Whoopie pies!!!!

I am not sure if the melted milk chocolate on top is necessary

I needed to bake something for our block party tomorrow, so I thought whoopie pies would be good. They gave me a chance to use whoopie pie pans (one of many baking items I have that are for one thing only, like my twinkie pan and churros maker). These are easy – they use a cake mix and a few other ingredients. The filling is marshmallow fluff based and I topped them with melted milk chocolate because… Well, why not?

Remember to preheat your oven to 350 degrees for 20 minutes so that it heats up properly (a tip from an LG tech).

  • Ingredients
  • 1 chocolate cake mix
  • 1/2 cup baking cocoa
  • 1/2 cup vegetable oil
  • 1/2 cup water
  • 3 eggs
  • 1 tbs vanilla
Two might be a bit much to eat in one sitting!

Directions – preheat oven to 350 degrees for 20 minutes. I used a whoopie pie pan that I sprayed with baking spray. You can also line a cookie sheet with parchment paper or nonstick baking liners. In a bowl, combine cake mix and baking powder. Add oil, water,eggs and vanilla. Batter will be on the thick side. Scoop out 2 tbs dough and spread to edge of each whoopie pie cavity… Or scoop out 2 tbs and place on parchment paper and spread into a 3 inch circle. Bake 8 to 10 minutes, or until a toothpick inserted in the center basically comes out with a few crumbs. Cool completely.

  • Frosting
  • 1 cup butter softened
  • 1 1/3 cups marshmallow fluff
  • 1 cup powdered sugar
  • 1 tsp vanilla
  • Water

Directions – combine butter and fluff. Blend in powdered sugar and vanilla. You can add water, a tsp at a time, if you want to thin it out a little. Place a dollop between two whoopie pies. Store in covered contaner.
