Crushed Oreo Snowball cookies with mini chocolate chips

I had (and still have) a large container of oreos and wanted to use some up, so I crushed up some and popped them in a snowball cookie recipe.  They came out pretty good.  These are super easy to make. 

Remember to scoop your flour and powdered sugar from their respective containers into your measuring cup so you get the right amount.  Also, preheat the oven to 375 degrees before baking cookies.

  • Ingredients list
  • 1 cup butter, softened
  • 1/2 cup crisco
  • 3 tsp vanilla
  • 1/2 tsp salt
  • 3/4 cup powdered sugar
  • 3 cups flour
  • 1 tbs water
  • 1 1/2 to 2 cups finely crushed oreos
  • 1 to 2 cups mini chocolate chips

Directions – in a bowl, cream butter and crisco.  Add vanilla and salt.  Mix in powdered sugar.  Blend in flour then Oreos.  Fold in chips.  Scoop put 1 1/3 tbs dough.   Chill a few hours.  Preheat ovent to 375 degrees.  Bake 9 to 10 minutes (no longer).  Sprinkle hot cookies with powdered sugar or top with melted milk chocolate.  Store in covered container.

Oreo Brookie brownies

I could not decide between making brownies or chocolate chip cookies, so I combined them and put a layer of oreos in between them and baked them up. I thought of putting melted chocolate on top, but decided that would be too much. 😀

Remember to preheat your oven to 350 degrees for 20 minutes before baking. Also, scoop your flour from your flour bag into your measuring cup so you get the right amount. Do the same drill with your baking cocoa.

  • Brownie ingredients
  • 2 1/2 cups sugar
  • 2/3 cup vegetable oil
  • 1/2 cup milk
  • 2 eggs
  • 1 tsp vanilla
  • 2 cups flour
  • 1 cup baking cocoa
  • Oreos

Directions – preheat oven to 350 degrees. Line a 9×13 baking pan with parchment paper and spray with baking spray. In a bowl, combine sugar, oil, and milk. Beat in eggs and vanilla. fold in dry ingredients. The mixture will be thick. Spread into bottom of prepared pan. Layer with oreos. Set aside

  • Chocolate chip layer
  • 1/2 cup butter softened
  • 1/4 cup butter flavor crisco
  • 3/4 cup brown sugar
  • 1/4 cup sugar
  • 1 egg
  • 1 egg yolk
  • 1 tsp vanilla
  • 1 3/4 cups flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 cup chocolate chips

Directions – in a bowl, combine butter, crisco, sugar, and brown sugar. Add egg, yolk, and vanilla. Blend in dry ingredients. Mix in chips. I grabbed handfuls of dough and flattened them like a pancake and placed them on top of oreo layer.

Bake in 350 degrees in a preheated oven for 15 minutes. Cover with tin foil to keep edges from getting too brown. Bake another 20 to 25 minutes (or possibly longer). Try not to let the edges get too brown. I would rather underbake than overbake. If you feel it is underbaked after you cut brownies up, you can chill them overnight in the fridge. That helps firm them up.

Chocolate cheesecake with an oreo crust

I asked Rob what he wanted for Thanksgiving dinner this year, and he said lasagna. He despises turkey and the rest of the Thanksgiving fixings, so the last few Thanksgivings I have worked and we have had lasagna for our dinner on 🦃day. And when it came to dessert, Rob requested chocolate cheesecake. I think I do pretty well, even though I am new to making cheesecakes. (Cheesecake factory has nothing to worry about though) 😉

I pre-baked the oreo crust for 10 minutes because that is what I see people recommending online for cheesecake crusts. Something about keeping the crust from getting soggy.

  • Crust ingredients
  • 24 oreos, finely crushed
  • 1/4 cup butter, melted

Preheat oven to 300 degrees. Line the inside of a 10 inch springform pan with tin foil on the bottom and halfway up the sides. In a bowl, combine crumbs and butter. Press into bottom of prepared pan. Bake 10 minutes. While crust is in the oven, prepare cheesecake.

  • 24 ounces cream cheese, softened (I used neufchatel, which is softer, less calories, and lower fat)
  • 14 ounce can condensed milk
  • 12 ounce semisweet chocolate chips, melted
  • 4 eggs
  • 1 tsp vanilla

In a bowl, beat cream cheese smooth. Add condensed milk. Blend in melted chocolate. Beat in one egg at a time. Stir in vanilla. Pour over crust. Bake 70 minutes at 300 degrees. Remove from oven. Cool completely. Store covered in fridge.

Chocolate Oreo Cookies

I was looking to make something chocolate, but wanted the cookies to be a little different, so I decided to add some finely crushed oreos. And added some white frosting. Rob gave me a thumbs up. Always good to get a thumbs up from your chief taste tester!

Remember to scoop your flour from your flour bag into your measuring cup. These don’t really spread. I opted to keep them puffy and mound-like, but you can slightly flatten them if you want. Don’t bake these longer than 11 minutes. I know they seem undercooked, but they will firm up as they cool. If you bake them too long, they will be dry.

  • 1/2 cup butter, softened
  • 1/4 cup sugar
  • 3 tbs brown sugar
  • 1/4 cup powdered sugar
  • 1/3 cup vegetable oil
  • 1 egg
  • 1 tsp vanilla
  • 1 cup flour (scooped from your flour bag into your measuring cup)
  • 1/4 cup baking cocoa
  • 3 tbs cornstarch
  • 1/4 tsp baking powder
  • 1/4 tsp cream of tartar
  • 24 oreos, finely crushed

Directions – cream butter, sugar, brown sugar and powdered sugar. Add eggs, oil and vanilla. Blend in dry ingredients and crushed oreos. Scoop out 1/4 cups dough and form tall mounds. Chill a few hours. Preheat oven to 350 degrees for 20 minutes. Line a cookie sheet with parchment paper. Stagger cookies on sheet. Bake 9 to 11 minutes (no longer than 11). Cool completely.

  • Frosting ingredients
  • 1/4 cup butter, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla
  • 1 tbs cream (or more)

Cream butter and powdered sugar. Add vanilla and cream. Blend well. Frost cookies. Store in covered container.

Peanut butter oreo cookies

I had some extra crushed oreos leftover from my oreo topped chocolate chip cookie recipe, so I needed to make another treat to use them up. I figured peanut butter cookies was a good option.

  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 1 egg

Directions – cream crisco, peanut butter, brown sugar and sugar. Add egg and vanilla. Blend in dry ingredients. Mix in crushed oreos. Scoop out 1/4 cups dough. Chill a few hours. Preheat oven to 375 degrees for 20 minutes. On a cookie sheet lined with parchment paper, stagger cookies. Bake 12 to 14 minutes. Cool completely. I felt the bottoms of the cookies were a little too dark, so covered them in melted milk chocolate and let the chocolate set. Store in covered container.

Brownies stuffed with a whole lotta stuff

These brownies are a creation of my hubby, who discovered “junk bars” at a local cafe. They seemed to be a layer of brownies, topped with magic cookie bars, oreos, marshmallows and then another layer of brownies. So I went to work and tried to make the same thing.

These are very thick. They took 45 to 50 minutes to bake.

A reminder to scoop your flour from your flour bag into your measuring cup so you get the right amount. Also preheat your oven for 20 minutes before baking so it cycles to the right temp.

  • Brownies ingredients
  • 1 cup butter, melted
  • 1 cup baking cocoa
  • 2 cups sugar
  • 3 eggs
  • 1 tsp vanilla
  • 1/2 tsp salt
  • 1 1/4 cups flour

Directions – line a 9×13 pan with tin foil and spray with baking spray. in a bowl, combine melted butter, baking cocoa and sugar. Mix in eggs, one at a time, then vanilla. Blend in flour and salt. Spread half of mixture evenly in bottom of prepared pan.

  • Magic cookie bar layer
  • 1 cup butter, softened
  • 1 cup brown sugar
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 1/2 cups flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup graham cracker crumbs
  • 3/4 cup coconut
  • 1 cup chocolate chips
  • Pieces of oreos
  • Marshmallows

Directions – preheat oven to 350 degrees. cream butter, sugar and brown sugar. Add eggs and vanilla. Blend in dry ingredients. Add graham cracker crumbs. Blend in chips and coconut. Spread evenly over brownie dough.

Top with pieces of marshmallows and oreos.

Then drop blobs of remaining brownie batter on top.

Bake at 350 degrees for 45 to 50 minutes (toothpick inserted in center comes out with moist crumbs) cool and top with melted chocolate.

Store in covered container.

This actually was the second cake I made for Rob’s birthday. The chocolate mid cake was a disaster.. took forever to cook and looked like this. Not acceptable for a cake

This cake will have another purpose as a crust for a cheesecake

So after the above pictured fail, I made a second cake for Rob after I worked out on his actual birthday. Got it in the oven at 510 am. He loved it. It is pretty easy to make. It is quite dense thanks to greek yogurt and has a fudgy frosting and is topped with pieces of oreos. I wanted to finely grind them up in my food processor, but ran out of time.

  • Ingredients list
  • 1 chocolate cake mix
  • 3.4 ounce instant chocolate pudding mix
  • 4 eggs
  • 1/2 cup water
  • 3/4 cup oil
  • 1 cup Greek yogurt
  • 1 cup chocolate chips

Directions – preheat oven to 350 degrees for 20 minutes. Spray a bunt cake pan with baking spray. In a bowl, combine cake mix and pudding mix. Blend in water, oil, and Greek yogurt. Add chocolate chips. Mixture will be thick. Pour into prepared pan and spread evenly. Bake 30 to 40 minutes in preheated oven, until a toothpick inserted in center comes out with a few moist crumbs. Cool 10 minutes in pan. Invert onto plate. Cool completely.

  • Fudge frosting ingredients
  • 8 tbs butter
  • 1/2 cup baking cocoa
  • 6 tbs evaporated milk
  • 3 to 4 cups powdered sugar
  • 1 tsp vanilla
  • Milk

Directions – in a saucepan, over low -medium heat, combine butter, baking cocoa and evaporated milk, stirring occasionally, just until it boils. Remove from heat. Add vanilla. Mixture will be thick and clumpy. Add 3 cups powdered sugar. Again, mixture will be clumpy. Add a tbs or two of milk. Add more milk or more powdered sugar until you get the texture you want. Frost cooled cake. Top with crushed oreos.

Oreo magic cookie bars (hello dollies)

My hubby, who is certainly not a huge fan of coconut, asked if I could make “junk bars,” a treat he saw at a local bakery. I had no idea what they were. He said they had a brownie oreo crust and had coconut. A Yahoo search (yup I utilize yahoo) turned up nothing. So I wondered if he meant Hello dollies/magic cookie bars. So instead of a gram cracker crust, I used an oreo crust. They are very easy to put together. And you can have a very sweet treat in no time!

I used a food processor to crush the oreos. You could also put them in a freezer bag and crush them with a rolling pin.

  • Ingredients list
  • 20 oreos, finely crushed
  • 4 tbs butter, melted
  • 1/2 cup white chocolate whips
  • 1/2 cup semisweet chocolate chips
  • 1/2 cup milk chocolate chips
  • 14 oz can condensed milk (no substitutions)
  • 1 cup coconut
  • 12 oreos, finely crushed

Directions – preheat oven to 350 degrees. Line an 8×8 pan with tin foil. In a bowl, combine butter and 20 crushed oreos. Press into prepared pan. In a bowl, combine the 3 kinds of chips, condensed milk, coconut, and the remaining 12 crushed oreos. Spread over crust. Bake 25 to 28 minutes. Cool completely. Store in covered container.

When it’s too hot to turn on the oven, you make no bake peanut butter bars

After back to back days of 90+ degrees, I turned on the AC (the house was 81 degrees). I did not want to turn on the oven to bake, so I opted to make no bake peanut butter bars. The triple chip chocolate cookies will have to wait to be baked another day.

  • Oreo crust ingredients
  • 20 oreos,finely crushed
  • 1 stick of butter, melted

Directions – line an 8×8 pan with tinfoil and spray with butter spray. combine oreos and butter and press into prepared pan.

  • Peanut butter layer
  • 1 1/2 cups crushed gram crackers (approx 1 sleeve of crackers)
  • 1 1 /2 cups powdered sugar
  • 1 cup peanut butter
  • 1 stick of butter, melted

In a bowl, combine ingredients and blend smooth. Spread over oreo crust.

Topping – in a microwave safe bowl, combine 1 cup milk chocolate chips and 1 tbs vegetable oil. Microwave in 30 second increments until you can stir smooth. Spread on top of peanut butter layer. Chill in fridge and cut. Store in covered container.

Red velvet oreo bars topped with fudge and oreos

I wanted to whip up something for work tomorrow morning. I saw this box of red velvet cake mix and decided make it into bars with a fudge topping and crushed oreos. I also thought about adding m&ms, but that might have been a bit much! You can use whatever cake mix flavor you want.

  • Bars ingredients list
  • 1 red velvet cake mix
  • 2 eggs
  • 8 tbs butter, melted

Preheat oven to 350 degrees for 20 minutes so it cycles to the right temp. Line a 9×13 pan with tin foil and spray with baking spray. In a bowl, combine cake mix, eggs and butter. Press evenly into prepared pan. Bake 15 minutes. (No longer). While bars and baking, make the fudge topping

  • 1/3 cup evaporated milk
  • 1 1/2 cups sugar
  • 2 cups milk chocolate chips
  • 8 tbs butter
  • 1 tsp vanilla

In a saucepan, combine butter, sugar and evaporated milk. Cook, stirring occasionally, to a boil. Remove from heat. Add chips and stir until melted. Blend in vanilla. Pour over cooled bars.

Sprinkle with crushed oreos.
