Such a big Bills win was worthy of not one, but 2 treats. Plus not everyone loves peanut butter, so i present an alternative – fudgy brownies with chocolate chips.
Ingredients list
10 tbs butter
1 1/4 cups sugar
3/4 cup plus 2 tbs unsweetened baking cocoa
2 eggs
1 tsp vanilla
1/2 cup flour
1 cup chocolate chips
Directions – preheat oven to 350 degrees. Line an 8×8 pan with tin foil and spray with baking spray. In a microwave safe bowl, melted butter, sugar and cocoa for 45 seconds. Stir smooth. Blend in eggs and vanilla. Add flour. Mix in chips. Evenly spread into prepared pan. Bake 20 minutes (toothpick inserted in center comes out with a few moist crumbs) cool completely. Store in covered container.
Today’s Friday football treats is a request from my coworker, Eric, who’s celebrating a birthday today. They are a version of Little Debbie brownies, which I loved as a child. These even have rainbow chips on top (shout out to Price Rite for having them)
I made these amid a crazy game three of the ALCS between the Yankees and Guardians. What a nutty last few innings – the Judge and Stanton home runs. The Noel and Fry home runs. Rob and I are Yankees fans (but he is more invested than me). He was quite mad afterwards and broke into hot brownies (which I warned him against). He mangled them, as you can see below.
Remember to scoop your flour and baking cocoa from your containers into measuring cups so you get the right amount. Also, preheat your oven for 20 minutes so it cycles to the right temp. If you don’t have milk chocolate chips, you can use all semisweet for the ganache.
Brownies ingredients list
2 1/2 sticks of butter, melted

2 yolks
2 tbs corn syrup
1 1/3 cups flour
2 tbs cornstarch

Directions – preheat oven to 350 degre3s. Line a 9×13 cake pan with parchment paper and spray with baking spray. In a bowl, mix butter, sugar, brown sugar, and baking cocoa. Add eggs, one at a time, yolks, corn syrup and vanilla. Blend in dry ingredients. Mixture will be very thick. Evenly spread into pan. Bake 30 to 40 minutes (until toothpick comes out with a few moist crumbs). Cool completely.
Ganache ingredients
1 cup semisweet chocolate chips
1/2 cup milk chocolate chips
1/2 cup heavy cream
Directions – in one microwave safe bowl, heat chips for 1 minutes. In another microwave safe bowl, heat cream for one minute. Combine cream and chips. Stir smooth. Let sit 5 minutes. Spread on cooled brownies and sprinkle with rainbow chips or m&ms

A simple, easy treat for nfl week 6 – little Debbie brownie cookies, frosted, with rainbow chips on top. These are made with a brownie mix and a few extra ingredients. They might not need frosting, but I think everything is better with frosting! I don’t recommend baking these longer than 10 minutes. They seem undone on top, but pop them in the fridge to firm them up before frosting them and keep them in the fridge for a few hours. Better a gushy cookie than a dry, overbaked one, right?

Ingredients list
1 brownie mix (18 oz or 18.2 oz)

2 tbs water
1 tsp vanilla
1 tbs chocolate syrup
In a bowl, combine all ingredients. If you want a thicker frosting, add additional powdered sugar. Feost cookies. Sprinkle with rainbow chips, sprinkles or m&ms. Store in covered container.

Oh, and I do not believe in premature baking of the victory treats. They can not be made until the victory is complete. The football gods must not be angered. So these will be brought in Monday. A simple, super chocolate cookie made using a brownie mix. They do not need to be frosted, but I chose to.. and I topped them with m&ms.
I chilled the individual mounds of dough to keep them from spreading too much. Also wait until the cookies are completely cooled before frosting. I was a little impatient with the final batch and things got a little messy!
Ingredients list
2 brownie mixes (each one I used was 18.2 oz)
1/4 cup baking cocoa (scooped from cocoa container into your measuring cup so you get the right amount)
1/2 cup butter, melted
4 eggs
2 tbs corn syrup, honey, chocolate syrup, (or hot fudge at room temp)
Directions – in a bowl, combine ingredients. Scoop out 2 tbs of dough (dough is soft). Place individual doughs in fridge for a few hours. Preheat oven to 375 degrees. Just before baking, i formed the doughs into tall mounds. Line cookie sheet with nonstick baking liners. Stagger cookies. Bake 8 to 10 min (no longer)
Frosting ingredients
2 cups powdered sugar (scooped from container into measuring cup)
1 /2 cup baking cocoa
2 to 6 tbs water (depending on consistency you want)
In a bowl, combine ingredients. Frost completely cooked cookies. Top with m&ms. Store in covered container.

To celebrate the start of the NCAA basketball tournament as well as the Division 3 frozen 4 (which is being held 10 minutes from where we live), I made cosmic brownie cookies. They are like the little debbie cosmic brownies, which I loved as a child, in cookie form. I used dark chocolate chips and black cocoa, but you can certainly use semisweet chips and regular baking cocoa.
Reminders – scoop your flour from your flour bag into your measuring cup so you get the right amount. I recommend scooping out and freezing individual dough mounds before baking. Preheat oven to 350 degrees for 20 minutes once you are ready to bake.

1/4 cup warm water

I loved Little Debbie Cosmic Brownies (and Oatmeal Cream pies, too) growing up. With the brownies, I always thought the topping was magical, so delicious. I’m not sure how I would like the cosmic brownies now (processed foods have not been my thing for a long time), so I present to you homemade version. These have cornstarch in them to make them softer. I err on taking them out a little earlier (about 20 minutes) than too late because a dry brownie is a grave sin.
Remember to spoon your flour and baking cocoa from your flour bag and cocoa container into your measuring cups so you get the right amount. Pouring directly into the measuring cup would pack in the flour, and that makes for a dry treat. I also preheated my oven to 350 degrees for 20 minutes before baking so it cycles to the right temp.

1 1/2 cups chocolate chips (I combined semisweet and milk chocolate)
1/2 cup heavy cream
In a microwave safe bowl, microwave chips and milk in 1 minute increments until you can stir smooth. Stir for a few minutes to thicken up. Spread over cooled brownies. Sprinkle with mini m&ms. Let ganache set. Cut and store in covered container. I put mine in the fridge to help with the ganache setting.

I got an unusual request from Rob. Chocolate cupcakes topped with chocolate frosting and coconut. Normally, coconut is not his bag.. but luckily I had coconut in my stash of baking items (it is rare I am missing anything). So I made a small batch (5) of jumbo brownie cupcakes, frosted them and sprinkled them with coconut. Not sure what to do with the rest of the coconut. Of course, you do not have to use coconut. And you can use regular size cupcake pans and liners, but they will cook in less time.

Ingredients
1 stick butter
4 oz unsweetened chocolate (I used a bar of baker’s and broke it into pieces
1/2 cup sugar
1/2 cup brown sugar
2 eggs
1 tsp vanilla
1/2 cup flour
Directions – preheat oven to 350 degrees for 20 minutes. Line a jumbo cupcake pan with jumbo cupcake liners. in a microwave safe bowl, melt butter and unsweetened chocolate in 40 second increments until you can stir smooth. Let cool 5 to 10 minutes. Add sugar and brown sugar. Mix in eggs and vanilla. Add flour and stir until just blended. Spoon 2/3 cup batter into prepared pans for jumbo cupcakes. Spoon 1/3 into regular size cupcakes. Jumbo cupcakes take 18 to 22 minutes to bake. Regular take 15 to 19 minutes. (A toothpick inserted in center comes out with a few crumbs) The middles might seem a little soft, but they will continue to cook in the pan after being removed from oven. I always err of the side of underbaking. Cool completely.
Frosting ingredients
1/2 stick butter soft
2 tbs unsweetened baking cocoa
1 1/2 cups powdered sugar
2 tbs milk
Blend butter and baking cocoa. Add powdered sugar. Add milk. You can add more powdered sugar and /or milk to get the consistency you want. Frost cupcakes. Sprinkle with coconut.

After some very unusually warm days, it cooled off today, so I thought it would be a good day to bake cookies. I went with a chocolate cookie dough using dark, semisweet and milk chocolate chips (I have a huge bag of each), and mini m&ms. I thought, perhaps, of drizzling melted hershey kisses on top, but not sure that is needed.

Directions – combine butter and sugar. Add eggs, vanilla, and water. Blend in dry ingredients. Mix in chips. Scoop out 1/4 cups of dough. You may need to flour your hands for this – form tall mounds. Chill mounds of dough for a few hours. Preheat oven to 350 degrees for 20 minutes. Line a cookie sheet with parchment paper. Stagger cookies on sheet. Bake 11 minutes. Because these are chocolate, it is hard to tell when they are done. I err on the side of taking cookies out early bc they will continue to cook on the sheet after being removed from the oven. They will firm up and be fine once completely cooled. Plus, gushy cookies are not bad!
