Football Friday week 15 – stuffed chocolate snowball cookies

What could make a chocolate cookie better?  An oreo inside!

A rather simple treat for football friday 15 – chocolate snowball cookies stuffed with a hershey kiss or an oreo!   I used a sugar cookie mix to make thing easier.

Another big matchup for my Bills Sunday – at Detroit.   Should be a great one! 

Remember to scoop your flour and baking cocoa from their respective containers into your measuring cup so you get the right amount.  I also recommend freezing the individual stuffed doughs for a half hour to keep them from spreading.  Also, don’t bake any longer than 10 minutes.

  • Ingredients
  • 1 sugar cookie mix
  • 1/4 cup baking cocoa
  • 1/4 cup flour
  • 1 egg
  • 1/2 cup butter, melted
  • 1 -2 tbs water
  • 1 tsp vanilla
  • Hershey kisses or other candy
  • Oreos

Directions – in a bowl, combine sugar  cookie mix, flour and baking cocoa.  Stir in egg, butter and water.  Scoop out 2 tbs dough and form around each kiss.  (You will need more dough to cover oreo).  Freeze individual doughs for 30 minutes, at least.  Preheat oven to 375 degrees.  Line a cookie sheet with nonstick baking liners.  Stagger cookies on sheet.  Bake 8 to 10 minutes, no longer.  Immediately sprinkle with powdered sugar.  Cool completely.   Store in covered container.

Chocolate Chip cookie-Oreo-Brownie “cake”

Stepping up my treat game this holiday season.  A chocolate chip cookie crust, a layer of oreo and topped with brownies.  Not sure what to call it!

  • Chocolate chip cookie crust
  • 10 tbs butter, softened
  • 2/3 cup sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 1/2 tsp baking powder
  • 1 3/4 cups flour (scooped from flour bag into your measuring cup so you get the right amount)
  • 1 cup chocolate chips

Directions – preheat oven to 350 degrees.  Line a 9 inch cake pan with tin foil and spray with baking spray.   in a bowl, cream butter, sugar and brown sugar.  Add egg and vanilla.  Blend in flour and baking powder.  Mix in chips. Press into bottom and partway up sides of prepared pan.

Top with a layer of  Oreos!

  • Brownie ingredients
  • 1/2 cup butter, melted
  • 1 cup sugar
  • 3/4 cup baking cocoa
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 3/4 cup flour (scooped from flour bag into measuring cup so you get the right amount)

Directions – in a bowl, combine butter and sugar.  Blend in cocoa, eggs, vanilla, salt and baking powder. Fold in flour.  Evenly spread over oreo layer. 

Bake 20 minutes, or until toothpick inserted in center basically comes out clean. 

Remove from oven and sprinkle with chocolate chips (i used milk chocolate)..  Gently press into top brownie layer. 

Cool completely.   Store in covered container.

Football friday # 6 Little Debbie brownie cookies

A simple, easy treat for nfl week 6 – little Debbie brownie cookies, frosted, with rainbow chips on top.  These are made with a brownie mix and a few extra ingredients.  They might not need frosting, but I think everything is better with frosting!  I don’t recommend baking these longer than 10 minutes.  They seem undone on top, but pop them in the fridge to firm them up before frosting them and keep them in the fridge for a few hours.   Better a gushy cookie than a dry, overbaked one, right?

Big game for my Bills this week – at the Jets on Monday night football.  Our third straight on the road and our 4th night game in 6 games this season.  I gotta admit the night games are killing me!

  • Ingredients list
  • 1 brownie mix (18 oz or 18.2 oz)
  • 2 tbs unsweetened baking cocoa
  • 2 eggs
  • 1/4 cup butter, melted
  • 1 tbs chocolate syrup
  • 1 cup mini chocolate chips

Directions – preheat oven to 375 degrees.  In a bowl, combine brownie mix, cocoa, eggs, butter and syrup.  Fold in chips.  Scoop out 2 tbs dough.  Line a cookie sheet with parchment paper.  Stagger cookies.  Bake 8 to 10 minutes.  Cool

  • Frosting ingredients
  • 1 cup powdered sugar
  • 1 tbs unsweetened baking cocoa
  • 2 tbs water
  • 1 tsp vanilla
  • 1 tbs chocolate syrup

In a bowl, combine all ingredients.  If you want a thicker frosting, add additional powdered sugar.  Feost cookies.  Sprinkle with rainbow chips, sprinkles or m&ms.  Store in covered container.

Chocolate triple chip cookies

Another hot, humid day, so why not turn on the oven to bake cookies? 😉

Today, I present chocolate triple chip cookies.  And I topped them with melted chocolate because I have a million hershey kisses in the house.

Melted chocolate makes everything better!

  • Ingredients list
  • 7 tbs butter, melted
  • 1/2 cup brown sugar
  • 3 tbs sugar
  • 1 egg
  • 1 tbs heavy cream
  • 1 tsp vanilla
  • 1 1/4 cups flour
  • 1/4 cup unsweetened baking cocoa
  • 1/2 tbs cornstarch
  • 1/4 tsp baking powder
  • 1/4 baking soda
  • 1/3 cup white chocolate chips
  • 1/3 cup milk chocolate chips
  • 1/3 cup semisweer chocolate chips

Directions – Pour melted butter in a bowl, add sugar and brown sugar.  Mix in egg, vanilla, and heavy cream. Blend in dry ingredients, then chips.  Scoop out 1 1/3 tbs dough (I used a cookie scoop).   Preheat oven to 350 degrees.  Line a cookie sheet with nonstick baking liners. Stagger cookie doughs on prepared sheet.    Bake 8-9 minutes, no longer.   Cool completely.  Store in covered container.

XL chocolate cake

I have a litany of baking items I rarely use – like a twinkie pan, whoopie pie pan, churr bake, cake pop maker and this 18×13 cake pan that I bought I long time ago for some reason.  So I put that 18×13 cake pan to use today and make a very large chocolate cake with chocolate frosting (hersheys recipe).  I am bringing in to work tomorrow for my espn radio friends working on Memorial Day.

You can also use a standard 9×13 pan, but obviously,  your cake will be thicker and take longer to bake (maybe check after 25 to 30 minutes, with the toothpick test)

  • Ingredients
  • 2 cups flour (scooped from flour bag into your measuring cups so you get the right amount)
  • 2 1/2 cups sugar
  • 1 cup unsweetened baking cocoa
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3 tsp vanilla
  • 1/2 cup milk
  • 3/4 cup vegetable oil
  • 3 eggs
  • 1 1/2 cups hot water or coffee (coffee can bring out extra chocolate flavor)

Directions – line  a 18×13 pan with parchment paper.  Preheat oven to 350 degrees.  In a bowl, blend dry ingredients together.  Mix in milk, oil, eggs and vanilla.  Blend in coffee or water.  Pour into prepared pan.  Bake 20 minutes for 18×13 pan.  Check after 25 minutes for 9×13 pan (toothpick will come out with moist crumbs).  Cool completely.

  • Frosting ingredients
  • 1/2 cup butter, melted
  • 2/3 cup unsweetened baking cocoa
  • 2 cups powdered sugar
  • 1/3 cup milk
  • 1 tsp vania

Directions – in a bowl, combine butter and cocoa.  Blend in powdered sugar and milk.  With a hand mixer, beat to desired consistency.  Blend in vanilla.  Frost cake.  Store in covered container.

Chocolate hot cocoa and marshmallow chip cookies

I saw this wonderful creation from Nestlé at Aldi and I bought, not one, but 2 bags. Hot cocoa and marshmallow chips? Genius!

I figure pop one bag in some chocolate cookie dough and magic happens.

I put up both our trees this weekend.. and pulled put my favorite ornament. (I also love the red haired doll from Rudolph, which is right next to it). It is year 34 with this Bills ornamant, and am hoping Santa comes through this time!

Remember to scoop your flour from your flour bag into your measuring cup so you get the right amount, scoop out your dough and then chill the individual mounds at least an hour, and preheat your oven to 350 degrees for 20 minutes before baking so it cycles to the right temp.

  • 1 1/2 cups butter, softened
  • 1 1/2 tbs vegetable oil
  • 1 1/2 cups brown sugar
  • 1/3 cup plus 3 tbs sugar
  • 3 eggs
  • 2 tsp vanilla
  • 3 3/4 cups flour
  • 3/4 cup baking cocoa
  • 3 tsp cornstarch
  • 1/2 tsp salt
  • 1 bag of hot cocoa chips
  • 1 cup milk chocolate chips

Directions – cream butter, oil, sugar, and brown sugar. Add eggs and vanilla. Blend in dry ingredients. Fold in chips. Scoop out dough (I used my cookie scoop that is 6 tbs worth). I formed them into tall mounds and chills them for at least an hour. Line a cookie sheet with parchment paper. Preheat oven to 350 degrees for 20 minutes before baking. Stagger cookies on prepared sheets. Bake 15 to 18 minutes. Cool completely. Store in covered container.

Chocolate Oreo Cookies

I was looking to make something chocolate, but wanted the cookies to be a little different, so I decided to add some finely crushed oreos. And added some white frosting. Rob gave me a thumbs up. Always good to get a thumbs up from your chief taste tester!

Remember to scoop your flour from your flour bag into your measuring cup. These don’t really spread. I opted to keep them puffy and mound-like, but you can slightly flatten them if you want. Don’t bake these longer than 11 minutes. I know they seem undercooked, but they will firm up as they cool. If you bake them too long, they will be dry.

  • 1/2 cup butter, softened
  • 1/4 cup sugar
  • 3 tbs brown sugar
  • 1/4 cup powdered sugar
  • 1/3 cup vegetable oil
  • 1 egg
  • 1 tsp vanilla
  • 1 cup flour (scooped from your flour bag into your measuring cup)
  • 1/4 cup baking cocoa
  • 3 tbs cornstarch
  • 1/4 tsp baking powder
  • 1/4 tsp cream of tartar
  • 24 oreos, finely crushed

Directions – cream butter, sugar, brown sugar and powdered sugar. Add eggs, oil and vanilla. Blend in dry ingredients and crushed oreos. Scoop out 1/4 cups dough and form tall mounds. Chill a few hours. Preheat oven to 350 degrees for 20 minutes. Line a cookie sheet with parchment paper. Stagger cookies on sheet. Bake 9 to 11 minutes (no longer than 11). Cool completely.

  • Frosting ingredients
  • 1/4 cup butter, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla
  • 1 tbs cream (or more)

Cream butter and powdered sugar. Add vanilla and cream. Blend well. Frost cookies. Store in covered container.

Frosted brownie cookies

These are my delayed celebration cookies for the Bills win Thursday night. I do not tempt the football gods with premature celebration treats, so I always wait until the win is completed. And Thursday’s game ended after 11 p.m., and I was not going to start baking then, hence, the brownie cookies recipe now.

  • Ingredients list
  • 1 cup butter, softened
  • 1 cup brown sugar
  • 2/3 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 4 tbs cornstarch or honey
  • 3 cups flour
  • 1/2 tsp baking soda
  • 1 cup baking cocoa

Directions – preheat oven to 350 degrees for 20 minutes. Line a cookie sheet with parchment paper. in a bowl, cream butter, brown sugar and sugar. Blend in eggs, corn syrup and vanilla. Fold in dry ingredients. Scoop out 1/4 cups of dough. Stagger on cookie sheet lined with parchment paper. Bake 11 to 13 minutes (no longer). Cool completely.

  • Frosting ingredients
  • 1/4 cup melted butter
  • 1/3 cup cocoa powder
  • 1 3/4 cups powdered sugar
  • 2 tbs milk (perhaps more)
  • 1 tsp vanilla

Directions – mix well. Frost cooled cookies. Store in covered container.

What the Puck? It’s NHL Opening Night! Happy Hockey!

In honor of NHL opening night tomorrow (Tuesday), I made flourless brownie “pucks” covered in melted chocolate. I baked flourless brownies in a 9×13 pan. Let them cool, used the top of a glass to cut out pucks, then used scraps of the remaining dough to form mini pucks and topped them with melted chocolate. Happy hockey!

Remember to preheat your oven to 350 degrees for 20 minutes before baking so it cycles to the right temp.

  • Ingredients list
  • 10 tbs butter
  • 2 cups dark chocolate chips
  • 1 1/2 cups sugar
  • 4 eggs
  • 1 tsp vanilla
  • 4 tbs baking cocoa
  • 6 tbs cornstarch

Directions- line a 9×13 baking pan with tin foil and spray with baking spray. Preheat oven to 350 degrees for 20 minutes before baking. In a microwave safe bowl, combine chips and butter and microwave in 45 second increments until you can stir smooth. Add sugar. Mix in eggs, one at a time. Stir in vanilla. Fold in cocoa and cornstarch. Spread evenly into pan. Bake 20 to 25 minutes – toothpick inserted in center comes out with a few moist crumbs. Cool completely. Spray the rim of a round glass with Pam and cut out pucks.

Top with melted chocolate. Let set. Store in covered container.

Browned butter/Reese’s pieces/mini M&M chocolate cookies

It is hot and humid today, so why not fire up the oven? 😁 I used browned butter in these because I wanted to speed up the process, as opposed to waiting for the butter to soften to room temp. Browned butter is pretty easy – put it in a pan and cook over low-medium heat, stirring occasionally, just until you see brown specks form. Then immediately remove from heat. I also opted to use Reese’s pieces and mini m&ms, but use whatever mix-ins you want.

Some tips – Remember to scoop your flour directly from your flour bag into your measuring cup so you get the right amount. Chill the individual mounds of dough for a few hours to help prevent spreading. Preheat oven to 350 degrees for 20 minutes when you are ready to bake so it cycles to the right temp.

  • 3/4 cup butter, browned
  • 1 cup brown sugar
  • 1/4 cup sugar
  • 1 tsp vanilla
  • 2 eggs
  • 2 cups flour (scooped from your flour bag into your measuring cup)
  • 1/2 cup unsweetened baking cocoa
  • 1 tbs cornstarch
  • 3/4 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2/3 cup Reese’s pieces
  • 1/3 cup mini m&ms
  • Directions – place butter in a pan and cook over low -medium heat until melted and just until brown specks form. Remove from heat and pour into bowl to cool for for 10 to 14 minutes. Add brown sugar and sugar to butter. Mix in eggs and vanilla. Fold in dry ingredients. Mix in candies. Scoop out 1/4 cups dough. Chill in fridge, or freeze, for a few hours. Preheat oven to 350 degrees for 20 minutes before baking. Line a cookie sheet with parchment paper. Stagger cookies on the sheet, as seen below.

Bake at 350 degrees for 10 to 12 minutes. Cool completely. Store in covered container.
