Black cocoa cutout cookies

  I am trying to make as many different cutout cookies for Christmas as I can before Santa arrives on the 25th.  So far, I have made gingerbread men, a chocolate chip version, and chocolate version, using regular unsweetened cocoa.    Today, I made a black cocoa version.  

I used a mix of all purpose flour and cake flour, but you can use just AP flour if you want.

Remember to scoop your flour from their bags into your measuring cup so you get the right amount.  I cut out the cookies and then chilled them before baking.  And preheat your oven before baking.

Ingredients list

  • 1/2 cup butter, softened
  • 1 cup butter
  • 1 egg
  • 1 tsp vanilla
  • 1/2 cup greek yogurt or sour cream
  • 1 1/2 cups all purpose flour
  • 1 cup cake flour
  • 1/2 cup black cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp salt

Directions – in a bowl, cream butter and sugar.  Add egg and vanilla.  Blend on greek yogurt.   Mix in dry ingredients.   Sprinkle  flour on a clean surface.  Roll dough to desired thickness and cut with cookie cutter.  Chill a few hours. When ready to bake, line a cookie sheet with parchment paper.  Preheat oven to 350 degrees.  Place cutouts on sheet, leaving some room. 

Bake 8 to 10 minutes.   Cool completely.

Frosted Black cocoa sugar cookies

Oreo filling topping

These are a fun cookie.  A chocolate sugar cookie made with black cocoa (regular unsweetened cocoa is fine to use too).   You roll the dough into balls, gently smash them down and then sprinkle with sugar before baking.

Remember to scoop your flour and powdered sugar from their containers so you get the right amount.   I advise chilling the smashed individual doughs for a few hours before baking.  And you can frost these however you want.  I used a homemade oreo filling, cookie dough and peanut butter filling.  And topped them all with melted milk chocolate chips.

  • Ingredients list
  • 1 cup butter, softened
  • 3/4 cup vegetable oil
  • 1 1/2 cups sugar
  • 3/4 cup powdered sugar
  • 2 Eggs
  • 2 tsp vanilla
  • 3 tbs Water
  • 5 1/2 cups flour
  • I cup Black cocoa
  • 3/4 tsp cream of tartar
  • 1/2 tsp Baking soda
  • 1/2 tsp salt

Directions- in a bowl, cream butter, sugar, powdered sugar and vwgetable oil.  Blend in eggs, water and vanilla.  Fold in dry ingredients.  Scoop out 1/4 cups of dough.  Spray the bottom of a glass with pam and gently flatten doughs a bit.  Sprinkle with sugar.  You may have to re-spray bottom of glass a few times.  Chill doughs a few hours.   Preheat oven to 350 degrees.  Line a cookie sheet with parchment paper.  Stagger cookies on sheet.  Bake 10 to 14 minutes, no longer.  Cool completely.   Frost as desired.  Store in covered container.

Black cocoa fudge cake

Thick.  Dark chocolate.  Fudge.  Cake.  With chocolate ganache.  Not much else to say, really.  If you love chocolate, you will love this cake.

Remember to scoop your flour from your flour bag into your measuring cup so you get the right amount.  And preheat the oven before baking. 

And I recommend making the ganache while the cake is baking so it can thicken up for when you are ready to frost the cake.

  • Ingredients list
  • 1/2 cup butter,  melted
  • 1 1/4 cups brown sugar, firmly packed into measuring cup
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 cup warm water
  • 1 cup flour
  • 1/4 cup black cocoa
  • 1/2 tsp baking soda

Directions – preheat oven to 350 degrees.  Line a round 8″ cake pan with parchment paper.  In a bowl, combine melted butter and brown sugar.  Add eggs, vanilla and warm warmed.  Blend in dry ingredients.  Evenly spread into prepared pan.  Bake 25 to 32 minutes, or until toothpick inserted in center comes out with a few moist crumbs.

  • Ganache ingredients
  • 1 cup heavy cream
  • 1 1/3 cups dark chocolate chips

Directions – in a microwave safe bowl, heat heavy cream 2 to 3 minutes (make sure bowl is big enough so cream doesn’t boil over and make a mess in yiur microwave).  Add chips and stir until chips and heavy cream are fully blended.  Let it firm up while the cake bakes and cools.  Frost cake.

Rocky Road Cookies

I know rocky road is a favorite ice cream for a lot of people, so I decided to make it in cookie form. 

Who doesn’t love chocolate, milk chocolate chips, finely ground almonds  and tiny marshmallow bits, and a cookie dough made with black cocoa so it tastes like an oreo? I would imagine very few people!

If you don’t like almonds, you can, of course, leave them out.

Remember to scoop your flour and dark or unsweetened baking cocoa from the container into your measuring cup so you get the right amount.  After scooping out the dough (1/4 cup), I chilled them for a few hours before baking to help keep them puffy. And, preheat your oven before baking.

  • 3/4 cup brown sugar, firmly packed
  • 1/3 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 tbs corn syrup
  • 2 1/2  cups flour
  • 2/3 cup black or unsweetened baking cocoa
  • 1 tbs cornstarch
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2/3 cup almonds, finely ground
  • 1 cup milk chocolate chips
  • 2/3 cup mini marshmallow bits

Directions – in a bowl, cream butter, sugar and brown sugar.  Add eggs, vanilla and corn syrup. Blend in dry ingredients.  Mix in chips, nuts and marshmallow bits.   Scoop out 1/4 cups of dough and place in fridge for a few hours.  When ready to bake, preheat oven to 350 degrees and line a cookie sheet with parchment paper.  Stagger cookie doughs on prepared sheet. 

Bake 10 to 11 minutes, no longer.  Cool completely.   Store in covered container.

Black cocoa oreo cookies stuffed with chocolate chip cookies

I made some chocolate chip cookies that did not turn out acceptable (the_ were very gooey, yet browned on the bottoms), so I decided to stuff them in another treat.  I whipped up some black cocoa cookies with crushed oreos, cut the chocolate chip cookies in half, formed them into a square and stuffed them in the black cocoa cookies.  You don’t have to stuff them with anything, or could use candy.

Remember to scoop your flour from your flour bag into your measuring cup so you get the right amount (same goes for the black cocoa)

After the cookie dough is stuffed. I recommend chilling them for a few hours.  Remember to preheat your oven before baking

  • Ingredients list
  • 1 1/2 cups butter, softened
  • 1 1/2 cups brown sugar
  • 1 cup sugar
  • 2 eggs
  • 2 tsp vanilla
  • 3 cups flour
  • 1 cup black cocoa (if you don’t have any, use unsweetened cocoa)
  • 1 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 25 finely crushed oreos
  • Candy, brownies or whatever you are stuffing the cookies with

Directions – in a bowl, cream butter, brown sugar and sugar.  Add eggs and vanilla.  Blend in dry ingredients.   Mix in crushed oreos.  Scoop out 1/4 cups dough.  Divide in half and flattened each half.   Place a smushed up piece of cookie. 

Top with other flattened half. 

Seal edges.  

Chill individual stuff doughs for a few hours.  Line a cookie sheet with parchment paper.  Preheat oven to 350 degrees.  Stagger cookies on sheet.  Bake 10 to 14 minutes.  Cool completely.

Black cocoa/crushed oreo puck cookies

In honor of the four nations faceoff championship game, I wanted to make black cocoa cookie resembling a puck.  These are puffer than pucks, but they’ll be just fine.  These also used finely ground oreos. 

Remember to scoop your flour from your flour bag into your measuring cup so you get the right amount.   I also recommend chilling the individual mounds of dough for a bit before chilling.

  • Ingredients list
  • 1 cup butter, softened
  • 1/2 cup crisco
  • 3/4 cup sugar
  • 1 1/2 cups brown sugar
  • 2 eggs
  • 1 tbs vanilla
  • 1 cup black cocoa
  • 3 cups flour
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 top salt
  • 20 double stuff oreos, finely crushed (30 if using regular oreos)

Directions – in a bowl, cream butter, crisco, brown sugar and sugar.  Add eggs and vanilla.  Blend in dry ingredients.  Mix in crushed oreos (i used my hands).  Scoop out 1/4 cups dough.  Chill and hour.  Preheat oven to  350 degrees.  Line cookie sheets with nonstick baking liners or parchment paper.  Stagger cookies on prepared sheets.  Bake 10 to 11 minutes, no longer.  Cool completely.   Store in covered container.

Black cocoa snowball cookies

I got a new container of black cocoa today and wanted to put some of it to use, so I made some black cocoa snowballs with mini chocolate chips.  Always good to heat up the oven on a very chilly day!

You can also use regular unsweetened baking cocoa or special dark cocoa if you want.

Remember to scoop your flour and cocoa from their containers into your measuring cups so you get the right amount.  Also, make sure your oven is preheated before baking.

  • Ingredients list
  • 1 cup butter, softened
  • 1/2 cup sugar
  • 1 tsp vanilla
  • 2 cups flour (scooped from your flour bag into your measuring cup)
  • 1/4 cup black cocoa
  • 1 tsp salt
  • 1 tbs water
  • 1 cup mini chocolate chips

In a bowl, cream butter and sugar.  Add vanilla.  Blend in dry ingredients (this may take a while.  Dough will be crumbly).  Add water.  Fold in chocolate chips.  Scoop out 2 tbs of dough.  Chill.  Preheat oven to 350 degrees.  Line a cookie sheet with parchment paper or nonstick baking liners.   Stagger doughs on sheet, like this.

Bake at 350 degrees for 10 to 12 minutes.  Sprinkle hot cookies with powdered sugar.  the powdered sugar melts into the cookie and makes them even sweeter!

Cool completely.   Sprinkle with more powdered sugar.  Store in covered container.

Black cocoa brownies with peanut butter chips and black cocoa frosting

I could not bring in just one treat for a Bills victory Monday tomorrow.   So Rob suggested black cocoa brownies with peanut butter chips and black cocoa frosting.  Black cocoa is what makes oreos taste like oreos.  I found some on Amazon that I like to use.  Of course, my hershey’s classic is my standby/old faithful, but the black cocoa is nice to use once in a while.

  • Ingredients list
  • 1/2 cup butter, melted
  • 1 /2 cup sugar
  • 1/4 cup brown sugar
  • 1/4 cup corn syrup or honey
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 cup flour (scooped from your bag into your measuring cup)
  • 1/3 cup black cocoa
  • 1 cup peanut butter chips

Directions – preheat oven to 350.  Line an 8×8 or 9×9 baking pan with tin foil and spray with baking spray.  Set aside.  In a bowl, combine butter, sugar, brown sugar and corn syrup/honey.  Add eggs and vanilla.  Blend in flour and black cocoa.  Fold in chips.  Evenly spread into prepared pan.  Bake 13 to 17 minutes (toothpick inserted in center comes out with a few moist crumbs).  Immediately start prepping frosting.

  • 3 tbs butter softened
  • 3 tbs black cocoa
  • 1 tsp corn syrup or honey
  • 1 tsp vanilla
  • 3 to 6 tsp milk
  • 1 cup powdered sugar

Directions – in a bowl, blend butter and cocoa.  Add vanilla and corn syrup/honey.  Mix in powdered sugar.  Blend in enough milk to get the consistency you want.   Frost warm brownies.  Let cool completely.  Cut and store in covered container.

Black cocoa Reese’s Pieces Cookies

I had some Reese’s pieces I want to use to, so I thought putting them in some black cocoa cookies would work just fine.  I also had a few mini m&Ms left so I tossed them in too, along with milk chocolate chips. Feel free to use whatever mix-ins you want.  You cam also use unsweetened or special dark baking cocoa.

  • 1 cup brown sugar

Bake at  350 degrees 10 to 12 minutes.  Cool completley.  Store in covered container.  If cookies seem to gushy, pop in fridge to firm them up.

Happy Tuesday! I wasn’t planning on baking for today for the Bills wildcard win over the Steelers, but Rob thought I should. 😉 so last night, around 9:15 pm, I made blackout brownies. These use black cocoa (which I got on Amazon). You probably could use regular unsweetened baking cocoa too.

Remember to scoop your flour and cocoa from your container into your measuring cup so you get the correct amount. Also preheat the oven to 350 degrees for 20 minutes before baking so it cycles to the right temp.

I actually frosted these warm and they turned out just fine.

  • 4 eggs
  • 1 tsp vanilla

Directions – preheat oven to 350 degrees. Line a 9×13 pan with parchment paper and spray with baking spray. In a bowl, combine butter, sugar, brown sugar and corn syrup. Add eggs, one at a time, and vanilla. Blend in dry ingredients. Fold in chips. Evenly spread into prepared pan. Bake 25 to 30 minutes, or until toothpick inserted in center comes out with a few moist crumbs. Cool completely.

  • 3 tbs black cocoa
