Fudge topped chocolate chip cookies

Fudge on a cookie? Yes, please!

I felt I needed to do something different with the chocolate chip cookie request. I have noticed online quite a few people have suggested adding an instant vanilla pudding mix, so I went with that. And I also decided to top them with fudge. A simple fudge – just chocolate chips, condensed milk and vanilla. You can use any chocolate chip recipe, of course, but I will still share the one I used. These don’t need to chill in the fridge, but you can if you want.

Remember to scoop your flour from your flour bag into your measuring cup to get the right amount ans preheat your oven to 350 degrees before baking, to get the right temp.

  • Ingredients
  • 1/2 cup butter, softened
  • 1/2 cup Crisco
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 tbs vanilla
  • 3.4 oz instant vanilla pudding mix
  • 3 cups flour (can add more if dough seems too sticky)
  • 1 tbs cornstarch
  • 1 tbs (yes a tbs) baking soda
  • 1/4 tsp salt
  • 2 cups chocolate chips

Directions – preheat oven to 350 degrees for 30 minutes. Cream buttee, Crisco, sugar and brown sugar. Add eggs and vanilla. Blend in pudding mix. Blend in flour, baking soda, cornstarch and salt. Fold in chips. Line a cookie sheet with parchment paper or nonstick baking liners. Scoop out 1/4 cups of dough stagger on prepared sheet. Bake 10 to 12 minutes. (Light golden patches on top). Cool completely

  • 7 oz condensed milk (2/3 cup)
  • 1 1/4 cups chocolate chips

Direction – in a microwave safe bowl, microwave chips and condensed milk in 45 second increments until you can,stir smooth. Top cookies. Store in covered container.

Two of these cookies might be a bit much to,eat at once!

Chocolate chocolate chip cake

Chocolate cake with chocolate chips and chocolate frosting!

Today’s dessert from my chief recipe requester-taste tester, Rob, is a chocolate cake with chocolate chips and chocolate frosting. You can use any flavour chocolate cake mix (I used devil’s food today). Remember to preheat your oven to 350 degrees for 20 minutes before baking.

Chocolate chips make everything better!
  • Ingredients
  • 1 chocolate cake mix
  • 3.4 oz instant chocolate pudding mix
  • 2 cups Greek yogurt (or sour cream, fat free or lowfat is fine)
  • 3 eggs
  • 1/3 cup oil
  • 1/2 cup water
  • 1 tsp chocolate extract (or vanilla)
  • 2 cups chocolate chips

Directions – Preheat oven to 350 for 20 minutes. Spray a bunch pan with baking spray. Combine cake mix and pudding mix. Blend in yogurt, extract, eggs, oil and water. Fold in chips. Mixture will be thick. Spread evenly in pan. Bake 30 to 40 minutes, or until a toothpick inserted in center comes out with a few crumbs. Cool 15 minutes in pan. Invert onto cake plate. Cool completely.

  • Frosting ingredients
  • 1/2 cup butter, softened
  • 1/4 cup baking cocoa
  • 1 tsp vanilla
  • 2 -2 1/2 cups powdered sugar
  • 1/4 cup heavy cream

Directions – blend cocoa, vanilla and butter. Mix in powdered sugar, then heavy cream. You can add more powdered sugar or heavy cream to get the consistency you want. Frost cake. Store in covered container.

King Sized Peanut Butter Cookies

Peanut butter!

I needed a little something extra to bring into work tomorrow, along with my small batch of ganache-topped fudge brownies, so I thought peanut butter cookies would be a good option. I didn’t want to spend all day baking, so I opted to make only 8! And they are quite large. Instead of topping them with melted milk chocolate, I sprinkled them with sugar.

Reminders 1) spoon your flour from your flour container into your measuring cup, 2) chill the mounds of dough for a few hours before baking So the cookies don’t spread, 3) preheat your oven to 400 degrees for 20 minutes before baking so your oven cycles to the right temperature.

  • Ingredients
  • 10 tbs butter, softened
  • 1/2 cup peanut butter
  • 3/4 cup brown sugar
  • 1/2 cup sugar
  • 2 eggs
  • 1 tbs vanilla
  • 3 cups flour
  • 1 tbs cornstarch
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • Extra sugar

Directions – cream butter, peanut butter, sugar and brown sugar. Add eggs and vanilla. Fold in dry ingredients. I actually used my hands to completely make sure the dough was blended together. Divide dough into 8 equal pieces. Roll each in sugar. Store in fridge for a few hours. Preheat oven to 400 degrees for 20 minutes. On a cookie sheet lined with nonstick baking liners, stagger cookies. Bake 10 to 13 minutes (there will be light golden patches on top and bottoms will be a light golden color). Cool completely and store in covered container.

Peanut butter brownies with milk chocolate ganache

In honor of the Reese’s egg, I present a peanut butter chocolate treat on this Easter Sunday. They are peanut butter brownies made with peanut butter chips. The ganache is made with milk chocolate chips and heavy cream. If you prefer, you can use chocolate frosting or melt 1 cup of chocolate chips with 1 tbs vegetable oil in 30 second increments in a microwave safe bowl until you can stir it smooth.

  • Peanut butter brownies
  • 1/2 cup butter
  • 1, 10 oz bag peanut butter chips
  • 3/4 cup sugar
  • 3 eggs
  • 1 1/4 cups flour
  • Dash salt

Directions – preheat oven to 350 degrees for 20 minutes to get your oven to the right temperature. Line an 8×8 pan with tin foil and spray with baking spray. In a microwave safe bowl, melt peanut butter chips and butter in 30 second increments until you can stir smooth. Add sugar and eggs. Fold in flour and salt. Spread evenly into prepared 8×8 pan. Bake 15 to 20 minutes (edges will be a light golden color). Cool completely.

  • Ganache ingredients
  • 1/2 cup heavy cream
  • 1 cup milk chocolate chips

Directions – in a microwave safe bowl, heat cream for 45 seconds. Heat another 30 seconds. Pour over chips. Let sit 5 minutes. Stir smooth. Pour over cooled bars. Let set until ganache is firm. (Unlike me). Cut and store,in covered container.

Browned Butter Blondies with chocolate chips

Are they still blondies if I added chocolate chips? ☺

I went with a twist on blondies by browning the butter, as opposed to just melting it. Browned butter gives a little different flavor, and a very, very good one at that. It is simple to make – just put it in a pan over low to medium heat, stirring occasionally, until you see little brown specs in it.

One reminder, don’t bake longer than 20 minutes or they will dry out. They will be just fine after 20 minutes, even,if they seem underdone.

  • 1/2 cup butter, browned
  • 1 egg
  • 1 cup brown sugar
  • 1 tbs vanilla
  • 1 cup flour
  • 1/4 tsp salt
  • 1 cup chocolate chips

Directions – preheat oven to 350 degrees for 20 minutes. Line an 8×8 pan with tinfoil and spray foil with baking spray. Combine browned butter and brown sugar. Add egg and vanilla. Stir in flour and salt. Mix in chips. Press into pan. Bake 20 minutes (no longer) cool completely. Store in covered container.

Happy Valentine’s day! This is a heart shaped fudgy brownie topped with milk chocolate ganache. I know, my decorating skills are not good, but I tried. 😁

This recipe is super simple. You can add cut up candy in the batter or in top,of the ganache or frostinf if you want as well. If ganache (which honestly, is just a fancy word for melted chocolate with heavy cream), is not your thing, you can leave the brownies plain, sprinkle with powdered sugar or use whatever frosting you want. I used one my two heart shaped cake pans, but you can them in an 8 or 9 inch Square cake pan. Remember to spoon your flour from your flour container into your measuring cup to get the correct amount. Also preheat your oven for 20 minutes before baking, to get your oven to the right temperature.

  • 1 1/2 cups sugar
  • 2/3 cup baking cocoa
  • 3 eggs
  • 2 tsp chocolate or vanilla extract
  • 1 cup flour
  • 1 tsp salt
  • 1 cup chocolate chips

Directions – preheat oven to 350 degrees for 20 minutes. Line a baking pan with tin foil and spray with baking spray. Combine butter and sugar. Add cocoa. Blend in eggs, beating one at a time. Mix in extract. Fold in flour and salt. Blend in chips. Spread into pan. Mixture will be thick. Bake 20 to 25 minutes or until a toothpick inserted,in center comes out with a few crumbs. Cool completley.

  • 1 1/2 cups chocolate chips (I used milk chocolate)

Directions – heat cream in a microwave safe bowl for 45 seconds. Pour over chips. Let sit 5 minutes. Stir smooth. Pour over brownies. let ganache set. Store in covered container.
