Cake mix cookies stuffed with brownies

And topped with melted Hershey kisses!

It is 90 plus degrees and humid today, so I decided to bake cookies for work tomorrow. Nothing like making the AC work even more! I had made some brownies for my mother in law and wound up with quite a few leftover. So I decided I would stuff them in cake mix cookies. I went with a white cake mix, but feel free to use whatever flavor you like. One of my friends and co-workers, James, called the brownies probably one of the best things I have made. Quite a compliment! I used my spruced up brownie mix recipe that you can find on the blog. You can use a mix or whatever your favories recipe is.

Remember to preheat your oven to 350 degrees for 20 minutes before baking so that your oven cycles to the right temperature.

  • Ingredients
  • Brownies, prepared as directed and completely cooled, and cut into 1 inch squares
  • 1 cake mix
  • 1 egg
  • 1/3 cup oil
  • 1 tbs water

Directions – mix well. Line a cookie sheet with nonstick baking liners or parchment paper.

Scoop put 1 1/2 tbs dough and slightly flatten
Place a brownie square on top
Scoop out another 1 1/2 tbs dough, slightly flatten and place on top of brownie
Completely cover brownie
Stagger on prepared cookie sheet

Bake 9 to 10 minutes (they will be lightly golden on bottom). Sprinkle hot cookies with powdered sugar.

Store in covered container.

Celebration Monday treats

Fudge topped devil dogs!

This could not be just any great for THIS victory Monday. The Buffalo Bills are back in the AFC Championship game for the first time since 1993. So this calls for something spectacular. Rob asked what I was planning (despite having 2 treats in the freezer bc I forgot to bring them in to work). I told him to pick something, so he chose devil dogs with fudge topping. Done. These use a cake mix. I added baking cocoa to make them extra chocolatey, but you can sub in 1/2 cup flour if you prefer.

  • Devil dog cake ingredients
  • 1 chocolate cake mix
  • 1/2 cup baking cocoa (or flour)
  • 1/2 cup water
  • 1/2 cup oil
  • 3 eggs

Directions – preheat oven to 350 for 20 minutes. Line a cookie sheet with parchment paper or nonstick baking liners. In a bowl, combine cake mix, cocoa, water, oil and eggs. Scoop out 1/4 cup batter and place on sheet. Spread into a rectangle. Bake 6 to 8 minutes. Cool completely.

  • Filling ingredients
  • 1/2 cup butter, soft
  • 1 1/2 cups fluff
  • 3 cups powdered sugar
  • Heavy cream or milk

Directions – cream butter and fluff. Slowly add powdered sugar. Add enough milk or cream to get the consistency you want. Spread between 2 devil dogs. set aside

  • Fudge frosting ingredients
  • 1 stick butter
  • 1/3 cup evaporated milk
  • 3/4 cup sugar
  • 1 cup milk chocolate chips

Directions – over low -medium heat, bring butter, evaporated milk, and sugar to a boil, stirring occasionally. Boil 1 minute. Remove from heat. Add chips. Stir until melted. Let stand 5 to 10 minutes. Spoon over devil dogs. Store in covered container.

Cake mix cookies stuffed with chocolate chip cookies

So the chocolate chip cookie bars I made yesterday didn’t seem to be enough to bring to work to celebrate the first Bills playoff win in 25 years. So I cut them up into tiny pieces and put some in a cake mix cookie and some in a brownie cookie. And I sprinkled them with powdered sugar, just to be fancy. This is the cake mix cookie recipe.

  • Cake mix cookie ingredients
  • 1 cake mix (any flavor)
  • 1/3 cup oil
  • 1 egg
  • 2-3 tbs water, milk or heavy cream

Directions – preheat oven to 350 degrees for 20 minutes. combine ingredients. (I ended up using my hands to make sure everything got mixed together). Scoop out 1/4 cup of dough and divide in half. Flatten one half, top with a chocolate chip cookie. Flatten other half and place on top.

Seal edges. Bake 9 to 12 minutes. Sprinkle with powdered sugar. Cool completely. Store in covered container.
