Victory cookie number two for my Bills – chocolate snowball cookies. An easy cookie to make and everyone will love them!

Cookie monster at it again!

Remember to scoop your flour, baking cocoa and powdered sugar from your respective containers into your measuring cups. If you pour directly into your measuring cups, the flour, cocoa and powdered sugar get packed in and you wind up with too much.. Which may make for a dry cookie. A grave sin, if there ever was one. Also preheat your oven to 350 degrees for 20 minutes so it cycles to the right temp for baking.

  • 1 cup butter, softened
  • 1 /2 cup powdered sugar
  • 1/4 cup baking cocoa
  • 1 tsp vanilla
  • 2 cups flour
  • 1 cup mini chocolate chips

Directions – cream butter and powdered sugar. Blend in baking cocoa and vanilla. Fold in flour. Mix in chips. Scoop out 2 tbs of dough. Roll into balls, flatten slightly. Line a cookie sheet with nonstick baking liners or parchment paper. These don’t spread,so you can place rows of 3 on each prepared sheet. I got 9 or 12 on each, depending on the size of cookie sheet used. Sprinkle hot cookies with powdered sugar. Cool completely. Sprinkle with more powdered sugar. Store in covered container.

Sunday’s win was a big one for my beloved Buffalo Bills, so I thought that called for two kinds of victory cookies! These are snowballs cookies. A very soft cookie, not overly sweet, with mini chocolate chips. These are a little bigger than a typical snowball cookie. I use 2 tbs dough.

Remember to scoop your flour and powdered sugar from into your measuring cups, as opposed to pouring then directly in. When you pour, the flour and powdered sugar are packed in and you end up with too much, making for a dry cookie. Also, preheat your oven to 375 degrees before baking So your oven cycles to the right temp.

  • Ingredients
  • 1 cup butter, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla
  • 2 1/4 cups flour
  • 1 cup mini chocolate chips
  • Extra powdered sugar

Cream butter and powdered sugar. Add vanilla. Blend in flour. Mix in chips. Scoop out 2 tbs dough and roll into a ball. Slightly flatten. Line a cookie sheet with nonstick baking liners. These do not spread, so you can place 3 across and fit in as many as you’d like on a wheet ( I fit 9 or 12 on a sheet, depending on the size of the cookie sheet). Bake 12 minutes. Sprinkle hot cookies with powdered sugar. Cool completley. Sprinkle with more powdered sugar. Store in covered container.

Snowball cookies with mini chocolate chips

The only thing mini about these cookies is the chips!

These are a variation of a recipe I saw in one of my Nestle cookbooks that one of my grandmothers gave to me when I was in college. It is also the treat that Rob requested. I used a mix of Crisco and butter, but you can use all butter if you want. It is a very easy dough to make and the cookies will be a big hit! I made mine on the larger side,with 2 tbs of dough. You can use 2 tsp and you will bake more of them, obviously. They also take less time to cook.

Remember to scoop your powdered sugar and flour from your respective containers into measuring cups so you get the correct amount. Also, preheat your oven to 375 degrees for 20 minutes before baking so it cycles to the right temp.

  • 1/2 cup butter, softened
  • 1/2 cup Crisco
  • 1/2 cup powdered sugar
  • 1 tbs vanilla
  • 2 1/4 cups flour
  • 1/4 tsp salt
  • 1-2 tbs water
  • 1 cup mini chocolate chips

Add vanilla. Blend in flour and salt. Mix in water. You may have to use your mixer for a while. It takes the dough some time to come together. Add chips. Scoop out 2 tbs dough, roll into a ball and slightly flatten. Place on prepared cookie sheet. Sprinkle with powdered sugar. Bake 10 to 12 minutes (bottoms will be lightly golden). Sprinkle warm cookies with powdered sugar. Cool completely. Store in covered container.

Chocolate chip bars. A classic. A request from my hubby, Rob. Something else for me to make as I attempt to figure out our new stove. Brownies and bar cookies have been a bit of a disaster so far, but I think I have figured it out. The issue was the pan, i believe. Hopefully, no more problem treats!

  • Ingredients
  • 1 cup Crisco
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 tbs water
  • 1 tsp vanilla
  • 1 1/2 cups flour
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1 cup chocolate chips

Directions – preheat oven to 350 degrees for 20 minutes. Line an 8×8 pan with parchment paper and spray with baking spray. In a bowl, cream Crisco, sugar and brown sugar. Add egg, water and vanilla. Blend in dry ingredients. If mixture seems too dry, try mixing it with your hands, or add another tbs of water. Fold in chips. Press into prepared pan. Bake 15 minutes. Cool completely. Store in covered container.

Brownie stuffed peanut blossoms topped with melted Hershey kisses

I tried to drown my sorrows from Monday night Football into baking. I opted for peanut butter cookies, stuffed with brownies and topped with melted Hershey kisses. They made the house smell wonderful, but in the end, I am still mad about the game and probably will be until Friday. Poor Rob and Gracie.

Remember to scoop your flour from your flour container into your measuring cup, and preheat your oven to 375 degrees for 20 minutes before baking.

  • Ingredients
  • 1 cup Crisco
  • 1 1/2 cups peanut butter
  • 2/3 cup sugar
  • 2/3 cup brown sugar
  • 2 eggs
  • 4 tbs milk
  • 1 tbs vanilla
  • 3 cups flour
  • 2 tsp baking soda
  • 1 tsp salt
  • 1 batch of brownies, baked and cooled and cut into 1″ pieces

Directions – preheat oven to 375 degrees for 20 minutes. Line a cookie sheet with nonstick baking liners or parchment paper. In a bowl, cream Crisco, peanut butter,brown sugar and sugar. Add eggs,vanilla and milk. Blend in dry ingredients.

Scoop out 1 1/2 tbs dough and slightly flatten.

Place a brownie square on top

Scoop out another 1 1/2 tbs dough, slightly flatten and place on top of brownie piece.

Seal edges.

In prepared cookie sheet, stagger cookies. Bake at 375 degrees for 9 to 12 minutes (light golden patches on top) cool completely.

In a microwave safe bowl, place 45 unwrapped Hershey kisses. Add 1 tbs vegetable oil. Microwave in 30 second increments until you can stir smooth. Spoon over cookies. Store in covered container.

Puffy, large chocolate chip cookies

Testing out our new Frigidaire gas oven with a chocolate chip cookie recipe… One of the more than 20 ccc recipes I have. They came out perfect. I also picked up some aluminum cookie sheets because I have been ready some articles how they bake cookies better. I am very pleased with how they came out. I think I may be investing in some aluminum cake and brownie pans too 🙂

Remember to scoop your flour from your flour container into your measuring cup so you get the right amount. Also, chill the mounds of dough for a couple of hours. And finally, preheat your oven to 375 degrees for 20 minutes before baking, so your oven cycles to the right temp.

Directions – cream butter, Crisco, brown sugar and sugar. Add egg and vanilla. Blend in dry ingredients. Fold in chips. Scoop out 1/4 cups of dough. Gently push a few extra chips on top. Chill dough mounds a few hours in fridge. When ready to bake, preheat oven to 375 degrees for 20 minutes. On a cookie sheet lined with nonstick baking liners, stagger cookies on the sheet. Bake 9 to 12 minutes (light golden patches on top). I let these cool on the sheet for 10 minutes after removing from oven,hoping they would stay puffy (they did). Store in covered container.

Oreo brownie cookies with chocolate ganache

A reminder to scoop your flour from your flour bag into you measuring cup. Also,form your dough into high mounds and chill these overnight. And,preheat your oven for 20 minutes before baking so your oven cycles to the right temp for baking

Still trying to use up my extra large box of Oreos,so I decided to finely crush them up, toss them in my brownie mix cookies. Then frost them with chocolate ganache (a fancy name for melted chocolate) and top with more finely crushed Oreos. These came out a little flatter than I prefer, so I may add a little more flour and a tbs of cornstarch next time to see if that helps them stay puffier.

  • Ingredients
  • 1 brownie mix
  • 3/4 cup flour
  • 1/4 cup plus 2 tbs vegetable oil
  • 2 eggs
  • 3 tbs water
  • 3 /4 cup finely crushed oreos

Directions – combine brownie mix, flour, vegetable oil, eggs, and water. Blend in crushed Oreos. Scoop out 1/4 cups of dpugh. chill at least a few hours. Preheat oven to 350 degrees for 20 minutes. Cool completley.

  • Ganache ingredients
  • 3/4 cup milk chocolate chips
  • 3/4 cup semisweet chocolate chips
  • 1/2 cup heavy cream

Directions – in a microwave safe bowl,heat both types of chips for one minute. Set aside. In another microwave safe bowl, heat cream for one minute. Pour over chips, let set 10 minutes. Stir smooth. Frost completely cooled cookies. Top with crushed Oreos. Store in covered container.

I have a rather large bag of Oreos to use up, so instead of making different kinds of cookies to stuff, I ground some up and tossed them in these cookies. And they are frosted with a simple vanilla frosting. I used Crisco in these, but softened butter would probably work well too

Finally was able to order our replacement stove today! Yay! It is arriving on Wednesday! It has been a guessing game baking the last two months! At least the treats have all turned out well!

Directions – line a cookie sheet with nonstick baking linerspreheat oven to 350 degrees for 20 minutes. In a bowl, cream Crisco, brown sugar, sugar and powdered sugar. Add oil and egg. Blend in crushed oreos and dry ingredients. Divide dough evenly into 9 large mounds of dough. Bake 9 to 12 minutes. Let cool completely.

  • 1 to 2 tbs heavy cream
  • 1 tsp vanilla

Using leftover Halloween candy

Someone left a whole bag of extra Halloween candy in our green room at work, so I took it. And I used the peanut butter cups to stuff in chocolate cookies. I have to figure out what to do with the heath bars and whoppers.

Our oven is on it’s way out, but it’s under warranty, so we are getting a new one for free. I ordered it,so I hope our current oven lasts until the new one is delivered. Baking has been an adventure the last 2 plus months!

Remember to spoon your flour and baking cocoa from your container into your measuring cup so you get the right amount. I like to chill the individually stuffed cookies for at least a few hours. Also, preheat your oven for 20 minutes before baking so it gets to the right temperature.

  • 3/4 cup brown sugar

Blend in melted chocolate. Fold in dry ingredients. Scoop out 2 tbs dough and cover a piece pf leftover Halloween candy. Chill at least a few hours. Preheat oven to 350 degrees for 20 minutes. Line a cookie sheet with nonstick baking liners. Stagger cookies on the sheet. Bake 12 to 15 minutes. Cool completely. Store in covered container.

Week 8 victory Monday cookies

A chocolate version of the Franks! (Triple Chip chocolate cookies)

How is it week 8 already? Wow! I found today’s Bills game far too stressful. At least we got a win. And 5-2 is a solid record. To celebrate, I made a chocolate version of the triple chip cookies. And I slathered some melted milk chocolate on the bottom because,why not? Also, we set out a bowl of candy for Halloween, on a table. Rob keeps replenishing it and so far, no kid has dumped the bowl in his bag! And we only have 35 minutes left!

Preheat oven to 350 degrees for 20 minutes. Line a cookie sheet with nonstick baking liners. Stagger cookies on the sheet. Bake 12 to 14 minutes. Cool completely. In a microwave safe bowl, combine 2 cups milk chocolate chips and 2 tsp of vegetable oil. Microwave in 30 second increments until you can stir smooth. Slather on bottom of cookies. Ler set. Store in covered container.
