Frosted  brownie cookies

A simple, super chocolate cookie made using a brownie mix.  They do not need to be frosted, but I chose to.. and I topped them with m&ms.

I chilled the individual mounds of dough to keep them from spreading too much.   Also wait until the cookies are completely cooled before frosting.  I was a little impatient with the final batch and things got a little messy!

  • Ingredients list
  • 2 brownie mixes (each one I used was 18.2 oz)
  • 1/4 cup baking cocoa (scooped from cocoa container into your measuring cup so you get the right amount)
  • 1/2 cup butter, melted
  • 4 eggs
  • 2 tbs corn syrup, honey, chocolate syrup, (or hot fudge at  room temp)

Directions – in a bowl, combine ingredients.  Scoop out 2 tbs of dough (dough is soft).  Place individual doughs in fridge for a few hours.   Preheat oven to 375 degrees.  Just before baking, i formed the doughs into tall mounds.  Line cookie sheet with nonstick baking liners.  Stagger cookies.  Bake 8 to 10 min (no longer)

  • Frosting ingredients
  • 2 cups powdered sugar (scooped from container into measuring cup)
  • 1 /2 cup baking cocoa
  • 2 to 6 tbs water (depending on consistency you want)

In a bowl, combine ingredients.   Frost completely cooked cookies.  Top with m&ms.  Store in covered container.

Reese’s Pieces-peanut M&M chocolate cookies stuffed with Reese’s pb cups

Well, sadly, on this football friday #20, I am not anxiously awaiting a Bills game this weekend. My guys are not playing. It is weird not to be getting excited for one of our games. Honestly, it It is a shock to my system how sudden the season can end this time of year.

Today’s treat is a chocolate cookie, with peanut butter chips, peanut m&ms and stuffed with a Reese’s peanut butter Christmas tree (I still have a lot left over from the holidays and they are good until August). Of course if peanut butter is not your bag, you can use chocolate chips, m&m’s and stuff them with oreos (or keep them plain).

A plain ore for Rob!

Remember to scoop your flour and cocoa from your container into your measuring cup so you get the right amount. I ran out of time to chill the individual cookie dough pieces, but I would next time in hopes of them spreading less. Also, preheat your oven before baking.

Melt your chocolate chips in a microwave safe bowl in 45 second increments until you can stir smooth.

  • Ingredients list
  • 10 tbs butter, softened
  • 1 1/2 cups brown sugar
  • 1/2 cup sugar
  • 4 eggs
  • 1 tsp vanilla
  • 2 2/3 cups chocolate chips, melted
  • 2 cups flour
  • 1/2 cup baking cocoa
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 bag peanut butter chips (10 oz)
  • 1 bag peanut butter m&ms (9 oz)

Directions – preheat oven to 350 degrees. Line cookie sheet with parchment paper. In a bowl, cream butter, sugar and brown sugar. Add eggs and vanilla. Completely blend in melted chocolate. Fold in dry ingredients. Mix in chips and m&ms. Scoop out 1 1/3 tbs dough (I used a cookie scoop) and slightly flatten

Place a Reese’s tree on top

Top with another flattened 1 1/3 tbs dough

Seal edges

Stagger on prepared cookie sheet.

Bake 10 to 13 minutes, no longer. Cool completely. Store in covered container.

Thanks for stopping by today. Wishing you a day of love, joy and peace.

Stuffed Monster Cookies

I haven’t made stuffed cookies in a while, so I figure I would make these monster cookies and stuff them with Reese’s peanut butter cups (and also hershey kisses bc I ran out of Reese’s). You don’t need to stuff these cookies, they are just fine on their own. But I like to step things up a notch, so I stuffed ’em

Remember to scoop your flour from your flour bag into your measuring cup so you get the right amount. Also, chill the individual cookie dough to prevent spreading. And preheat the oven to 350 degrees for 20 minutes so it cycles to the right temp.

  • Ingredients
  • 1 cup butter, softened
  • 1 cup peanut butter
  • 1 1/2 cups brown sugar
  • 1/2 cup sugar
  • 4 eggs
  • 3 tsp vanilla
  • 3 cups flour
  • 2 tsp baking soda
  • 1 tbs cornstarch
  • 2 cups old fashioned oats
  • 2 cups m&ms
  • 1 cup chocolate chips
  • 1 cup milk chocolate chips
  • Reeses pb cups or other candy, unwrapped

Directions – cream butter, peanut butter, sugar and brown sugar. Add eggs and vanilla. Blend in flour, cornstarch, and baking soda. Mix in oats. Fold in chips and m&ms. Scoop out 1/4 cup dough. Divide in half. Slightly flatten one half.

Place 1 Reese’s on top.

Place other flattened half of dough on top.

Cover Reese’s completley.

Chill a few hours or overnight. Preheat oven to 350 degrees for 20 minutes before baking. Line a cookie sheet with parchment paper. Stagger cookies on sheet.

Bake 12 to 14 minutes (no longer). Cool completely. Store in covered container.

Browned butter/Reese’s pieces/mini M&M chocolate cookies

It is hot and humid today, so why not fire up the oven? 😁 I used browned butter in these because I wanted to speed up the process, as opposed to waiting for the butter to soften to room temp. Browned butter is pretty easy – put it in a pan and cook over low-medium heat, stirring occasionally, just until you see brown specks form. Then immediately remove from heat. I also opted to use Reese’s pieces and mini m&ms, but use whatever mix-ins you want.

Some tips – Remember to scoop your flour directly from your flour bag into your measuring cup so you get the right amount. Chill the individual mounds of dough for a few hours to help prevent spreading. Preheat oven to 350 degrees for 20 minutes when you are ready to bake so it cycles to the right temp.

  • 3/4 cup butter, browned
  • 1 cup brown sugar
  • 1/4 cup sugar
  • 1 tsp vanilla
  • 2 eggs
  • 2 cups flour (scooped from your flour bag into your measuring cup)
  • 1/2 cup unsweetened baking cocoa
  • 1 tbs cornstarch
  • 3/4 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2/3 cup Reese’s pieces
  • 1/3 cup mini m&ms
  • Directions – place butter in a pan and cook over low -medium heat until melted and just until brown specks form. Remove from heat and pour into bowl to cool for for 10 to 14 minutes. Add brown sugar and sugar to butter. Mix in eggs and vanilla. Fold in dry ingredients. Mix in candies. Scoop out 1/4 cups dough. Chill in fridge, or freeze, for a few hours. Preheat oven to 350 degrees for 20 minutes before baking. Line a cookie sheet with parchment paper. Stagger cookies on the sheet, as seen below.

Bake at 350 degrees for 10 to 12 minutes. Cool completely. Store in covered container.

The puffy cookies are back!

After a few batches of my chocolate chip cookies turning out waaaaaayyyy flatter than I prefer, the puffy cookies are back! I head read about using more baking powder to have cookies be puffer and more baking soda for flatter cookies. So, I used all baking powder here and am quite pleased!

Remember to scoop your flour from your flour bag into your flour container so you get the right amount. Chill the individual mounds of dough to prevent spreading. Preheat oven to 400 degrees for 20 minutes before baking so it cycles to the right temp.

  • Ingredients
  • 2/3 cup butter, cold and shredded with a cheese grater
  • 1/2 cup brown sugar
  • 3/4 cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 2 1/2 cups flour (scooped from your flour bag into your measuring cup so you get the right amount)
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup mini chocolate chips
  • 1/2 cup mini m&ms

Directions – in a bowl, cream butter, brown sugar and sugar. Add egg and vanilla. Blend in dry ingredients. Fold in chips and m&ms. Scoop out 1/4 cups of dough and form tall mounds. Chill a few hours in fridge or overnight. When ready to bake, preheat oven to 400 degrees for 20 minutes. Line a cookies sheet with parchment paper. Bake 9 to 11 minutes. Cool completely. Store in covered container.

Triple chip mini m&m chocolate cookies

After some very unusually warm days, it cooled off today, so I thought it would be a good day to bake cookies. I went with a chocolate cookie dough using dark, semisweet and milk chocolate chips (I have a huge bag of each), and mini m&ms. I thought, perhaps, of drizzling melted hershey kisses on top, but not sure that is needed.

Xl bags of 3 kinds of chips

Remember to scoop your flour from your flour bag into your measuring cup (same goes for the baking cocoa). I also recommend chilling the dough for a few hours. And, preheat your oven to 350 degrees for 20 minutes before baking, so that it cycles to the right temp.

  • Ingredients list
  • 1 cup butter, melted and cooled in fridge for 30 to 40 minutes (it will solidify and that’s ok)
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 tsp vanilla
  • 3 tbs water
  • 2 2/3 cups flour
  • 1/2 cup baking cocoa
  • 1 tbs cornstarch
  • 1 tsp baking soda
  • 1 /2 tsp salt
  • 1/2 cup mini m&ms
  • 1/2 cup milk chocolate chips
  • 1/2 cup semisweet chocolate chips
  • 1/2 cup dark chocolate chips

Directions – combine butter and sugar. Add eggs, vanilla, and water. Blend in dry ingredients. Mix in chips. Scoop out 1/4 cups of dough. You may need to flour your hands for this – form tall mounds. Chill mounds of dough for a few hours. Preheat oven to 350 degrees for 20 minutes. Line a cookie sheet with parchment paper. Stagger cookies on sheet. Bake 11 minutes. Because these are chocolate, it is hard to tell when they are done. I err on the side of taking cookies out early bc they will continue to cook on the sheet after being removed from the oven. They will firm up and be fine once completely cooled. Plus, gushy cookies are not bad!

Cool completely. Store in covered container.

XL Peanut Butter cookies with Peanut Butter M&Ms and peanut butter chips

Peanut butter cookies with peanut butter chips and peanut butter m&ms

I have been baking a LOT of chocolate chip variety cookies and brownies lately and wanted to make something different. Plus, I wanted to give something to our friends as a thank you for helping us put recently. They love peanut butter treats so I made peanut butter cookies (extra large, of course), with Peanut butter m&ms and peanut butter chips. These made only 9, but they are large.

Remember to scoop your flour from your flour bag into your measuring cup and to chill the dough for a few hours before baking.

  • Ingredients
  • 1 cup butter, grated with a cheese grater or chopped up into tiny cubes
  • 1 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 cup peanut butter
  • 1 cup cake flour
  • 1 tbs cornstarch
  • 1 tsp baking soda
  • 2 cups all purpose flour
  • 1 cup peanut butter m&ms
  • 1 cup peanut butter chips

Directions – cream butter, brown sugar and sugar. Add eggs, vanilla and peanut butter. Blend in dry ingredients. Fold in chips and m&ms. Divide dough evenly into 9 pieces and form tall mounds. Chill a few hours. Preheat oven to 410 degrees for 20 minutes. On a baking sheet lined with nonstick baking liners, place 4 to 5 cookies. Bake 10 to 12 minutes (light golden patches). They may seem undercooked, but will cook more once removed from oven. Let cool 30 minutes on sheet. Cool completely and store in covered container.
