dry ingredients. Scoop out 1/4 cups of dough. Stagger on cookie sheet lined with parchment paper. Bake 11 to 13 minutes (no longer). Cool completely.

  • Frosting ingredients
  • 1/4 cup melted butter
  • 1/3 cup cocoa powder

You know what would make things better right now?

Does a cookie solve all problems?

That was the question my husband asked me after I got home from work and after the Bills lost by 5 in London and both lineback Matt Milano and defensive lineman Da’Quan Jones left with injuries. And they could both be out a while. Rob’s answer to all this was “chocolate chip cookies.” As soon as he said cookies, Gracie ran in and sat at my feet, like the good pup she is, as if to say “yes, mama, cookies make everything better. I do not agree, but I did make cookies. And yes, chocolate chip ones. Honestly, I am still mad about the loss, but someone will enjoy these damn cookies.

Remember to scoop your flour from your flour bag into your measuring cup so you get the right amount. Freeze the dough for an hour or chill for a few hours to prevent spreading. And preheat your oven to 375 degrees for 20 minutes before baking so the oven cycles to the right temp.

  • Ingredients list
  • 1 cup butter flavor crisco
  • 1 cup brown sugar
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 2 cups all purpose flour
  • 3/4 cup bread flour
  • 2 tsp baking powder
  • 1 tbs cornstarch
  • 1 tsp salt
  • 1 cup chocolate chips
  • 1 cup mini chocolate chips

Directions – in a bowl, cream butter flavor crisco, brown sugar and sugar. Add eggs and vanilla. Fold in dry ingredients. Mix in chips. Scoop out 1/4 cups of dough and form tall cylinders. Chill a few hours. Preheat oven to 375 degrees for 20 minutes. Line a cookie sheet with parchment paper and stagger cookies. Bake 14 to 16 minutes. Edges will be golden. Middle may be soft, but remove from oven. Cool completley. Chill in fridge to help cookies firm up. Store in covered container.

Cookies to celebrate a Bills win and National Homemade Cookies Day

I was alerted on Twitter that today is National homemade cookies day.. which is certainly a day to be celebrated… it was also a Bills victory day, something to be even more celebrated. Nothing to fancy, just browned butter chocolate chip cookies. You know what else, Bills win Christine is so much better than Bills lose Christine. (Just ask my hubby)

These candles below were given to me by my dear college friend, Patty. The Bills are 3-0 when I light them on game day. Just saying 😉

Remember to scoop your flour from your flour bag into your measuring cup so you get the right amount. Also, chill the cookies for a few hours or flash chill them (I stuck em in the freezer for an hour to speed up the process). Preheat your oven to 350 degrees for 20 minutes

  • Ingredients list
  • 1 cup butter, browned
  • 3/4 cup sugar
  • 1 cup brown sugar, firmly packed into measuring cup
  • 2 eggs
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 1 tbs cornstarch
  • 3 1/4 cups flour
  • 1/4 tsp salt
  • 1/2 cup chocolate chips
  • 1 cup mini chocolate chips

Directions – in a pan, heat butter over low-medium heat, stirring occasionally until there are little brown specs in the bottom (it might take 10 minutes or so). Cool 10 minutes. Pour in a bowl, add sugar and brown sugar. Mix in eggs and vanilla. Blend in dry ingredients. Fold in chips. Scoop out 2 tbs dough. Chill a few hours. Preheat oven to 350 degrees for 20 minutes before baking. Line a cookie sheet with parchment paper. Stagger cookies. Bake 12 to 13 minutes. They will be a little gushy on top. They will firm up as they cool. Cool completely. Store in covered container.
