You may want to schedule an extra workout session, run or walk before eating one of THESE chocolate chip cookies to burn off the extra calories. To say they are large is an understatement! Everyone loves chocolate chip cookies, so instead of having two or 3, just have one of these and call it a day! These use a mix of cake flour and all purpose flour. If you don’t have cake flour, you can make it by sifting 1 1/2 cups all purpose flour with 1 1/2 tbs cornstarch. Also, I was in a rush and only had cold butter to work with, so I used a cheese grater to shred it so I could work with it quickly.
Ingredients
1 cup butter, cold, grated with a cheese grater
1 cup brown sugar
1/2 cup sugar
2 eggs
2 yolks
2 1/2 cups flour
1 1/2 cups cake flour
1 tbs cornstarch
1 tsp baking powder
1 tsp baking soda
2 cups chocolate chips
Directions – cream grated cold butter, brown sugar and sugar. Add eggs and yolks. Fold in dry ingredients. Mix in chips. Divide dough evenly into thirds. Then divide each third in half. Then, divide each remaining dough pieces in half. There are your 12 cookies., pile dough into mounds. Chill at least a few hours. Preheat oven to 400 degrees fpr 20 minutes. On a cookie sheet lined with nonstick baking liners, bake 10 to 12 minutes. There will be light golden spots on top. Cool on sheets completely. Do not be like my husband and grab one while it is still hot. 😳 store in covered container.

These are what I call panic treats – something that I whip up quickly when I fear the original amount of treats I have made to bring somewhere are not enough. (It’s a sickness, I know. But, I can’t be the only one who does this). I would rather bring too much, rather than too little. So these are Graham cracker sugar bar Smores. I wanted some wow factor, so I went beyond my sugar cookie mix. I tossed in some graham crackers, and topped the bars with marshmallow fluff and melted chocolate chips. A sugar-chocolate chip-brownie-peanut butter cookie cake with marshmallow fluff frosting
Yup, you read that right. Quadruple layer cookie cake. It was what I had planned to make if the Bills were in the Super Bowl. And even though they came up a game short, I made this cake anyways because it is the Super Bowl. The NFL is the one sport that managed to get through it’s entire season without a single cancelled game. For this treat, I went with a peanut butter cookie layer, flourless brownie layer, chocolate chip cookie layer and a sugar cookie layer. I used a marshmallow fluff frosting. I actually make the peanut butter, sugar and chocolate chip cookie doughs the day before and took them out of the fridge about an hour before baking to get them to room temperature so they were easier to press into the pans. If you use a 9 inch cake pan, your baking time will be less. Remember to preheat your oven to 350 degrees for 20 minutes before you start baking. And make sure you don’t overbake your cookie cakes. This cake is quite heavy, so make sure your container is sturdy. You may have to hold it from the bottom when transporting it, or cut the cake ahead of time.

Today’s treat is in advance of the Bills AFC divisional playoff game vs the Ravens. A Saturday night game! I have all day to get nervous! I really need them to keep winning. They’ve been a needed distraction to this crapbag of a start to 2021. Maybe we’re getting all the bad stuff out of the way early.
These feature a Graham cracker sugar cookie base, followed by a layer of melted chocolate chips and topped with marshmallow fluff frosting. Of course, I got impatient and frosted them while they were still warm, so the frosting got mixed in with the melted milk chocolate. These are pretty easy and use sugar cookie mixes as part of the base.

This magical season for the Bills continued with their first playoff win in 25 years! Was it easy? No! Was it stressful? yes! Did someone yell and scare the dog, over the late fumble that wasn’t? Also yes, but it was not me. The yeller in question did request victory chocolate chip cookies bars, so here they are. I have to add that I love having playoff football both days this weekend, all day. After a terrible week, having sports as a distraction is wonderful for a few hours

These are just wonderful. They smell amazing and taste amazing! I can not decorate, so I made them into sandwich cookies. The best thing about the gingerbread cookie cutter – you can turn them into reindeer, just flip ’em upside down and perhaps place a red hot for a Rudolph nose.
