NFL Sunday, week 13 – Chocolate chocolate chip cake with crushed oreo frosting

If you love chocolate, this cake is for you.  It uses a chocolate cake mix (I used dark chocolate fudge, but any one is fine), and a handful of other ingredients.   The frosting is a buttercream with finely ground oreos. If you don’t have black cocoa, regular unsweetened baking cocoa is fine.  I think I will make a golden oreo version of this with a white cake mix another time.

  • Ingredients list
  • 1 chocolate cake mix
  • 1 box chocolate instant pudding mix (3.4 oz)
  • 1/2 cup black cocoa
  • 3 eggs
  • 1/2 cup vegetable oil
  • 1/2 cup greek yogurt
  • 1/2 cup milk
  • 1 cup chocolate chips

Directions – preheat oven to 350 degrees.  Spray a bundt cake pan with baking spray.  Set aside. In a bowl, blend cake mix, pudding mix and cocoa.  Blend in eggs, oil, greek yogurt and milk.  Fold in chips.   Batter will be thick.  Spread evenly into prepared bundt pan.  Bake 28 to 32 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.  Remove from oven.   Cool 15 minutes in pan.  Then pop cake onto a plate and cool completely.

I felt i left this cake in a minute too long, so I found a syrup recipe to help moisten it up.  This is used before you frost it.

In a saucepan, combine 1 cup water, 1 cup sugar and 1/3 cup unsweetened baking cocoa.  Whisk constantly over medium heat just until it boils.  Remove from stove.  Pour in a pan and cool completely.   Brush on cooled cake.

  • Oreo buttercream frosting ingredients
  • 1/2 cup butter, softened
  • 1/2 cup crisco
  • 4 cups powdered sugar
  • 1 tsp vanilla
  • 4 to 6 tbs heavy cream
  • 14 oreos, finely crushed (i used a food processor)

Directions – in a bowl cream butter and crisco.   Slowly blend in powdered sugar.   Add vanilla and 4 tbs of heavy cream.  Mix more cream, one tbs at a time, until you get the consistency you want.  Blend in crushed oreos.  Frost cake.  Store in covered container.

Oreo cheesecake topped with cookies and cream mousse and chocolate ganache

After a rough sunday in Miami, I am making a plea to the football gods for my Bills for week 11 and am doing so with this request from my husband and a copycat of the cheesecake factory oreo dream extreme cheesecake.

This does take some time, but is worth it.  I used neufactel cheese, which is lower fat and lower calorie, so I added some cornstarch to help firm up the cheesecake layer.

  • Flourless Cake  ingredients
  • 1 cup chocolate chips
  • 8 tbs butter
  • 3/4 cup sugar
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 3 eggs
  • 1/2 cup unsweetened baking cocoa

Directions – preheat oven to 375 degrees.  in a microwave safe bowl, heat chocolate chips and butter in 45 second increments until you can stir smooth.  Add sugar, salt, and vanilla.  Blend in eggs well.  Line a 9″ round pan with parchment paper.  Evenly spread batter into pan.   Bake 18 to 22 minutes.  Cool completely

  • Ganache ingredients list
  • 2 cups chocolate chips
  • 2 cups heavy whipping cream

Directions – in a microwave safe bowl, heat cream for 3 minutes.  Add chips.  Let sit for 5 minutes.  Stir smooth.   Place in fridge.

  • Cheesecake ingredients
  • 24 oz cream cheese (I used neufactel,  which is softer and lower calorie and lower fat)
  • 1 cup sugar
  • 2 tbs flour
  • 6 tbs cornstarch (if you are using neufactel or low fat cream cheese)
  • 3/4 cup greek yogurt
  • 2 eggs
  • 1 yolk
  • 2 tsp vanilla
  • 12 to 16 Oreo cookies

Directions – preheat oven to 325 degrees.  Line a 9 inch springform pan with tin foil and spray with baking spray.  In a bowl, cream cream cheese, sugar and flour (and cornstarch if you are using a lower fat cheese).  Blend in Greek yogurt and vanilla.  Fold in eggs and yolk.  Pour 1/3 into prepared pan.  Top with 6 to 8 oreos and press down gently.  Top with a other third of batter and gently press 6 to 8 oreos on top.  Top with remaining third of batter.  Bake 55 to 60 minutes (middle jiggles a little and edges are set).  Turn off oven.   Crack oven and leave cheesecake in for an hour.  Transfer to fridge for a few hours.

  • Cookies and cream mousse
  • 1 cup heavy cream
  • 1/3 cup powdered sugar
  • Crushed oreos (8 to 10)

Directions – in a bowl, whip cream amd powdered sugar to stiff peaks.  Blend in crushed oreos.    Put in fridge.

When ready to assemble – beat chilled ganache for a few minutes so it is spreadable.   Place flourless cake on a plate.  Spread a thin layer of ganache on top.  Gently place cheesecake on top of ganache layer.   Smooth oreo mousse on top of cheesecake layer.  Use rest of ganache on top and sides.  Store in fridge.

Oreo brookies

Our selection committee list yesterday was all about best desserts.   One of our callers mentioned oreo brookies, which are a layer of tollhouse bars, a layer of oreos and a layer of  brownies.  They also have a pg-13 name, but i won’t go into it here.

Remember to scoop your flour from your flour bag into your measuring cup so you get the right amount.  Also preheat your oven to 350 degrees before baking.

  • Chocolate chip layer
  • 7 tbs butter, softened
  • 3/4 cup brown sugar
  • 2 tbs sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 cup flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup chocolate chips

Directions – preheat oven to 350 degrees.  Line a 9×13 pan with tin foil and spray with pam.  Set aside.  In a bowl, cream butter, sugar and brown sugar.  Add egg and vanilla.  Blend in dry ingredients.   Fold in chips.  Press into prepared pan.

Layer with oreos

  • Brownie layer ingredients
  • 6 tbs butter
  • 1 cup dark chocolate chips
  • 2 tbs unsweetened baking cocoa
  • 1 cup sugar
  • 2 egg
  • 1 tsp vanilla
  • 3/4 cup flour
  • 1/2 tsp vanilla
  • Extra chips

Directions – in a microwave safe bowl, heat 1 cup chocolaye chips and butter in 45 second increments until you can stir smooth.  Set aside.  In another bowl, mix eggs, vanilla and sugar.  Add chocolate mixture.   Blend in dry ingredients.   Drop by spoonfuls on top of oreo layer and spread evenly. 

Sprinkle extra chocolate chips on top.  Bake 350 degrees 30 to 35 minutes, until a toothpick inserted in center comes out with a few moist crumbs. 

Cool completely. 

Store in covered container.

Crushed oreo cookies stuffed with Reese’s eggs

I know it is June 1st, but I still have a boatload of Reese eggs (that’s what I get for buying the big bag from BJ’s). 

They are good for a while, but thought i would use some up by stuffing them in crushed oreo chocolate cookies.

  I left a few plain without the Reese’s eggs and covered them in m&ms, for the non peanut butter lovers at work.

Remember to scoop your flour from your flour bag into your measuring cup so you get the right amount.   I recommend chilling the individual doughs for at least a few hours.  And, preheat your oven before baking.

  • Ingredients list
  • 1 1/2 cups crisco
  • 3/4 cup sugar
  • 1 1/2 cups firmly packed brown sugar
  • 2 eggs
  • 1 tbs vanilla
  • 1 cup unsweetened baking cocoa
  • 3 cups flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 20 oreos, finely crushed in a food processor
  • Reese’s eggs, removed from wrapper

Directions- in a bowl,  cream crisco, brown sugar and sugar.  Add eggs and vanilla.  Mix in dry ingredients then blend in oreos.  Scoop out 1/4 cups of dough and divide in half.  Slightly flatten each half.   Place one half on countertop.

Tops with a Reese egg.

Top with other flattened half

Seal edges so you can’t see Reese egg.

Chill a few hours or overnight.  When ready to bake, preheat oven to 350 and line a cookie sheet with parchment paper.  Stagger cookies on sheet. 

Bake 12 to 14 minutes, no longer.  Cool completely.  Store in covered container.

Stuffed monster cookies for Championship week Saturday

Keeping my Championship week treat baking going with stuffed monster cookie#.  These have peanu butter, oats, milk chocolate chips and are stuffed with a) Reese’s pb cups

b) double stuff oreos or c) golden oreos. 

The oats make them healthy, right?

Remember to scoop your flour from your flour bag into your measuring cup so you get the right amount.  I also recommend chilling the individual doughs for an hour or two.

  • Ingredients list
  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 3/4 cup brown sugar
  • 1/4 cup sugar
  • 1 tsp vanilla
  • 2 eggs
  • 1 1/2 cups flour
  • 1 cup oats (i used instant)
  • 1 tsp baking soda
  • 1 tbs cornstarch
  • 1 cup mini m&ms
  • 1 cup milk chocolate chips

Directions -in a bowl, cream butter, peanut butter, brown sugar and sugar.  Add eggs and vanilla.  Blend in dry ingredients and oats.  Fold in chips and m&ms.  Scoop out 1 tbs dough and slightly flatten.

Top with a Reese’s pb cup or oreo

Scoop out another tbs of dough, slightly flatten and place on top.

Seal edges.

Chill and hour or two.  Preheat oven to 350 degrees.  Line a cookie sheet with parchment paper and stagger cookies.

Bake 11 to 13 minutes, no longer.  Cool completely.   Store in covered container .

Black cocoa/crushed oreo puck cookies

In honor of the four nations faceoff championship game, I wanted to make black cocoa cookie resembling a puck.  These are puffer than pucks, but they’ll be just fine.  These also used finely ground oreos. 

Remember to scoop your flour from your flour bag into your measuring cup so you get the right amount.   I also recommend chilling the individual mounds of dough for a bit before chilling.

  • Ingredients list
  • 1 cup butter, softened
  • 1/2 cup crisco
  • 3/4 cup sugar
  • 1 1/2 cups brown sugar
  • 2 eggs
  • 1 tbs vanilla
  • 1 cup black cocoa
  • 3 cups flour
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 top salt
  • 20 double stuff oreos, finely crushed (30 if using regular oreos)

Directions – in a bowl, cream butter, crisco, brown sugar and sugar.  Add eggs and vanilla.  Blend in dry ingredients.  Mix in crushed oreos (i used my hands).  Scoop out 1/4 cups dough.  Chill and hour.  Preheat oven to  350 degrees.  Line cookie sheets with nonstick baking liners or parchment paper.  Stagger cookies on prepared sheets.  Bake 10 to 11 minutes, no longer.  Cool completely.   Store in covered container.

Chocolate Chip cookie-Oreo-Brownie “cake”

Stepping up my treat game this holiday season.  A chocolate chip cookie crust, a layer of oreo and topped with brownies.  Not sure what to call it!

  • Chocolate chip cookie crust
  • 10 tbs butter, softened
  • 2/3 cup sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 1/2 tsp baking powder
  • 1 3/4 cups flour (scooped from flour bag into your measuring cup so you get the right amount)
  • 1 cup chocolate chips

Directions – preheat oven to 350 degrees.  Line a 9 inch cake pan with tin foil and spray with baking spray.   in a bowl, cream butter, sugar and brown sugar.  Add egg and vanilla.  Blend in flour and baking powder.  Mix in chips. Press into bottom and partway up sides of prepared pan.

Top with a layer of  Oreos!

  • Brownie ingredients
  • 1/2 cup butter, melted
  • 1 cup sugar
  • 3/4 cup baking cocoa
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 3/4 cup flour (scooped from flour bag into measuring cup so you get the right amount)

Directions – in a bowl, combine butter and sugar.  Blend in cocoa, eggs, vanilla, salt and baking powder. Fold in flour.  Evenly spread over oreo layer. 

Bake 20 minutes, or until toothpick inserted in center basically comes out clean. 

Remove from oven and sprinkle with chocolate chips (i used milk chocolate)..  Gently press into top brownie layer. 

Cool completely.   Store in covered container.

Cookies and Cream Cookies

Bills gameday week 3, treat # 1 – cookies and cream cookies.  These are a basic chocolate chip cookie dough  recipe with pieces of oreo, milk chocolate chips and white chocolate chips.  These are very large – 6 cookies, but I shall cut them in half or thirds for tomorrow. 

Remember to scoop your flour from your flour bag into your measuring cup so you get the right amount.  I recommend chilling the individual doughs for a half hour or so to keep them puffy.  Also make sure you preheat your oven so it cycles to the right temp.

  • Ingredients list
  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 2 cups flour
  • 1/2 tso baking soda
  • 1 1/2 tsp baking powder
  • 1 tbs cornstarch
  • 1 tsp salt
  • 1 cup oreos, broken into pieces
  • 1 /2 cup milk chocolate chips
  • 1/2 cup white chocolate chips

Directions – in a bowl, cream sugar, brown sugar and sugar.  Add egg and vanilla.  Blend in dry ingredients.   Mix in oreos and chips.  Divide into 6 even pieces and form into tall mounds.  Chill 30 minutes to an hour.  Line a cookies sheet with parchment paper.  Stagger cookies on sheet like below.

Preheat oven to 375 degrees.  Bake 14 minutes (no longer).  Cool completely.   Store in covered container.

Stepped up Brownies

Oreo filling topped brownies

I had two nearly full packages of oreos, so I used up nearly one to make crust for a chocolate chip cookie dough cheesecake and part of the other in an oreo type filling to put on top of some brownies. 

I used a brownie mix (but used butter instead of oil and heavy cream instead of water.  Just use the same amount as indicated on brownie box). 

  • Ingredients
  • 1 batch of brownies, prepared, baked and cooled in an 8×8 pan. 
  • 1/4 cup crisco
  • 2 tbs sugar
  • 2 cups powdered sugar
  • 1 tsp vanilla
  • 2 tbs water
  • 6 to 10 finely crushed oreos

Topping directions – cream sugar, powdered sugar and crisco.  Blend in vanilla and water.  Mix in crushed oreos.  Frost cooled brownies.  Top with melted chocolate chips.  Store in covered container.

Chocolate cheesecake with an oreo crust

I asked Rob what he wanted for Thanksgiving dinner this year, and he said lasagna. He despises turkey and the rest of the Thanksgiving fixings, so the last few Thanksgivings I have worked and we have had lasagna for our dinner on 🦃day. And when it came to dessert, Rob requested chocolate cheesecake. I think I do pretty well, even though I am new to making cheesecakes. (Cheesecake factory has nothing to worry about though) 😉

I pre-baked the oreo crust for 10 minutes because that is what I see people recommending online for cheesecake crusts. Something about keeping the crust from getting soggy.

  • Crust ingredients
  • 24 oreos, finely crushed
  • 1/4 cup butter, melted

Preheat oven to 300 degrees. Line the inside of a 10 inch springform pan with tin foil on the bottom and halfway up the sides. In a bowl, combine crumbs and butter. Press into bottom of prepared pan. Bake 10 minutes. While crust is in the oven, prepare cheesecake.

  • 24 ounces cream cheese, softened (I used neufchatel, which is softer, less calories, and lower fat)
  • 14 ounce can condensed milk
  • 12 ounce semisweet chocolate chips, melted
  • 4 eggs
  • 1 tsp vanilla

In a bowl, beat cream cheese smooth. Add condensed milk. Blend in melted chocolate. Beat in one egg at a time. Stir in vanilla. Pour over crust. Bake 70 minutes at 300 degrees. Remove from oven. Cool completely. Store covered in fridge.
