Doubletree chocolate chip cookies

Monday night, I stayed at the Doubletree hotel down the street from work for weather related reasons. (The timing of the snow and uncertainty of the amount that would fall before I needed to leave for work). Anyways, as you know, they give all guests a cookie. When I got home after work on Tuesday, Rob asked “did you bring me a cookie?” I did not, but promised I would make the doubletree cookies. Hilton posted the recipe so I used that, except I left out the cinnamon. Rob wasn’t thrilled about that on a chocolate chip cookie. Next time I think I may try to chill the dough before baking. These spread a ton. (Flat cookies are not my bag)

I did tweak the original recipe, using 1/2 crisco and 1/2 cup butter, as opposed to all butter. Remember to spoon your flour from your flour bag into your measuring cup so you get the correct amount. These cook at a lower temperature – 300 degrees than the usual for chocolate chip cookies. The directions said bake 20 to 23 minutes. One batch I baked for 20, the 2nd batch 22. I prefer 20 minutes because they are softer.

  • Ingredients
  • 1/2 cup crisco
  • 1/2 cup butter, grated with a cheese grater
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1/4 tsp lemon juice
  • 2 1/4 cups flour
  • 1/2 cup rolled oats (pulsed into a fine powder with a blender or food processor)
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 2/3 cup chocolate chips

Directions – in a bowl, cream butter, crisco, brown sugar and sugar. Add eggs, lemon juice, and vanilla. Blend in flour, oats, baking soda, and salt. Mix in chips. Scoop out 3 tbs dough and form tall mounds. I recommend chilling the dough for at least a few hours. Preheat oven to 300 degrees for 20 minutes before baking, so oven cycles to right temp. Bake 20 minutes. The Hilton directions say to cool cookies for one hour on cookie sheet. I did not do that 😉 store in covered container.

Mudslide cookies

It is very cold and snowy today, so it seemed like a perfect time to bake. So here are mudslide cookies.

These are a super chocolately chocolate cookie. They use unsweetened and dark chocolate in the base and I tossed in mini chips for good measure. I mean honestly, can you ever have too much chocolate? I think not! These also call for cake flour. If you don’t have it, you can make it yourself. For this recipe you will whisk together 2 and 3/4 cups all purpose flour and 4 1/2 tbs cornstarch.

Remember to spoon your flour from your flour bag into your measuring cup so you get the right amount. I also recommend chilling the dough for at least a few hours. And, preheat your oven to 350 degrees for 20 minutes before baking.

  • Ingredients
  • 4 oz unsweetened chocolate, broken into pieces
  • 1 1/2 cups dark chocolate chips (or 9 oz bittersweet chocolate, chopped)
  • 8 tbs butter
  • 7 eggs
  • 2 3/4 cups
  • 1 tbs vanilla
  • 1 tbs water
  • 2 3/4 cups cake flour
  • 1 tbs (yes, tbs) baking powder
  • 1/2 tsp salt
  • 1 1/2 cups mini chocolate chips

In a microwave safe bowl, microwave butter, unsweetened chocolate and dark chocolate in 45 second increments until you can stir smooth. Set aside. In a bowl, beat eggs, sugar, water and vanilla for 5 to 6 minutes. Add melted chocolate. Stir in dry ingredients. Mix in chips. Scoop out 1/4 cups of dough. Chill a few hours. Preheat oven to 350 degrees for 20 minutes. Line cookies sheets with parchment paper. Stagger cookies on sheet.

Bake 14 minutes, no longer. If desired, sprinkle powdered sugar on hot cookies. Cool completely. Store in covered container.

Marble cookies for week 18 football friday

Marbled cookies

Today felt like a day for celebration. There was a miraculous update on Bills Safety Damar Hamlin. He collapsed during the Monday Night football game and was rushed to University of Cincinnati medical center. Each day there were updates of reported progress. Then today, the update was on “remarkable” progress, although he still has other progress to be made. One of the things that made me smile – Damar communicated to doctors asking, in writing, “did we win the game?” All the prayers made a big difference. God is good. Thanks to so many people who’s quick actions saved his life. And the outpouring of love for this young man has been overwhelming. All the donations and prayers made in his name and wonderful stories about him are just beautiful. My hope is all the love, kindness, and positive vibes and prayers put out there can remain and make the world a better, friendlier,more loving place.

And with that, I decided to bake marble cookies at 9 pm. Just a cookie made with browned butter and instead of adding all chocolate chips, I melted them and swirled them in.

Notes – I used bread flour in these in hopes they would not spread out too much. I did not have time to chill the dough. Remember to spoon your flour from your flour bag into your measuring cup so you get the right amount. And preheat your oven to 350 degrees for 20 minutes before baking.

  • Ingredients
  • 1 cup butter browned, not cooled
  • 1 1/4 cups butter, browned
  • 1/4 cup sugar
  • 1 egg
  • 1 yolk
  • 1 tsp vanilla
  • 1 tbs cream
  • 2 1/2 cups flour
  • 1 tsp baking soda
  • 1 cup chocolate chips,melted
  • Extra chocolate chips

In a bowl, combine browned butter, sugar and brown sugar. Add egg, yolk, vanilla and cream. Blend in dry ingredients. Swirl in melted chips to marble dough. Scoop out 2 tbs dough and form mounds. Lightly press a few chocolate chips on top. Chill a few hours. Line a cookie sheet with parchment paper. Preheat oven to 350 degrees for 20 minutes before baking. Stagger cookies on prepared sheer. Bake 10 minutes (no longer). Cool completley. Store in covered container.

Triple chip cookies and meeting Gretzky (no, not that one)

While my triple chip cookie dough was chilling in the fridge (I believe chilled dough makes for the best cookies), we took Gracie on her nightly walk. She gets 2 walks a day, yet is still chubby. That’s a story for another day. Anyways, she met 2 new friends. A beautiful white German Shepherd named Rory and a American Eskimo named Gretzky. Rob and both did a double take. Indeed the pup is named Gretzky. Her fiancee, like Rob, is a huge hockey fan, and Gretzky fan. A really cool moment. Onto the recipe!

  • 1 cup butter, softened
  • 1 cup brown sugar
  • 1 tsp vanilla
  • 2 eggs
  • 3.4 oz instant vanilla pudding mix
  • 2 1/2 cups flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 cup chocolate chips
  • 1 cup white chocolate chips
  • 1 cup milk chocolate chips

Directions – cream butter and brown sugar. Add eggs and vanilla, pudding mix, baking soda and baking powder. Blend in flour. Fold in chips. Scoop out 1/4 cup of dough and form into mounds. Chill a few hours. Preheat oven to 35p degrees for 20 minutes. Line a cookie sheet with nonstick baking liners. Stagger cookies on the sheet – a row of 2, a row of 1, another row of 2 and a final row of 1. Baking 10 to 14 minutes. (Golden patches on tops of cookies). Cool completely. Store in covered container.

Frosted Chocolate Chip Banana Cookies

My best friend from college, Susan, and her two daughters (who are my goddaughters) are coming to visit tonight for a few hours.. so being the good hostess that I like to think I am, I asked the girls what treat they would like. Lyndsey picked frosted chocolate chip banana cookies. These are nice, soft cookies that smell INCREDIBLE as they bake. and let’s face it, frosting, just makes everything better.

* One kind cool thing I learned for this recipe – how to quickly ripen a banana. you bake it at 170 degrees in 8 minute intervals until the skin turns really really brown and softens the banana. my husband wasn’t sure what i had done when he saw the banana on the countertop to cool off 🙂

a few tips – remember to scoop your flour from your flour bag into your measuring cup so you get the correct amount, chill the mounds of dough for a few hours to prevent them from spreading too much, and preheat your oven to 350 degrees for 20 minutes before baking so that it cycles to the right temperature.

  • 1 ripe banana, smooooshed (see * above on how to quickly ripen a banana)
  • 1 yolk (makes cookies soft)
  • 1 tsp vanilla
  • 1 3/4 cups flour
  • 1/2 tsp baking soda
  • 1 cup chocolate chips (i used mini ones in these cookies)

Directions – cream butter, brown sugar and sugar. Blend in banana, yolk and vanilla. Fold in dry ingredients. Mix in chips. Flour your hands (trust me on this). Scoop out 2 tbs of dough and roll into balls. Chill in fridge a few hours. preheat oven to 350 degrees for 20 minutes. line a sheet with nonstick baking liners or parchment paper and stagger cookies. bake 12 to 14 minutes (likely browned on bottom. do not overbake or cookies will be dry). remove from tray after 10 minutes. Cool completely.

  • Frosting ingredients
  • 2 tbs butter, melted
  • powdered sugar
  • 1 tsp vanilla
  • milk

Directions – place butter in a bowl, add a cup or two of powdered sugar. mix in vanilla. Add enough milk to get the consistency you want. Frost cookies. store in covered container.

Chocolate Chip (Tollhouse) Bars

These are a request from my goddaughter Sara, who along with her sister, also my goddaughter, Lyndsey, and their mom, Susan (my best friend from college), will be visiting us for a few hours tonight. Sara’s treat requests mirror those of Rob – chocolate chip cookies (or something along that line), or brownies. So these are also a win for my hubby.

  • 1/2 cup butter, melted and cooled for 20 minutes
  • 1 cup brown sugar

Spread into prepared pan. Sprinkle with additional chips on top. bake 20 to 25 minutes, until edges are lightly browned but still soft. (I baked mine for 22 minutes. They seemed underbaked, but will firm up after you take them out of oven and cool down). Cool completely. store in covered container.

Devil dogs

Today’s recipe is devil dogs. They seem remarkably like whoopie pies, Suzy q’s or whatever other similar Hostess or Drake’s (or where I’m from – Stroemanns).. though for whoopie pies, I tend to use cake mixes and devil dogs, i opt for homemade. Anyways, I think these devil dogs came out ok.

  • Devil dogs ingredients
  • 1 cup butter, softened
  • 2 cups sugar
  • 2 eggs
  • 1 tbs vanilla
  • 4 cups flour (scooped from your bag into your measuring cup)
  • 1 cup baking cocoa
  • 3 tsp baking soda

Directions – preheat oven to 350 degrees for 20 minutes. Place parchment paper on a large cookie sheet or spray a canoe/twinkie pan with baking spray. (I used both pans). Cream butter and sugar. Add eggs and vanilla. Blend in dry ingredients. Scoop out dough and fill canoe pans halfway full. I used a medium cake batter scoop, which is 7 tsp of dough. On the parchment paper cookie sheet, scoop out dough (7 tsp) and form a square on the parchment paper. I made mine kinda large. Bake 11 to 14 minutes, or until a toothpick inserted in center comes out with a few moist crumbs. Cool completely.

  • Filling ingredients
  • 1 cup butter, softened
  • 1 cup marshmallow fluff
  • 3 cups powdered sugar

Directions – blend butter and fluff. Mix in powdered sugar. If filling seems stiff, add a little milk to get the consistency you want.

Assembly – slice canoe/twinkie devil dogs in half horizontally. Spoon filling between the two pieces. Or spoon filling between two of them pieces that were baked on the cookie sheet with parchment paper. Store in covered container.

Chocolate Oreo cookies

I have a rather large bag of Oreos to use up, so instead of making different kinds of cookies to stuff, I ground some up and tossed them in these cookies. And they are frosted with a simple vanilla frosting. I used Crisco in these, but softened butter would probably work well too

Finally was able to order our replacement stove today! Yay! It is arriving on Wednesday! It has been a guessing game baking the last two months! At least the treats have all turned out well!

Remember to scoop your flour, baking cocoa and powdered sugar from your containers into your measuring cup to get the correct amount. Also preheat your oven to 350 for 20 minutes to get the right temp.

  • 1/2 cup Crisco
  • 1/4 cup sugar
  • 1/4 powdered sugar
  • 3 tbs brown sugar
  • 1/3 cup vegetable oil
  • 1 egg
  • 24 Oreos, finely crushed
  • 1 cup flour
  • 1/4 cup baking cocoa
  • 4 tbs cornstarch
  • 1/4 tsp baking powder
  • 1/2 tsp baking soda

Directions – line a cookie sheet with nonstick baking linerspreheat oven to 350 degrees for 20 minutes. In a bowl, cream Crisco, brown sugar, sugar and powdered sugar. Add oil and egg. Blend in crushed oreos and dry ingredients. Divide dough evenly into 9 large mounds of dough. Bake 9 to 12 minutes. Let cool completely.

  • 3/4 cup butter, softened
  • 1 1/2 cups powdered sugar
  • 1 to 2 tbs heavy cream
  • 1 tsp vanilla

Directions – cream butter and powdered sugar. Add cream and vanilla. Frost cookies. Store in covered container.

Big game for the Bills – against the Titans on Monday Night Football. So I upped my treat game -a mini Oreo stuffes inside a sugar cookie stuffed inside a brownie, with a chocolate blobby of frosting on top., why the frosting? I do not know. It seemed like the right call. Is it necessary? I believe the answer is yes.

  • 2 boxes of brownie mix, plus ingredients listed on the boxes
  • Sugar cookie mix, plus ingredients listed on box/bag
  • Mini oreos

Directions – preheat oven to 350 degrees for 20 minutes. Line a 9×13 pan with tin foil and spray with baking spray. In a bowl, combine brownie mixes and ingredients listed on boxes. Spread evenly into prepared pan. In another bowl, combine sugar cookie mix and ingredients on box. Scoop put 1 tbs cookie dough and cover a mini Oreo. Repeat process. I think I did about 16 of these. Gently press into brownie dough in pan in 4 rows of 4. Bake 28 to 35 minutes, or until a toothpick inserted in center of brownie dough comes out with a few moist crumbs. Cool completley. Cut. You can frost these if you would like. Store in covered container.

My president of taste testing, Rob, put in a request for these – brown butter blondies with chocolate chips. Super simple and are ready in no time. Browning butter is a very simple process. Just melt the butter in a saucepan, stirring occasionally until you see little brown bits in it.
