Sugar cookies

These sugar cookies use vegetable oil instead of butter or crisco.  I wanted to make something quick for work today and thought these would work.  I did freeze the dough for a few hours before baking to keep the cookies from spreading too much.   I only used 3 cups of flour, I may use a little more next time and add some cornstarch too.

I ran out of frosting so one cookie got melted hershey kisses!

Remember to scoop your flour from your flour bag so you get the right amount.  Freeze the individual doughs for an hour or so before baking.   Preheat oven to 350 degrees before baking.  And only bake these 9 to 11 minutes, no longer.

  • Ingredients list
  • 1 cup vegetable oil
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 tsp vanilla
  • 3 to 3 1/2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • Extra sugar

Directions – in a bowl, combine sugar and vegetable oil.  Add eggs and vanilla.  Blend in flour, baking soda and salt.   Scoop out individual doughs and form tall mounds.  Freeze and hiur or to.  When ready to bake, preheat oven to 375 degrees.  Line a cookie sheet with parchment paper and stack cookies on sheet.  Bake 9 to 11 minutes, no longer.   Pop in fridge to firm up and cool, as cookies may be gushy.

  • Frosting ingredients
  • 4 tbs butter, melted
  • 2 cups powdered sugar
  • 1 tsp vanilla
  • Heavy cream/milk

Combine butter, powdered sugar and vanilla.  Add enough heavy cream or milk to get the consistency you want.  You may need to add more powdered sugar.  Frost cookies. 

I added some buffalo bills colored sugar!

Store in covered container.

Yellow cake mix- sugar cookie bars with fudge swirl frosting

For Championship week Friday. I present yellow cake mix sugar cookie bars with fudge swirl frosting.  How did i get the frosting to swirl?  I pressed chocolate chips on top of the bars immediately after taking them out of the oven and then I was in a hurry, so I frosted them with vanilla frosting while the bars were warm and the melted chocolate chips swirled in with the frosting!

These are super easy.  You can use any cake mix you want and any flavor frosting you want.  I baked these for 25.  I would probably go a little less next time, checking them around 20 minutes.

  • Cake mix, any flavor
  • Sugar cookie mix
  • 1 cup butter, melted
  • 2 tsp vanilla
  • 3 eggs
  • Chocolate chips (opt)

Directions – preheat oven to 350 degrees.  Spray a 9×13 rectangular pan with baking spray. Set aside.  In a bowl, combine cookie and cake mix.  Blend in butter, eggs and vanilla.  Press evenly into prepared pan.  Bake 20 to 23 minutes.  Remove from oven.  Immediately, gently press chocolate chips on top, like below.

Cool completely.  Or frost while warm and get fudge swirl frosting!

  • 6 tbs butter, softened
  • 3 cups powdered sugar
  • 1 tsp vanilla
  • Milk

In a bowl, blend powdered sugar and butter.  Add vanilla.  Mix in milk, one tbs at a time, until you get the consistency you want.  Frost bars.

XL puffy frosted sugar cookies

A stress free week 18 for the Bills against the Patriots.  I can’t remember the last no stress regular season game, but it was a nice break before the playoffs begin.  I made some black cocoa snowballs yesterday and since not everyone i work with likes chocolate, I made these large sugar cookies.  

  • Ingredients list
  • 1 cup butter, melted
  • 1 1/4 cups sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 1 yolk
  • 1 tsp vanilla
  • 1 1/2 cups flour
  • 1 1/2 cups cake flour
  • 1 tsp baking soda
  • 1 tsp salt
  • Extra sugar

Directions – in a bowl, combine butter, sugar and brown sugar.  Blend in eggs, yolk and vanilla.  Fold in dry ingredients.  Divide into 12 equal pieces and roll into balls, then roll in extra sugar.  Chill a few hours.  Preheat oven to 375 degrees.  Line a cookie sheet with nonstick baking liners. Stagger 6 cookies on a sheet.  Bake 12 to 13 minutes.  Do not bake longer than 13 minutes, or bottoms of cookies may burn.  Cool completely.

  • 2 cups powdered sugar
  • 3 tbs heavy cream
  • 1 tsp vanilla

Directions – in a bowl, blend butter and powdered sugar.  Mix in heavy cream and vanilla.  Frost cookies

Store in covered container.

Big game for the Bills – against the Titans on Monday Night Football. So I upped my treat game -a mini Oreo stuffes inside a sugar cookie stuffed inside a brownie, with a chocolate blobby of frosting on top., why the frosting? I do not know. It seemed like the right call. Is it necessary? I believe the answer is yes.

  • 2 boxes of brownie mix, plus ingredients listed on the boxes
  • Sugar cookie mix, plus ingredients listed on box/bag
  • Mini oreos

Directions – preheat oven to 350 degrees for 20 minutes. Line a 9×13 pan with tin foil and spray with baking spray. In a bowl, combine brownie mixes and ingredients listed on boxes. Spread evenly into prepared pan. In another bowl, combine sugar cookie mix and ingredients on box. Scoop put 1 tbs cookie dough and cover a mini Oreo. Repeat process. I think I did about 16 of these. Gently press into brownie dough in pan in 4 rows of 4. Bake 28 to 35 minutes, or until a toothpick inserted in center of brownie dough comes out with a few moist crumbs. Cool completley. Cut. You can frost these if you would like. Store in covered container.
