Victory Monday treats for week 14 – gingerbread men/reindeer cookie sandwiches

To celebrate our win over the Bengals (which was pretty stressful), I present gingerbread men/reindeer cookie sandwiches.   One way they are gingerbread men,

flip them upside down and they are reindeer. 

I colored the filling green for a little holiday pop.

Remember to scoop your flour from your flour bag into your measuring cup so you get the right amount.   After you cut out the cookies, i recommend chilling them in for a few hours.  And preheat your oven before baking.

  • Ingredients list
  • 6 tbs butter, softened
  • 3/4 cup brown sugar, firmly packed into cup
  • 1/2 cup molasses
  • 1 egg
  • Water
  • 1 tsp vanilla
  • 3 1/4 cups flour
  • 1 1/4 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/8 tsp ground cloves

Directions – in a bowl, combine butter and brown sugar.   Add molasses, egg and vanilla.   Blend in dry ingredients.   Dough will be crumbly.  You may need to add a few tbs of water to make dough easier to use with.  Roll ans cut.  Chill doughs a few hours.   Preheat oven to 325 degrees.  Line a cookie sheet with parchment paper.   Stagger cookies on sheet.  Bake 8 to 18 minutes, no longer.   Cool completely. 

  • Filling
  • 1 stick butter, partially melted
  • 3 cups powdered sugar
  • 2 tbs milk
  • 1 tsp vanilla
  • Green food color (optional)

Combine butter, powdered sugar, milk and vanilla.  Add food color, if using.  Spread between 2 cookies.  Store in covered container.

Halloween Cutout Sugar cookies

This is the sugar cookierecipe I use for all my holiday cutout cookies – halloween, Thanksgiving,  Christmas, Valentine’s Day, Easter, football ( i know football is not a holiday but if i have cookie cutters for something, it is a holiday for me)   This recipe  is from a friend of my family.  They bring back a lot of wonderful memories of baking with my mom when I was younger.  And these were my dad’s favorite cookies and he loved the dough too!

Remember to scoop your flour from your flour bag into your measuring cup so you get the right amount.  Also, preheat your oven to 350 degrees before baking. 

  • Ingredients list
  • 1 1/2 cups crisco
  • 1 1/3 cups sugar
  • 4 eggs
  • 1 tbs vanilla
  • 4 cups flour
  • 1 tsp salt
  • 1 tsp baking powder

Directions – preheat oven to 350 degrees.  in a bowl, cream butter and sugar.  Add eggs and vanilla.  Slowly blend in dry ingredients.    Sprinkle flour on your countertop and roll out dough to desired thickness.   Cut out cookies.  Line a cookie sheet with parchment paper.  Stagger cookies on sheet.  Bake 8 minutes, no longer.  Cool completely.

  • Frosting ingredients
  • 1/2 cup butter, softened
  • 3 cups flour
  • 1 tsp vanilla
  • 1 to 3 tbs heavy cream (depending on consistency you want)
  • Food coloring or sprinkles

In a bowl, combine ingredients. Frost cookies and sprinkle with sprinkles.  Store in covered container.

In the spirit of the season, I present another holiday cookie – gingerbread men. They can also be reindeer. You just flip the cookie upside down. The reindeer nose is the gingerbread man’s head and the antlers are his feet! You could even add a little cinnamon hot candy on the reindeer’s nose to make him a Rudolph!

I made these into sandwich cookies, so the filling recipe is at the end. You don’t have to do that, of course.

I did chill the dough overnight and took it about an hour before I was ready to bake. Mine always wind up large, probably because I don’t roll out the dough as thin as I should.

Remember to scoop your flour from your flour bag into your measuring cup so you get the right amount. I also recommend preheating the oven for 20 minutes before baking so it cycles to the right temp.

  • Ingredients cookies
  • 6 tbs butter, softened
  • 3/4 cup brown sugar
  • 1/2 cup molasses
  • 1 egg
  • 3 tbs water
  • 3 1/4 cups flour
  • 1 1/4 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tps salt
  • 1/2 tsp cinnamon
  • 1/2 tsp ginger
  • 1/4 tsp ground cloves

Directions – cream butter and brown sugar. Add egg and water. Blend in dry ingredients. Mixture will be crumbly so you may have to mix it for a while for it to come together. You may even need to add another tbs or 2 of water. Cover and chill.

Take dough out of fridge about an hour before baking cookies so the dough is easier to work with. In a floured surface, roll out the dough with a rolling pin to the thickness you want and cut with cookie cutters. Preheat oven to 325 degrees.

Line a cookie sheet with parchment paper and stagger cookies. Sprinkle with sugar.

Bake 8 to 9 minutes. Cool completely.

  • 1 tsp vanilla
  • Milk

Directions – in a bowl, blend butter and powdered sugar. Stir in vanilla. Add enough milk to get the consistency you want and spread between two cookies. Store in covered container.

Chocolate chip cookies

Christmas Chocolate Chip Cookies

I made a few different kinds of cookies for Christmas. I realize chocolate chip cookies aren’t the first cookie that comes to mind for Christmas, but they are Rob’s favorite, thus, they were included. Couple of notes – I chilled the dough overnight, to keep them from flattening too much. Remember to preheat your oven to 375 degrees for 20 minutes before baking, to get the right baking temperature.

  • Ingredients
  • 1 stick butter, melted
  • 1/3 cup sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 2 tsp vanilla
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups flour (scooped from your container into your measuring cup)
  • 1 tbs cornstarch
  • 1 1/2 cups chocolate chips

Directions – combine butter, brown sugar and sugar. Add egg and vanilla. Mix in baking soda and salt. Add flour and cornstarch. Mix in chips. Scoop,out 1/4 cups of dough. Chill dough at least a few hours. Preheat oven to 375 degrees for 20 minutes. On a cookie sheet lined with nonstick baking liners, stagger cookies. Bake 12 – 14 minutes. Cool completely. Store in covered container.

Island of misfit cutout cookies

Santa!

You may wonder about the title of this treat.  It is a wonderful, tasty, sugar cutout cookie dough.  The misfit part is well, on me.  My baking skills are solid, my decorating skills are subpar, to put it mildly.. So outside of decorating a pumpkin cutout for Halloween, or a christmas tree, it is difficult for people determine what the cutout actually is.  One year, my friend, Mikey C, asked it I made a bicycle.  At Christmas.  Yes, because Santa rides a bicycle around the world on December 24th.  After that, I make cutout cookie sandwiches. Cookies, filled with buttercream frosting, instead of actually frosting them. That way you can actually see that it is Santa! This recipe brings back wonderful memories of when I was young and baking with my mom at Christmastime. And my dad loved eating this dough!! I will really miss baking with her this year. We usually make at least 150 cookies the day before Christmas. but we need to be safe. Maybe we zoom!

Recipe notes – These are made with Crisco. I would not sub butter for the Crisco in this recipe. Remember to spoon your flour into your measuring cup to get the right amount, and preheat your oven to 350 degrees for 20 minutes to make sure your oven is heated evenly.

  • 1 1/2 cups Crisco
  • 1 1/3 cups sugar
  • 4 eggs
  • 1 tbs vanilla
  • 4 cups flour
  • 1tsp baking powder
  • 1 tsp salt

Directions – preheat oven to 350. Line a cookie sheer with baking liners. cream Crisco and sugar. Add eggs and vanilla. Blend in flour, salt and baking powder. Chill a few hours. Remove about 30 minutes before baking, so dough is easier to roll out. Sprinkle flour on a surface, roll out to the desired thickness. Cut out cookies. Place on prepared sheet. Bake 8 to 10 minutes. I take them out after 8 min, because that way, they stay nice and soft. Cool completely.

Buttercream filling – combine 2 tbs melted butter and 2 cups powdered sugar. Add milk or cream, 1 tbs at a time, until you get the desired consistency. Color as desired. Spread between two cookies. Store in covered container.
