Victory Monday week 8 treats – Dark chocolate mini m&m milk chocolate chip cookies

That is a mouthful of a title, I know.  But these are a seriously chocolate cookie – melted dark chocolate chips in the dough and filled with mini m&ms and milk chocolate chips.

To melt the chips – place them in a microwave safe bowl and melt them in 45 second increments until you can stir smooth.  

Remember to scoop your flour from your flour bag so you get the right amount.  Also, chill the individual doughs for a few hours before baking, and preheat your oven before baking.

  • Ingredients list
  • 10 tbs butter, softened
  • 1 1/2 cups brown sugar
  • 1/2 cup sugar
  • 4 eggs
  • 1 tbs vanilla
  • 2 2/3 cups dark chocolate chips (melted)
  • 2 cups flour
  • 1/2 cup baking cocoa
  • 2 tsp baking powder
  • 1 tsp salt
  • Mini m&ms
  • Milk chocolate chips

Directions – in a bowl, cream butter, brown sugar and sugar.  Add eggs and vanilla.  Blend in melted chocolate chips.  Fold in dry ingredients.   Mix in m&ms and milk chocolate chips.  Scoop out 1/4 cups dough.  Chill a few hours.   Preheat oven to 350 degrees.  Line a cookie sheet with parchment paper.  Stagger cookies on sheet like below.

Bake 10 to 12 minutes, no longer.  Right after removing from oven, gently press more milk chocolate chips on top of cookies.

These will likely be gushy.  Pop them in the fridge to firm them up.  Store in covered container.

Chocolate chip cookie truffle stuffed dark chocolate cookies

I wanted to make chocolate chip cookies, but they spread out way too much and i found them unacceptable to bring into work, so I decided to crush them up, make them into truffles and stuff them into dark chocolate cookies. 

The truffles were pretty easy to make and I think stuffing them in cookies was a pretty good idea.

Remember to scoop your flour from your flour bag into your measuring cup so you get the right amount.  The same goes for the baking cocoa.  I also recommend freeze the cookie doughs once they are stuffed to keep them puffy.

  • Truffles ingredients
  • Chocolate chip cookies, finely crushed
  • 4 ounces cream cheese softened

Directions – in a bowl, mix well.  Scoop out 1 tbs and roll into balls.  Freeze an hour.

  • Cookies ingredients
  • 5 tbs butter, softened
  • 1/4 cup sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 1/3 cups dark chocolate chips, melted (i put the chips in a microwave safe bowl and microwaved them in 45 second increments until I could stir smooth)

1 cup plus 1 tbs flour

1/4 cup baking cocoa

1 tsp baking powder

1/2 tsp baking soda

Directions – in a bowl, cream butter, sugar and brown sugar.  Add eggs and vanilla.  Stir in melted chocolate.  Blend in dry ingredients.  Scoop out 1 tbs dough and slightly flatten.

Place a chocolate chip cookie truffle on trop

Scoop out another tbs dough and slightly flatten.  Place on top of truffle.

Seal edges.  

Chill doughs a few hours.  Preheat oven to 350 degrees.  Line a cookiensheet with nonstick baking liners or parchment paper.  Stagger cookies on sheet.  Bake 11 to 13 minutes, no longer.  Cool completely.   Store in covered container.

Week 2 victory treats

Since the Bills win over the Dolphins ended after 11 pm, there was no time to make victory treats.   I needed to go to bed because I had a 430 am wakeup to work out!   Oh, and  I do not believe in premature baking of the victory treats.   They can not be made until the victory is complete.  The football gods must not be angered.  So these will be brought in Monday.   Dark chocolate brownies, requested by Rob. 

Couple of notes – these bake at 325, lower than most brownie recipes.  Remember to scoop your flour from your flour bag into your measuring cup so you get the correct amount.

  • 1 1/3 cups dark chocolate chips
  • 1 cup sugar
  • 1/3 cup butter
  • 2 tbs water
  • 2 eggs
  • 1 tsp vanilla
  • 3/4 cup flour (scooped from your flour bag into your measuring cup so you get the right amount)
  • 1 tsp salt
  • Additional 1/2 cup chocolate chips (opt)

Directions

Preheat oven to 325 degrees. Line an 8×8 square pan with tin foil and spray with baking spray.  Set aside.  In a microwave safe bowl, heat in 45 second increments – – 1 1/3 cups dark chocolate chips, butter, sugar and water until you can stir mixture smooth.  Add eggs, one at a time, then vanilla. Blend in dry ingredients.  Mix in additional chips, if using.  Evenly spread into prepared pan.  Bake 20 to 25 minutes or until toothpick inserted in center comes out with a few moist crumbs.  Cool completely.   Cut and store in covered container.

Flourless chocolate cake/brownies

A little story behind why I made this cake.  Rob got himself a piece of  flourless chocolate and put it in the fridge.  I was reorganizing, and it plopped onto the floor.  To make good, I made a one layer cake.  So simple to make!  Very chocolately!

  • Ingredients list
  • 1/2 cup butter
  • 1 cup dark chocolate chips
  • 3/4 cup sugar
  • 3 eggs
  • 1 tsp vanilla
  • 1/2 cup baking cocoa (scooped from container into your measuring cup so you get the right amount.

Directions – preheat oven to 375 degrees.  Line only the  bottom of a round cake pan with parchment paper and spray with Pam.  In a microwave safe bowl, melt butter and chocolate chips in 30 second increments until you can stir smooth.  Add sugar.  Blend in eggs, one at a time.  Mix in vanilla.  Blend in cocoa.  Spread evenly into pan.  Bake 25 minutes, no longer.   Cool ten minutes.  Flip over onto  serving plate.  Cool completely.  Store in covered container.

Is the ganache necessary? Why yes!

These brownies, a request from my hubby, which we will bring to his mom tomorrow. They are not a pre-victory treat for the Bills. I repeat, they are not a pre-victory treat. I can not take such chances heading into a divisional playoff game at Kansas City tomorrow. I may not be superstitious, but a little stitious! Or maybe I am superstitious. I text my college roomate every game day and we are on a 6 game winning streak. Coincidence? I think not. Go Bills!

Reminders -preheat your oven to 325 degrees for 20 minutes before baking. Scoop your flour from your flour bag into your measuring cup. Don’t overmix the batter. Just mix it until the flour is blended in.

A brownie masterpiece!
  • Ingredients
  • 1 1/3 cups dark chocolate chips
  • 5 1/3 tbs butter
  • 1 cup sugar
  • 2 tbs water
  • 2 eggs
  • 1 tsp vanilla
  • 3/4 cup flour
  • 1/2 tsp salt

Directions – preheat oven to 325 degrees. Line an 8×8 pan with parchment paper and spray with baking spray. In a saucepan, melt butter, chocolate chips, sugar and water over low-medium heat. Stir occasionally until chocolate and butter melted (does not take long). Remove from heat and pour into a bowl. Beat in eggs and vanilla. Blend in flour and salt. Spread into prepared pan. Bake for 27 to 32 minutes, or until a toothpick inserted,in the center comes out with a few crumbs. Cool completely.

  • Ganache ingredients
  • 1/2 cup heavy cream
  • 3/4 cup semisweet chocolate chips
  • 3/4 cup milk chocolate chips

Directions- pour chips in a bowl. In a saucepan, heat cream over medium heat until it bubbles. Pour over chips. Cover and let stand 5 minutes. Stir smooth. If you have a few chips that won’t smooth (did I just create a new verb?), you can microwave mixture in 20 second increments until you can stir it smooth. Cut brownies and store in covered container.

Dark chocolate triple chip cookies

Dark chocolate triple chip cookies

For the first time in many weeks (maybe 20), there is no football! But I still,felt the need to bring something to work on a Monday (ahead of this nor’easter), so I decidedto go with dark chocolate cookies. I picked up a monster size bag of dark chocolate chips from bjs, along with a large bag of semisweet chips! One can never have too many bags of chocolate chips!

Gooey chocolate cookies!
  • Ingredients
  • 3 tbs butter
  • 2 1/4 cups dark chocolate chips
  • 3 eggs
  • 3/4 cup sugar
  • 1 tbs vanilla
  • 1/4 cup plus 2 tbs flour
  • 1/4 tsp plus 1/8 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup milk chocolate chips
  • 1/3 cup,semisweet chocolate chips
  • 1/3 cup dark chocolate chips

Directions – Melt butter and 2 1/4 cups dark chocolate chips in 30 second increments until you can stir smooth. Add eggs and vanilla. Plenty in dry ingredients. Fold in chips. Mixture will be quite soft. Scoop out 1/4 cups of dough, place on a flat surface and chill a few hours or overnight. Preheat oven to 350 degrees for 20 minutes. Line a sheet with nonstick baking liners. You likely will have to use a spatula to scrape dough from your flat surface to your baking sheets. Bake 10 to 12 minutes. They will be slightly gooey in center. They will continue to bake on cookie sheet once removed from oven. Sprinkle warm cookies with powdered sugar. Store in covered container.
