Happy Valentine’s Day!


I wanted to bake a treat for Valentine’s day and bring the rest into work tomorrow, so I asked my hubby what he wanted and he said “red velvet cake with oreo filling”. This dessert is very easy, messy and delicious. I used to never really like red velvet cake..It’s not really chocolate, and not really vanilla either. But with adding a few other ingredients besides the usual oil, eggs and water, THIS red velvet cake is amazing. The filling is just ground up Oreos and melted butter and the topping is chocolate ganache (which let’s face it, is a fancy word for melted chocolate and heavy cream).

Ingredients – 1 red velvet cake mix, 3.4 oz package instant vanilla pudding mix, 3 eggs, 1/3 cup oil, 1 1/4 cups water, 2 single ounce containers of Greek yogurt (mine were 5.2 oz each)

Directions – preheat oven to 350 degrees. Spray the bottom of two cake pans with baking spray. Mix all ingredients together just until blended. I used a large wooden spoon. You can use a hand mixer if you want. Divide evenly and spread into prepared cake pans. Bake 20-25 minutes or until a toothpick inserted in center comes out with just a few crumbs.. cool completely

Oreo Filling – 36 Oreos (one regular size package, any flavor), 1/2 cup butter (melted)

Finely grins oreos in food processor. Combine with butter.

Ganache ingredients – 1 bag of milk chocolate chips, 2/3 cup heavy cream

Heat cream 75 seconds in microwave proof bowl. Plave chips in a separate bowl. Pour cream over chips. Let stand 5 minutes. Stir smooth. Let stand at room temperature for at least 20 minutes to thicken up. (Note – if you find the ganache has thickened up too much, you can microwave it in 10 second intervals)

Assembly

Place one cake layer (flat side up) on your cake dish.

Spread a little ganache on top.

Spread most of Oreo mixture on top of ganache layer

. Put a few more dollops of ganache over Oreo layer and spread as best your can. Place second cake layer, flat side down on top.

Pour or spread rest of ganache on top and sprinkle with remaining Oreos .

Chill in fridge for an hour. Store in covered container.
