Chocolate chip cutout cookies

Wrapping up my Christmas cookie cutouts with a chocolate chip version. These are awesome and a fun variation of cutouts. Use mini chocolate chips to make it easier to use your cookie cutters!

Honestly, I make sandwich cookies with cutouts because my decorating skills are a disaster!

Remember to scoop your flour from your flour bag into your measuring cup so you get the right amount. Also, preheat your oven to 350 degrees for 20 minutes before baking so it cycles to the right temp.

  • Ingredients
  • 1 cup butter, softened
  • 1 cup sugar
  • 1 tbs water
  • 2 eggs
  • 1 tsp vanilla
  • 4 cups flour
  • 2 tsp cornstarch
  • 1/8 tsp baking powder
  • 1 cup mini chocolate chip

Directions – preheat oven to 350 degrees. Line cookie sheets with parchment paper. In a bowl, cream sugar and butter. Add eggs, water and vanilla. Slowly blend in dry ingredients. Fold in chips. Sprinkle your countertop with flour. Roll out the dough and cut. Place cutouts on prepared sheets. Bake 6 to 8 minutes, depending on thickness of cookies. Do not bake longer. Cool and frost or use frosting between 2 cookies for sandwich cookies.

Magic cookies (hello dollies cookies)

This is a simple recipe – only 5 ingredients (4 if you want to omit the walnuts). They are like magic cookie bars (or Hello dollies as I call them), but in cookie form. My advice is do not bake them longer than 10 minutes and remember to leave them on the cookie sheet for 10 minutes before removing them so they firm up a bit.

  • Ingredients list
  • 4 sheets of graham crackers finely crushed
  • 1 cup chocolate chips (you can also use different flavors, i.e., milk, white etc)
  • 1/2 cup finely ground walnuts (or other nuts or you can omit)
  • 1 1/2 cups coconut
  • 1 can condensed milk (14 oz)

Directions – preheat oven to 350 degrees. Line cookie sheet with parchment paper. In a bowl. Combine crushed graham crackers, chips, nuts, coconut and condensed milk. Scoop out 1/3 cups of dough (I used a cookie scoop). I got nine cookies. Stagger on prepared cookie sheet. Bake 10 minutes (no longer). Let set for 10 minutes. Remove and cool completely. Store in covered container.

Browned butter chocolate chip bars

Tuesday is the annual day of giving, which encourages people to do good. Tuesday is also the start of V Week at ESPN to raise money for cancer research. If you can help, go to v.org to donate.

For part of my effort to put good into the world, I made browned butter chocolate chip bars. Very easy to make. Remember to preheat your oven to 350 degrees for 20 minutes before baking. Scoop your flour from your flour bag into your measuring cup so you get the right amount.

Some decided to cut into the bars

To brown your butter, put it in a pan and melt over low heat, keep cooking it until you see light brown specs. Then immediately remove from heat.

  • Ingredients
  • 1/2 cup butter, browned and cooled 10 minutes
  • 1 cup brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 cup flour
  • 1/2 tsp salt
  • 1 cup chocolate chips

Directions – line and 8×8 pan with tin foil and spray with baking spray. Preheat oven to 350 degrees. In a bowl, combined browned butter, brown sugar, egg, and vanilla. Blend in flour and salt. Fold in chips. Spread evenly into prepared pan. Bake 20 minutes (no longer). Cool completely. Store in covered container.

What the Puck? It’s NHL Opening Night! Happy Hockey!

In honor of NHL opening night tomorrow (Tuesday), I made flourless brownie “pucks” covered in melted chocolate. I baked flourless brownies in a 9×13 pan. Let them cool, used the top of a glass to cut out pucks, then used scraps of the remaining dough to form mini pucks and topped them with melted chocolate. Happy hockey!

  • Ingredients list
  • 10 tbs butter
  • 2 cups dark chocolate chips
  • 1 1/2 cups sugar
  • 4 eggs
  • 1 tsp vanilla
  • 4 tbs baking cocoa
  • 6 tbs cornstarch

Directions- line a 9×13 baking pan with tin foil and spray with baking spray. Preheat oven to 350 degrees for 20 minutes before baking. In a microwave safe bowl, combine chips and butter and microwave in 45 second increments until you can stir smooth. Add sugar. Mix in eggs, one at a time. Stir in vanilla. Fold in cocoa and cornstarch. Spread evenly into pan. Bake 20 to 25 minutes – toothpick inserted in center comes out with a few moist crumbs. Cool completely. Spray the rim of a round glass with Pam and cut out pucks.

Top with melted chocolate. Let set. Store in covered container.

Tollhouse cake mix bars

I had 2 yellow cake mixes that are expiring in a few days, so I decided to whip them up and make them into tollhouse bars and frost them with a simple vanilla frosting. Of course, I frosted them when they were warm, so they will be gushy. I think these will go over well at work tomorrow

These use 2 cake mixes, 4 eggs, chocolate chips, 1/2 cup flour, 1 tsp vanilla, and 12 tbs of butter, melted.

  • Ingredients
  • 2 yellow cake mixes
  • 12 tbs butter, melted
  • 1/2 cup flour (scooped from your flour bag into your measuring cup)
  • 4 eggs
  • 1 tsp vanilla
  • 2 cups chocolate chips

Directions – spray a 9×13 pan with baking spray. Preheat oven at 350 degrees for 20 minutes so it cycles to the right temp. In a bowl, blend cake mixes, flour, melted butter, eggs and vanilla. Blend in chips. Spread evenly into pan. Bake 20 to 25 minutes (edges will be golden). Cool completely. Store in covered container.

Puffy frosted chocolate cake mix cookies

These are the exact opposite of my recently posted flatter than pancakes milk chocolate chip cookies. These chocolate cake mix cookies do not spread at all. If you want them flattened, you can do just that… put some flour on your fingers before doing so. 🙂

These are super easy. Just a cake mix, melted butter, and eggs. I tossed in 1 cup of chocolate chips. I also frosted them. But you could sprinkle powdered sugar on top of warm cookies instead, if you prefer.

Preheat your oven to 350 degrees before baking so it cycles to the right temp. Don’t overcook these either. You do not want a dry cookie. They will continue to bake on the cookie sheet after removed from the oven.

  • Ingredients
  • 15.5 oz chocolate cake mix (i used devil’s food)
  • 5 tbs butter, melted
  • 2 eggs
  • 1 cup chocolate chips

Directions – preheat oven to 350 degrees for 20 minutes before baking. In a bowl, combine cake mix, melted butter and eggs. Stir in chips. Line a cookie sheet with parchment paper, scoop out 3 tbs of dough and form mounds. Stagger cookies on prepared sheet – a row of 2, a row of 1, a row of 2, a row of 1, a row of 2. You can fit 6 or 8 on a sheet, depending on the size of a sheet. Bake 10 to 14 minutes. You don’t want the bottoms too brown. Cookies will still continue to bake on sheet after removed from oven. Cool completely.

  • Frosting ingredients
  • 3 tbs butter softened
  • 3 tbs baking cocoa
  • 1 tbs corn syrup (or honey)
  • 1 cup powdered sugar
  • Milk

Directions – combine butter and cocoa. Add corn syrup. Mix in powdered sugR. Add milk, 1 tbs at a time, until you get the consistency you want. Frost cookies. Store in covered container.

When it’s too hot to turn on the oven, you make no bake peanut butter bars

After back to back days of 90+ degrees, I turned on the AC (the house was 81 degrees). I did not want to turn on the oven to bake, so I opted to make no bake peanut butter bars. The triple chip chocolate cookies will have to wait to be baked another day.

  • Oreo crust ingredients
  • 20 oreos,finely crushed
  • 1 stick of butter, melted

Directions – line an 8×8 pan with tinfoil and spray with butter spray. combine oreos and butter and press into prepared pan.

  • Peanut butter layer
  • 1 1/2 cups crushed gram crackers (approx 1 sleeve of crackers)
  • 1 1 /2 cups powdered sugar
  • 1 cup peanut butter
  • 1 stick of butter, melted

In a bowl, combine ingredients and blend smooth. Spread over oreo crust.

Topping – in a microwave safe bowl, combine 1 cup milk chocolate chips and 1 tbs vegetable oil. Microwave in 30 second increments until you can stir smooth. Spread on top of peanut butter layer. Chill in fridge and cut. Store in covered container.

Easy chocolate snowball cookies

Chocolate snowball cookies

These are simple and will satisfy any sweet tooth. They use a sugar cookie mix (17.5 oz), flour, baking cocoa, an egg and butter. I stuffed some with hershey kisses.

  • Ingredients
  • 1 sugar cookie mix (17.5 oz)
  • 1/4 cup flour
  • 1/4 cup baking cocoa
  • 1/2 cup butter, melted
  • 1 egg
  • 1 tsp vanilla
  • 1/2 cup mini chocolate chips
  • Hershey kisses, if you want stuffed cookies
Cookie monster at it again!

Directions – preheat oven to 375 degrees for 20 minutes. Line a cookie sheet with nonstick baking liners or parchment paper. In a bowl, combine cookie mix, butter, egg, flour, baking cocoa and vanilla. Mix in chips. Scoop out 1 to 2 tbs cookie dough and roll into a ball. You can leave them plain or stuff them with kisses. Place on prepared sheet. Bake 10 minutes (no longer). Immediately after removing from oven, Sprinkle with powdered sugar. Cool completely. Sprinkle with more powdered sugar. Store in covered container.

These sugar cookies are awesome.. so easy to make and so soft. And no chilling of the dough is necessary. These cookies are my all-time favorite to make, bringing back memories of making cutouts with my mom. I am terrible with decorating, so these jack o lanterns are one of the few things people can decipher. I started out frosting some and decorating with mini yellow and green m&ms. That was too time-consuming, so I sprinkled a handful on top of some other cookies instead. Then, to speed up the process, I made sandwich cookies.

Remember to scoop your flour from your flour bag into your measuring cup so you get the right amount. And, preheat your oven for 20 minutes before baking so the oven cycles to the right temp.

A handful of m&ms
  • Ingredients
  • 1 1/2 cups crisco
  • 1 1/3 cups sugar
  • 4 eggs
  • 1 tsp vanilla
  • 4 cups flour
  • 1 tsp baking powder

Preheat oven to 350 degrees for 20 minutes before baking. Line a cookie sheet with non-stick baking liners. In a large mixing bowl, cream crisco and sugar 3 to 4 minutes. Blend in eggs and vanilla. Slowly blend in dry ingredients. Lightly flour your countertop. Roll out dough to desired thickness (I like mine thick), and cut. Place on prepared cookie sheer. Bake 8 or 9 minutes. (Cookies will be light, but no doughy. Do not overcook). Cool completley.

  • Frosting ingredients
  • 3 tbs melted butter
  • 4 cups powdered sugar
  • Milk (enough to get the consistency of frosting you want)
  • 1 tsp vanilla

Blend together. Frost or fill cookies. Store in covered container.

Congo/chocolate chip bars

Chocolate chip cookie bars

These are an easy, popular treat. Soft Chocolate Chip Cookies, in bar form. Less time consuming, but all the joy of chocolate chip cookies. An egg yolk makes these soft, as does the addition of cornstarch. Remember to scoop your flour from your flour container into your measuring cup so you get the right amount. I used a combination of regular chocolate chips and mini ones.

I may have removed these a little too soon from the oven, but I didn’t want to bake them too long and dry them out. So they are a little on the softer/gushier side. Rob did not seem to mind at all.

  • Ingredients
  • 1 cup butter, melted
  • 1 cup brown sugar
  • 3/4 cup sugar
  • 1 yolk
  • 2 eggs
  • 1 tsp vanilla
  • 2 1/2 cups flour (scooped from your flour container into your measuring cup so you get the right amount)
  • 1 tbs cornstarch
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 cups chocolate chips

Directions – preheat oven to 350 degrres for 20 minutes. Line an 8×8 pan with tin foil and spray with baking sprat. In a bowl, combine butter, brown sugar and sugar. Add yolk, eggs and vanilla. Blend in dry ingredients. Fold in chips. Spread into pan. Bake 30 minutes (edges will be lightly brown). Cool completely. Cut and store in covered container.
