Magic cookies (hello dollies cookies)

This is a simple recipe – only 5 ingredients (4 if you want to omit the walnuts). They are like magic cookie bars (or Hello dollies as I call them), but in cookie form. My advice is do not bake them longer than 10 minutes and remember to leave them on the cookie sheet for 10 minutes before removing them so they firm up a bit.

  • Ingredients list
  • 4 sheets of graham crackers finely crushed
  • 1 cup chocolate chips (you can also use different flavors, i.e., milk, white etc)
  • 1/2 cup finely ground walnuts (or other nuts or you can omit)
  • 1 1/2 cups coconut
  • 1 can condensed milk (14 oz)

Directions – preheat oven to 350 degrees. Line cookie sheet with parchment paper. In a bowl. Combine crushed graham crackers, chips, nuts, coconut and condensed milk. Scoop out 1/3 cups of dough (I used a cookie scoop). I got nine cookies. Stagger on prepared cookie sheet. Bake 10 minutes (no longer). Let set for 10 minutes. Remove and cool completely. Store in covered container.

Mid week chocolate chip cookies

Rob alerted me to the fact that I have not baked “in a while” (3 days 😉) and wondered if I could bake a treat. So after we took our nightly walk with Gracie, I whipped up some chocolate chip cookies. Being a little short on time, I used crisco as opposed to butter (I always like to chill my dough when I use butter to try and keep the puffiness in the cookies).

Remember to scoop your flour bag into your measuring cup so you get the right amount. And, preheat your oven to 375 degrees for 20 minutes before baking so it cycles to the right temp.

  • Ingredients list
  • 1 cup crisco
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 2 tbs water
  • 1 tsp vanilla
  • 3 cups flour
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 cup chocolate chips
  • 1 cup mini chocolate chips

Directions – preheat oven to 375 degrees. Line a cookie sheet with nonstick baking liners. In a bowl, cream crisco, sugar, brown sugar,eggs, vanilla and water. Add dry ingredients. Fold in chips. Scoop out 1/4 cups of dough. Stagger cookies on cookies sheet. Bake 10 to 12 minutes. Remove and cool completely. I stored mine in the fridge to firm them up.

Chocolate hot cocoa and marshmallow chip cookies

I saw this wonderful creation from Nestlé at Aldi and I bought, not one, but 2 bags. Hot cocoa and marshmallow chips? Genius!

I figure pop one bag in some chocolate cookie dough and magic happens.

I put up both our trees this weekend.. and pulled put my favorite ornament. (I also love the red haired doll from Rudolph, which is right next to it). It is year 34 with this Bills ornamant, and am hoping Santa comes through this time!

Remember to scoop your flour from your flour bag into your measuring cup so you get the right amount, scoop out your dough and then chill the individual mounds at least an hour, and preheat your oven to 350 degrees for 20 minutes before baking so it cycles to the right temp.

  • 1 1/2 tbs vegetable oil
  • 1 1/2 cups brown sugar
  • 1/3 cup plus 3 tbs sugar
  • 3 eggs
  • 2 tsp vanilla
  • 3 3/4 cups flour
  • 3/4 cup baking cocoa
  • 3 tsp cornstarch
  • 1/2 tsp salt
  • 1 bag of hot cocoa chips
  • 1 cup milk chocolate chips

Directions – cream butter, oil, sugar, and brown sugar. Add eggs and vanilla. Blend in dry ingredients. Fold in chips. Scoop out dough (I used my cookie scoop that is 6 tbs worth). I formed them into tall mounds and chills them for at least an hour. Line a cookie sheet with parchment paper. Preheat oven to 350 degrees for 20 minutes before baking. Stagger cookies on prepared sheets. Bake 15 to 18 minutes. Cool completely. Store in covered container.

Sugar Cookie Bars

I wanted to make cookies for work tomorrow morning as college football’s championship weekend wraps up, but I am also tired (because i put up one of our Christmas trees), so I make them into sugar cookie bars instead.

Remember to scoop from your flour bag into your measuring cup so you get the right amount. Preheat your oven to 35p degrees for 20 minutes before baking. And, don’t bake these longer than 10 to 12 minutes. They may seem a little doughy, but you don’t want them to dry out.

  • Ingredients list
  • 1/2 cup crisco
  • 1/2 cup butter crisco
  • 1 cup sugar
  • 1 tsp vanilla
  • 2 tbs water
  • 1 egg
  • 2 1/2 cups flour
  • 2 tsp baking powder

Directions – preheat oven to 350 degrees for 20 minutes so your oven cycles to the right temp. Spray a 9×13 pan with baking spray. In a bowl cream crisco, butter crisco and sugar. Add egg, eater and vanilla. Stir in dry ingredients. (If dough seems to sticky, add another 1/4 cup flour). Press evenly into prepared pan. Bake 10 to 12 minutes. Cool completely.

  • Frosting ingredients
  • 1/2 cup butter
  • 3 cups powdered sugar
  • 4 to 6 tbs milk (depending on consistency you want)
  • 1 tsp vanilla

In a bowl, cream butter and powdered sugar. Add milk and vanilla. Frost Bars. Cut and store in covered container.

Nutter butter peanut butter cookies topped with melted hershey kisses

Part 2 of my treats for the annual day of giving are nutter butter peanut butter cookies. They are peanut butter cookies with crushed nutter butters added. I have done something similar with oreos.

  • Ingredients
  • 1/2 cup butter flavor crisco (or softened butter)
  • 1/4 cup peanut butter
  • 1/4 cup sugar
  • 3 tbs brown sugar
  • 1/4 cup powdered sugar
  • 1/3 cup plus 2 tbs oil
  • 1 egg
  • 2 tbs water
  • 1 1/4 cups flour
  • 3 tbs cornstarch
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp cream of tartar
  • 24 nutter butters, finely crushed in a food processor

Directions – preheat oven to 350 degrees for 20 minutes before baking. In a bowl, cream butter crisco, peanut butter, sugar, brown sugar, and powdered sugar. Blend in oil, water, and egg. Fold in dry ingredients and crushed nutter butters. Scoop out 2 to 3 tbs of dough and form domes. On a cookie sheet lined with parchment paper, stagger cookies. Bake 8 to 9 minutes (no longer). Cool completely. Top with melted chocolate. Store in covered container.

Week 11 victory cookies

A classic cookie is what I opted to bake for my week 11 Bills victory cookies – chocolate chip.  This has not been a season for as many victory cookies as past years, but I take wins when we get ’em.  So I baked cookies at 830 tonight.  Yikes!

Preheat oven to 375 degrees before baking. Line a cookie sheet with nonstick baking liners. Stagger cookies on prepared sheets. Bake 9 to 11 minutes. Cookies will be a little undercooked on top, but bottoms will be browned. Cool completely. Chill in fridge to help cookies firm up. Store in covered container.

Mini M&M chocolate chip cookies for football Friday #11

I was a little short on time tonight, so I made mini M&M chocolate chip cookies, using crisco and butter crisco. By using crisco instead of butter, I did not need to chill the dough to keep them puffy.

Remember to scoop your flour from your flour bag into your measuring cup so you get the right amount. Also preheat your oven to 375 degrees for 20 minutes before baking.

  • Ingredients
  • 1/2 cup crisco
  • 1/2 cup butter crisco
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 2 tbs water
  • 2 tsp vanilla
  • 3 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup mini m&ms
  • 1 cup chocolate chips

Directions – preheat oven to 375 degrees. Line a cookie sheet with parchment paper. In a bowl, cream crisco, butter crisco, sugar, brown sugar, eggs, water and vanilla. Blend in dry ingredients. Mix in chips and m&ms. Scoop out 3 tbs of dough and form tall cylinders. Stagger on prepared cookie sheets. Bake 8 to 11 minutes. Bottoms will be golden. Cookies will be a little undone on top, but will firm up as they cool. Store in covered container.

Chocolate Oreo Cookies

I was looking to make something chocolate, but wanted the cookies to be a little different, so I decided to add some finely crushed oreos. And added some white frosting. Rob gave me a thumbs up. Always good to get a thumbs up from your chief taste tester!

Remember to scoop your flour from your flour bag into your measuring cup. These don’t really spread. I opted to keep them puffy and mound-like, but you can slightly flatten them if you want. Don’t bake these longer than 11 minutes. I know they seem undercooked, but they will firm up as they cool. If you bake them too long, they will be dry.

  • 1/2 cup butter, softened
  • 1/4 cup sugar
  • 3 tbs brown sugar
  • 1/4 cup powdered sugar
  • 1/3 cup vegetable oil
  • 1 egg
  • 1 tsp vanilla
  • 1 cup flour (scooped from your flour bag into your measuring cup)
  • 1/4 cup baking cocoa
  • 3 tbs cornstarch
  • 1/4 tsp baking powder
  • 1/4 tsp cream of tartar
  • 24 oreos, finely crushed

Directions – cream butter, sugar, brown sugar and powdered sugar. Add eggs, oil and vanilla. Blend in dry ingredients and crushed oreos. Scoop out 1/4 cups dough and form tall mounds. Chill a few hours. Preheat oven to 350 degrees for 20 minutes. Line a cookie sheet with parchment paper. Stagger cookies on sheet. Bake 9 to 11 minutes (no longer than 11). Cool completely.

  • 1/4 cup butter, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla
  • 1 tbs cream (or more)

Cream butter and powdered sugar. Add vanilla and cream. Blend well. Frost cookies. Store in covered container.

Frosted and cookie dough topped vanilla cookies

These are a simple vanilla cookie, frosted with a white chocolate frosting and topped with eggless/edible cookie dough.

  • 1/2 cup butter, softened

  • 1 egg white
  • 1 tsp vanilla
  • 2 1/4 cups flour (scooped from your flour bag into your measuring cup)
  • 1 1/2 tsp baking powder

Directions- cream butter, sugar and brown sugar. Add egg, vanilla, and egg white. Blend in dry ingredients. Scoop put 1/4 cups dough. Chill a few hours. Preheat oven to 350 degrees for 20 minutes before baking. Line a cookie sheet with parchment paper. Stagger cookies. Bake 12 to 14 minutes (no longer or else they will dry out) cool completely.

  • White chocolate frosting
  • 6 tbs butter, softened
  • 1/4 cup brown sugar
  • 1 tbs sugar
  • 2/3 cup white chocolate chips, melted
  • 1/4 cup plus 2 tbs flour
  • 3/4 cup powdered sugar
  • 2 to 3 tbs milk

Cream butter, brown sugar and sugar. Add melted white chocolate. Blend in flour and powdered sugar. Add milk. (Might need to add more milk to get the consistency you want). Frost cooled cookies.

  • Cookie dough
  • 2 tbs butter, softened
  • 1/4 cup brown sugar
  • 1/4 cup flour
  • 1 tsp vanilla
  • 1-2 tbs heavy cream
  • 3 tbs mini chocolate chips

Cream butter and brown sugar. Add vanilla. Stir in flour then cream. Mix in chips. Scoop out dough and place on frosted cookies. Store in covered container.

Brownie cookies sandwiches filled with cookie dough

My favorite of all the sports postseason, is the nhl.  The level of excitement in the arenas and adrenaline from the crowds, plus the stress of overtime,  when if your team is not playing, can not be beat. l love football, but  playoff hockey is another animal.

What better way to celebrate than with cookies that look like pucks!  So I made these and filled them with cookie dough filling.  You could also do peanut butter or vanilla or chocolate.

A reminder to scoop your flour from your flour bag into your measuring cup so you get the right amount. No need to chill this dough. It doesn’t spread too badly. Also, preheat your oven to 350 degrees for 20 minutes so it cycles to the right temp.

  • Brownie cookies ingredients
  • 6 tbs butter
  • 2 1/2 cups chocolate chips (I used a combo of dark and semisweet)
  • 2 cups sugar
  • 6 eggs
  • 2 tsp vanilla
  • 2 cups flour
  • 1/2 tsp baking powder
  • 1 tsp salt

Directions – preheat oven to 350 degrees. Line cookie sheets with parchment paper. In a microwave safe bowl, melt butter and chips in 40 second increments until you can stir smooth. Blend in sugar. Add vanilla and eggs. Fold in flour, baking powder and salt. Mixture will be thick. Scoop out 2 tbs dough. Stagger on prepared cookie sheets.

Bake 9 to 11 minutes. Cool completely.

  • Filling ingredients
  • 11 tbs butter,melted
  • 2 1/2 cups powdered sugar
  • 1/2 cup flour
  • 1 tsp vanilla
  • 3 to 4 tbs heavy cream

Directions – blend butter, powdered sugar and flour. Add vanilla. Mix in enough heavy cream to get the consistency you want. Spoon between 2 cookies. Store in covered container.
