These cookies are always such a big hit because they combine two of everyone’s favorite treats – chocolate chip cookies and brownies. I used a different chocolate chip cookie recipe (I probably have 20 versions and I am NOT kidding). You can use a homemade brownie recipe or your favorite box mix. I think my Saturday morning people at ESPN Radio will be pleased.
Brownies – One batch (box or homemade ) prepared and baked as directed. Let cool completely. Cut into 1-2 inch squares
Chocolate Chip cookie ingredients -1 cup butter (softened), 2 tbs oil, 1 cup brown sugar (firmly packed into measuring cup), 1/2 cup sugar, 2 eggs, 1 tbs vanilla, 1/2 tsp salt, 3 cups flour (scooped from your flour container into your measuring cup) 1 1/2 tsp baking soda, 2 tbs cornstarch, 1 cup chocolate chips
Directions -mix butter, oil, sugar, and brown sugar well. Add eggs, salt and vanilla. Fold in flour, cornstarch and baking soda. Usong a spoon, mix in chips. Scoop out 1/4cup cookie dough and divide in half. Flatten one half.
Place a brownie square on top.
Flatten other half and place it on top of brownie.
Gently mild dough so it completely covers brownie.
Chill these cookies for an hour or two.
Preheat oven to 350. Stagger 8 cookies on a sheet that has been lined with a nonstick baking liner.
Bake 10-12 minutes until lightly brown on bottom.
Cool completely. Store in covered container.
