Brown sugar brownies

Stunningly, I am out of sugar.  I have no idea how that happened.  I am usually so on top of things.  But, when I went to bake brownies for Rob, I had no granulated sugar, so i had to use  brown sugar instead.  These are easy to make,  and fudgy and soft.  I will rectify the grave sugar error tomorrow and buy a huge bag from BJs.

Remember to preheat your oven to 350 degrees before baking.  I used an 8×11 Corning ware pan, so these bake in about 22 minutes.  If you use an 8×8 or 9×9, they will take longer.

  • Ingredients list
  • 1/2 cup butter
  • 1 cup brown sugar, firmly packed into your measuring cup
  • 1 cup chocolate chips (I used dark chocolate)
  • 2 eggs
  • 1 tsp vanilla
  • 3/4 cup flour

Directions – preheat oven to 350 degrees.  Spray a 8×11 pan with baking sprat and set aside.  Place butter, brown sugar and chocolate chips in  a microwave safe bowl.  Place in microwave for 1 minutes.  Stir until chips are completely melted.  You may have to continue to heat in additional 15 second increments to completely melt mixture. Add 2 eggs and vanilla.  Blend in flour.   Evenly spread into pan.  Bake 20 to 25 minutes or until a toothpick inserted in center comes out with a few moist crumbs.  Cool completely.  

Store in covered container. 

Peanut butter frosted brownies

  • Brownies ingredients
  • 10 tbs butter, melted
  • 1 cup sugar
  • 1/3 cup brown sugar
  • 3/4 cup unsweetened baking cocoa
  • 1 tsp vanilla
  • 2 eggs
  • 1 egg yolk
  • 1 tbs corn syrup
  • 2/3 cup flour
  • 1 tbs cornstarch
  • 1/2 tsp salt

Directions- preheat oven to 350 degrees.  Line an 8×8 baking pan with tin foil and spray with pam.  Set aside.   In a bowl, combine butter, sugar, and brown sugar.  Add eggs and yolk.  Blend well.  Fold in dry ingredients. Spread into prepared pan.  Bake 20 to 25 minutes or until a toothpick inserted in the center comes out with a few moist crumbs.  Cool completely.

  • Peanut butter frosting ingredients
  • 1/2 cup butter, softened
  • 3/4 cup peanut butter
  • 2- 2 1/2 cups cup powdered sugar
  • 1 tbs milk
  • 1 tsp vanilla

Directions – In a bowl, cream butter and peanut butter.  Blend in powdered sugar slowly.  Add vanilla and  enough milk to get the consistency you want.  Frost brownies.

Dark chocolate fudge brownies with chocolate icing

These are an amazing brownie for those of you who love chocolate – very fudgy, dense and chocolate!  Super simple to make. Do they need the icing?  Probably not.  But i say the more chocolate and sweetness,  the better.i underbaked these a bit.  I would probably bake them another 2 or  minutes next time.  But I did put them in the fridge to firm them up.

Remember to scoop your flour from your flour bag into your measuring cup so you get the right amount.  I also made the icing while the brownies were cooling and frosted them while they were warm, which likely added to the gushiness!

  • Ingredients
  • 1 1/3 cups dark chocolate chips
  • 3/4 cups butter
  • 1 1 /2 cups sugar
  • 4 eggs
  • 1 tbs vanilla
  • 3/4 cup flour
  • 1 tsp salt
  • 3/4 cup chocolate chips

Directions – preheat oven to 350 degrees.  Line a 9×13 pan with aluminum foil and spray with pam.  Set aside.  in a microwave safe bowl, heat butter and 1 1/3 cups dark chocolate chips in 45 second increments in microwave until you can stir smooth.  Mix in sugar, then beat in eggs, one at a time.   Blend in dry ingredients, then chips.  Evenly spread into prepared pan.  Bake for 28 to 32 minutes or until a toothpick inserted in center comes out with a few moist crumbs.  Remove from oven and start making the icing.

  • Icing ingredients
  • 1 1/3 cups chocolate chips
  • 5 tbs butter
  • 1/4 cup corn syrup
  • 1/2 cup heavy cream

Directions – in a microwave safe bowl, combine chips, butter and corn syrup.  Microwave in 45 second increments until you can stir smooth.  Set aside.  In another microwave safe bowl, heat cream for 2 minutes.  Whisk into chocolate mixture.  Pour over warm brownies. Let set.  Cut and store in covered container

White chocolate brownies

I have a few non chocolate loving friends and work, so I wanted to bring in something non chocolate they would enjoy, so I used white chocolate chips and made white chocolate brownies.  Very fudge like.  The only thing missing- sprinkles!

  • 1/2 cup butter
  • 1 1/4 cups white chocolate chips
  • 1/3 cup sugar

Directions – preheat oven to 325 degrees.  Line an 8×8 pan with tin foil and spray with pam.  Set aside.  In a microwave safe bowl, combine white chips and butter.  Microwave in 45 second increments until you can stir smooth.  Add sugar.  Beat in eggs, one at a time.  Mix in flour.  Evenly spread into pan.  Bake 20 to 25 minutes, edges will be light golden and center will be set.  Cool completely.

In a microwave safe bowl, combine and microwave in 45 second increments until you can stir smooth.  Spread on top of brownies.  Cut and store  in covered container.

Flourless chocolate brownies

I got a request for dark chocolate brownies, so I went with a flourless version this time.  Super simple and they only take 20 to 25 minutes to bake.

Remember to preheat your oven before baking.

6 tbs butter

1 cup dark chocolate chips

1/4 cup sugar

1/3 cup brown sugar

2 eggs

3 tbs unsweetened cocoa powder

3 tbs cornstarch

Directions – line an 8×8 pan with tin foil and spray with pam.  Set aside.  Preheat oven to 350 degrees.  In a microwave safe bowl, combine butter and chocolate chips.  Microwave in 45 second increments until you can still smooth. Add sugar and brown sugar.  Mix in eggs one at a time.  Blend in cocoa and cornstarch.   Spread evenly into prepared pan. Bake 20 to 25 minutes (a toothpick inserted into center comes out with a few moist crumbs).  Cool completely.  Cut and store in covered container.

Fudgy brownies filled with chocolate chip cookies and topped with melted Hershey Kisses

When it’s 100 degrees outside, some people may hesitate wanting to turn on their oven.  I am NOT one of those people.   So today, I made fudgy brownies, pressed pieces of chocolate chip cookie dough on top and topped them with melted hershey kisses after they are baked and cooled.

Remember to scoop your flour from your flower bag into your measuring cup so you get the right amount.  Also preheat your oven before baking so it bakes these treats properly.

  • Chocolate chip cookie ingredients
  • 1/2 cup crisco
  • 1/2 cup sugar
  • 1 cup brown sugar,firmly packed into measuring cup
  • 2 eggs
  • 1 tsp vanilla
  • 2 1/4 cups flour
  • 1 tbs cornstarch
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup chocolate chips

Directions – in a bowl, cream crisco, butter and brown sugar. Blend in eggs and vanilla.   Blend in dry ingredients.  Fold in chips.  Set aside

  • Brownies ingredients
  • 1 1/2 cups butter, melted
  • 3 cups sugar
  • 1 tbs vanilla
  • 5 eggs
  • 1 cup unsweetened baking cocoa
  • 1 1/2 cups flour (scooped from flour bag into your measuring cup so you get the right amount)
  • 3/4 tsp baking soda
  • 1/2 tsp salt

Directions – preheat oven to 350 degrees.  Line a 9×13 pan with parchment paper.  Set aside.  In a bowl, blend melted butter and sugar.  Add baking cocoa and vanilla, then eggs, one at a time.  Blend well.  Mix in remaining dry ingredients.   Evenly spread into prepared pan.

Spread pieces of cookie dough on top. 

Bake 27 to 35 minutes, or until toothpick inserted in center comes out with a few moist crumbs.  Cool completely.  

Top with melted chocolate. 

Lemon squares

A request for these were from a friend from work- lemon squares.  They were super easy to make and are topped with a lemon frosting.  

I used fresh lemon juice and lemon zest.  You can use bottled lemon juice if you prefer.  Honestly, zesting a lemon seems like unnecessary work!

Remember to scoop your flour from your flour bag into your measuring cup so you get the right amount.  Also preheat the oven before baking.. and, take these out after 16 or 17 minutes, even if they don’t look completely done.

  • Bars ingredients
  • 1/2 cup butter, melted and cooled for 10 minutes
  • 1/2 cup sugar
  • 1/4 cup powdered sugar
  • 2 eggs
  • 2 tsp lemon zest (opt)
  • 1 tbs lemon juice
  • 1 cup flour
  • 1/2 tsp salt

Directions – preheat oven to 350 degrees.  Line and 8×8 pan with parchment paper.  Set aside.   In a bowl, combine butter, sugar and powdered sugar.  Add eggs, juice and zest.  Blend in flour and salt.  Spread evenly into tapered pants.  Bake 16 to 17 minutes, no longer.  Cool completely.

  • Frosting ingredients
  • 1 cup powdered sugar
  • 2 tbs lemon juice

Directions – combine and evenly spread over bars.  

Let frosting set before cutting.  Store in covered container.

Brownies with chocolate chip cookies baked in

I did not have time to make for the first round of the NFL draft, so I made up for it for rounds 2 and 3 – brownies with chocolate chip cookies baked in.

BTW, I loved the Bills pick of Maxwell Hairston last night.  Filled a need… and, ow cool was it to see him congratulate everyone who was drafted before him?  He will fit right in with Bills Mafia.

  • Chocolate chip cookie ingredients list
  • 1/3 cup butter softened
  • 1/3 cup brown sugar
  • 2 tbs sugar
  • Egg yolk
  • 1 tsp vanilla
  • 3/4 cup flour (scooped from your flour bag into your measuring cup)
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup chocolate chips

Directions – in a bowl, cream butter, brown sugar and sugar.  Add yolk and vanilla.  Blend in dry ingredients.  Fold in chips.  Scoop out tbs of dough and roll into balls.  Freeze them as you make the brownie batter.

  • 2 cups chocolate chips
  • 1/2 cup butter
  • 1 cup sugar
  • 3 eggs
  • 1 tsp vanilla
  • 1 1/4 cups flour
  • 1/4 tsp baking soda
  • 1/4 tsp salt

Directions – preheat oven to 350 degrees.  Line a 9×13 pan with tin foil and spray with baking spray.  Set aside. in a microwave safe bowl, heat butter and chips in 45 second increments until you cam stir them melted.   Blend in sugar, eggs and vanilla. Mix in dry ingredients. Evenly spread into prepared pan.  Gently press cookie dough mounds into top of brownie dough.  Bake 15 to 20 minutes, until toothpick inserted in brownie batter comes out with a few mois crumbs.  Cool completely.   Store in covered container.

Golden oreo frosting

A simple frosting to put on brownies, a cake or even use as a cookie sandwich filling. 

1/2 cup crisco

3 -4  cups powdered sugar

2 tsp sugar

1 tsp vanilla

Golden oreos, finely crushed (i went with one cup here)

2 tbs water (or more to get the consistency you want

Directions – in a bowl combine all crisco, powdered sugar, sugar, vanilla,  and 2 tbs water. Add additional water. Ine tbs at a time, to get the consistency you want.  Blend in finely ground oreos.  You may want to add more water, depending on the consistency you want.

Celebrating Josh’s MVP.  Treat #2 – cookie dough brownies

The second treat of my hat trick of treats for Josh’s MVP are a favorite of many  cookie dough brownies.   They looks remarkably like the caramel oreo crust treat in pix, but are much different! 🙂

I used a brownie mix for these, but you can use any homemade recipe if you want.  These are also easy to make and super sweet!

  • Ingredients
  • 1 pan of brownies (9×9 or 8×8 recipe) prepared and cooled completely
  • 4 tbs  butter, almost completely melted
  • 1/4 cup sugar
  • 1/4 cup brown sugar
  • 1 tsp vanilla
  • 1/2 tbs milk
  • 1/3 cup flour

Directions – in a bowl, combine butter, sugar and brown sugar.  Add milk and vanilla.  Fold in flour.  Mix well and press evenly over brownies.  Top with melted hershey kisses or chocolate chips.  I recommend cutting these before the melted chocolate completely sets,  because it is easier, trust me.  Store in covered container .
